Cheese & herb waffles image

A savoury take on the classic fluffy waffle. Chives and cheddar are perfect partners in this really easy recipe. Serve with wilted spinach and a fried egg for a tasty brunch

4 large eggs , separated
300g plain flour
½ tsp bicarbonate of soda
pinch paprika
¼ tsp mustard powder
¼ small bunch of chives , chopped
200g cheddar cheese, grated
50g butter , melted
400ml semi-skimmed milk

Steps:

  • Heat the waffle maker according to manufacturer's instructions. Whisk the egg whites to stiff peaks. In a separate large bowl, mix together the flour, bicarbonate, paprika, mustard powder, chives and season with salt and black pepper. Stir in the grated cheese then make a well in the centre and add the egg yolks and melted butter. Start mixing with a balloon whisk; keep whisking as you slowly add the milk until you get a smooth, thick batter. Carefully fold in the egg whites with a metal spoon.
  • Heat oven to 180C/160C fan/gas 4. Use a ladle to pour the batter into your waffle maker and cook for 5 mins or according to the manufacturer's instructions. Repeat until all the batter has been used up, placing your finished waffles onto a baking tray as you go.
  • Once all the waffles are made, transfer to the oven for 5 mins to warm through and crisp. Delicious served with wilted spinach and a fried egg.

Steps:

  • Add all the dry ingredients and sift.
  • Beat the egg yolks and add them to the milk.
  • Stir the liquid ingredients into the dry ones.
  • Add your melted butter.
  • Now add your cheese.
  • Beat the egg whites until they are stiff and add them to the batter just before making.

Steps:

  • Preheat oven to 300°F. Heat waffle iron until very hot. Whisk 1 3/4 cups flour, 1 tablespoon sugar, 2 teaspoons baking powder, 1 teaspoon baking soda, and 1 teaspoon kosher salt in a large bowl. Using an electric mixer, beat 3 large egg whites in a medium bowl until medium-soft peaks form. Whisk 3 large egg yolks, 1 cup (2 sticks) melted butter, 1 cup buttermilk, and 3/4 cup soda water in a medium bowl; gradually whisk into dry ingredients. Fold in egg whites. Coat waffle iron with nonstick vegetable oil spray. Pour batter onto iron, spreading it into corners (amount of batter needed will vary according to machine). Scatter 1 rounded tablespoon thin strips of ham and 1 tablespoon shredded sharp white cheddar over each waffle. Cook until golden brown and cooked through. Who doesn't love a waffle, more importantly, a savory waffle? I created this recipe during some late-night thinking, as I do with most recipes that I make. I thought about two things that my wife loves: waffles and a little spicy mac and cheese, so I wondered, "Why not smash them together?" Happy wife, happy life, as they say. These waffles will satisfy at all hours of the day for your partner, friend, family member or even if you're on your own -- but a warning: You'll want to eat more than one!

Kosher salt
12 ounces sliced bacon, diced
1 stick unsalted butter
1/2 cup all-purpose flour
4 cups whole milk
3 cups shredded sharp yellow Cheddar (about 12 ounces)
2 cups shredded pepper jack (about 8 ounces)
1/2 cup grated Parmesan
1 pound elbow pasta
Nonstick cooking spray

Steps:

  • Bring a large pot of salted water to a boil.
  • Meanwhile, cook the bacon in a large skillet over medium heat, stirring occasionally, until crispy, 7 to 8 minutes. Remove with a slotted spoon to a paper towel-lined plate. Pour bacon fat into a heatproof container (save for another use) and wipe the skillet clean with paper towels.
  • Melt the butter in the large skillet over medium heat. Add the flour and whisk until tan in color, about 1 minute. Add the milk and bring up to a simmer, whisking every couple of minutes, until thick enough to coat the back of a spoon. Add the three cheeses in batches, whisking after each addition, until melted. Remove from the heat.
  • Add the pasta to the boiling water and cook according to the package directions until al dente, then drain. Transfer to a large bowl, add 3/4 of the cheese sauce and 3/4 of the cooked bacon and stir to combine. Pour onto a rimmed baking sheet, spread it to the edges and refrigerate for 1 hour. Reserve the remaining cheese sauce for serving.
  • Preheat your waffle iron to medium high. Spray with nonstick cooking spray and add enough mac and cheese to cover most of the iron. Press down hard to squeeze the waffle iron shut (don't worry if some mac and cheese falls out). Cook until golden brown, about 4 to 6 minutes.
  • Meanwhile, reheat the reserved cheese sauce over low heat. Plate the waffle with a side of cheese sauce and garnish with some of the remaining bacon. Repeat with the remaining mac and cheese.

1 1/2 to 2 1/2 cups whole buttermilk

1 teaspoon sugar
Pinch of coarse salt
Freshly ground black pepper

Steps:

  • Sift together flour, baking powder, and baking soda three times; set aside.
  • In a medium bowl, whisk together eggs, 1 1/2 cups buttermilk, and butter until well combined. Add flour mixture and whisk until smooth. Batter should have a pudding-like consistency. If necessary, add more buttermilk, 1/4 cup at a time, until pudding-like consistency is reached. Stir in cheese, sugar, and salt; season with pepper.
  • Preheat a waffle iron. Add 1/4 to 1/2 cup batter to heated waffle iron; close and cook until dark golden brown, 5 to 6 minutes, depending on your waffle iron. Repeat process with remaining batter and serve immediately.

Steps:

  • Preheat your waffle iron. In a medium bowl, whisk together the flour, powder, baking soda, and salt to combine. In a large bowl, beat the ricotta for 1 full minute with a mixer. It won't be completely smooth. Add the eggs and beat for another full minute. When it is smooth and shiny looking, add the milk. Place the dry ingredients into the bowl with the cheese mixture and gently whisk to combine. Stir in the butter. Prepare according to your waffle iron manufacturer's directions.
