2 large eggs, separated
1-1/4 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup sugar
1/4 cup water
1 tablespoon butter, melted
2 teaspoons grated lemon zest
1 teaspoon vanilla extract
1 teaspoon brandy, optional
Oil for deep-fat frying
Confectioners' sugar

Steps:

  • Place egg whites in a small bowl; let stand at room temperature for 30 minutes., Meanwhile, in a large bowl, combine the flour, baking powder and salt. Combine the egg yolks, sugar, water, butter, lemon zest, vanilla and, if desired, brandy; stir into dry ingredients just until combined. Beat egg whites on medium speed until soft peaks form; fold into batter., In a cast-iron or electric skillet, heat oil to 375°. Drop batter by teaspoonfuls, a few at a time, into hot oil. Fry until golden brown, about 1-1/2 minutes on each side. Drain on paper towels. Dust with confectioners' sugar. Serve warm.

Bananas Foster Beignets with Cafe Brulot Creme Anglaise image

Number Of Ingredients 20

2 1/4 cups whole milk
1/4 cup coarsely ground chicory coffee
6 whole cloves
1 cinnamon stick
4 large egg yolks, room temperature
1/2 cup granulated pure cane sugar
1 tablespoon brandy
1 teaspoon finely grated orange zest
3 very ripe bananas (with lots of brown spots)
2 teaspoons banana liqueur
1 teaspoon vanilla extract
1/4 cup pure cane granulated sugar
2 tablespoons light brown muscovado sugar
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon ground cinnamon
1/8 teaspoon grated nutmeg
2 to 4 tablespoons whole milk
Vegetable oil, for frying
Powdered sugar, optional

Steps:

  • For the creme anglaise: Combine the milk, chicory, cloves and cinnamon in a medium saucepan over medium heat and bring to a simmer. Remove the pan from the heat, cover, refrigerate and leave to infuse for at least 30 minutes and up to 1 hour.
  • Make an ice bath by setting a medium bowl or large measuring cup into a large bowl of ice.
  • Strain the milk mixture through a fine mesh sieve into a clean, small saucepan; discard the solids. Bring to a simmer over medium heat. In a medium bowl, whisk the egg yolks and sugar until very pale and thick. Very gradually whisk the hot milk mixture into the eggs. When full incorporated, transfer back to the saucepan. Reduce the heat to low and add the brandy and orange zest. Switch to a wooden spoon and cook, stirring, until the mixture coats the back of the spoon, about 5 minutes.
  • Strain into the bowl set in the ice bath. Add water to the ice to cool the sauce down faster. Stir the sauce until cool. Cover and refrigerate until cold, at least 1 hour.
  • For the beignets: Mash the bananas in a large bowl using a potato masher or large fork. Add the banana liqueur, vanilla extract, granulated sugar and muscovado sugar, and mix well. In another bowl, mix the flour, baking powder, cinnamon and nutmeg. Add the banana mixture to the flour mixture and pour in the milk. Mix until smooth and thick, like waffle batter, adding a little more milk as needed. Set aside to rest for at least 10 minutes or up to 1 hour.
  • In a heavy pot set over medium heat, heat 2 to 3 inches of vegetable oil to 350 degrees F. Drop the batter by heaping teaspoonfuls into the oil and fry until golden brown on both sides, turning once when the edges are firm. Drain on paper towels. Serve immediately, or keep warm in a 200-degree oven for up to 2 hours.
  • Plate the beignets atop a pool of creme anglaise. Dust with powdered sugar before serving.

As kids, we always put in a heart-filled request for these on Christmas Eve. It was quite a family affair - my mom would make up the dough, my dad would roll them out and cut them and then after frying them up, us kids would take turns shaking them in a paper bag with powdered sugar! I finally got to go to New Orleans and I was excited to get to try 'the real thing' at the famous Cafe Du Monde...I was SO HAPPY because my husband and I both said our recipe was a near carbon copy of CAFE DU MONDE! We've made this recipe for over 40 years and I promise it won't disappoint!

½ cup water
1 tablespoon yeast
¼ cup shortening
½ cup sugar
1 teaspoon salt
1 cup boiling water
1 cup evaporated milk
2 eggs, beaten
7 ½ cups flour
1 quart vegetable oil for frying
1 cup confectioners' sugar for dusting

Steps:

  • Pour 1/2 cup room temperature water into a small bowl. Sprinkle the yeast over the water and let stand for about 5 minutes to dissolve.
  • Combine the shortening, sugar, and salt in a large bowl. Pour the boiling water over the shortening mixture and then stir in the evaporated milk. Wait for the mixture to cool down until it is lukewarm. Then, add the yeast and water mixture and beaten eggs.
  • Slowly mix in the flour until the dough forms a ball. Cover the dough with plastic wrap and refrigerate for 30 minutes to 1 hour.
  • Working with a small portion (a little larger than a baseball) at a time, roll out the dough 1/8-inch thick. Cut the rolled out dough into strips 2 to 3-inches wide, then cut again in the opposite direction and at an angle, making diamond shapes.
  • Heat your oil for frying in a deep and wide, heavy-bottomed skillet over medium-high heat to 360 degree F (180 degrees C).
  • Slide dough slowly into the oil to avoid splattering and deep fry until they puff up and are golden brown, 3 to 5 minutes. Carefully remove onto a rack with paper towels underneath and allow to cool until you can handle them. Place in a clean paper bag with confectioners' sugar and shake gently until covered generously or, use a sifter to dust the beignets with powdered sugar.

These are not exactly the same as the traditional beignets made at Cafe DuMond in New Orleans. When all is said and done that doesn't really matter too much as they are delicious in themselves, no matter what they are. I think of them more as drops of French donuts that are very simple and easy to make. This is the recipe I had tried about 25 years ago and had lost the recipe, but I found it again recently at the Pillsbury website and was really happy about that. The dipping sauce is definitely not traditional, but an added touch of my own that I think really makes these shine. I hope you enjoy them as much as I do.

1 cup flour
1 tablespoon sugar
1/2 teaspoon salt
1 cup water
1/2 cup butter
5 large eggs
1 teaspoon lemon, zest of

1/2-1 cup jam or 1/2-1 cup jelly, any flavor you like (optional)
oil, for deep frying (amount needed may vary)

Steps:

  • In a small mixing bowl, stir together the flour, sugar and salt.
  • Place water and butter in a saucepan and bring to a boil.
  • Add all of the flour mixture in the bowl, stirring briskly (it will come together like a ball); remove pan from heat.
  • Using a large whisk, blend in eggs one at a time, until mixture is smooth and whites are well incorporated.
  • Add the lemon zest and stir to blend.
  • Heat enough oil to deep fry to a temp of 375F (at least several inches).
  • Drop batter mixture by rounded teaspoonfuls into hot oil and cook 5-7 minutes, frequently turning beignets with chopsticks to cook all sides, and frying until nicely golden.
  • Drain beignets on paper towels.
  • When cool, dust with powdered sugar (if you dust them while they are too warm, the sugar will melt and get damp).
  • Heat jam or jelly until melted using a small saucepan or microwave, stirring occasionally as it melts.
  • Serve beignets with melted jam as a dipping sauce.

1/4 cup warm water (110° to 115°)
1 cup evaporated milk
1/2 cup canola oil
1/4 cup sugar

4-1/2 cups self-rising flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, oil, sugar, egg and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Do not knead. Cover and refrigerate overnight. , Punch down dough. Turn onto a floured surface; roll into a 16x12-in. rectangle. In New Orleans, where I live, beignets are served with a snowstorm of powdered sugar. The puffy fried dough squares are sold at loads of places here, including the rightfully famous Café du Monde. (Insider tip: Café du Monde's location in City Park is even more magical than the well-traveled one in the French Quarter.) Anytime you order beignets to go, the paper bag is likewise loaded with powdered sugar. Capture that spirit by tossing these New Orleans-style beignets with powdered sugar in a large paper grocery bag. Or use a baking sheet coated with sugar. Whatever approach you choose, be sure to eat them while they're piping hot. That's half the point. The other half is finding yourself covered in white powder after a few bites.

One 1/4-ounce package active dry yeast (2 1/4 teaspoons)

  • Put the milk, yeast and 1 teaspoon of the granulated sugar in the bowl of a stand mixer fitted with the dough hook and mix on low to combine. Let sit until foamy, about 5 minutes.
  • Add the butter, salt, egg and remaining granulated sugar to the bowl and mix on low speed to combine. Add the flour in 1/2-cup increments, mixing on low speed just until the dough becomes sticky and pliable, about 2 minutes.   • Heat the oil to 350 degrees F in a large Dutch oven or electric fryer. Put the confectioners' sugar in a large paper grocery bag or on a large baking sheet. Fry 6 to 8 beignets at a time, flipping them every 30 seconds or so, until both sides are golden brown, 2 1/2 to 3 minutes per batch. If using the paper bag, transfer the beignets to the bag and shake to coat well with the sugar. If using a baking sheet, transfer the beignets to the sheet and, using tongs, toss to coat well with the sugar. Repeat with the remaining dough. Serve immediately.

The French might have been the first to deep-fry choux pastry, but it's in New Orleans that beignets became a true mainstay in bakeries and cafes. This version is relatively easy to make at home: The yeast-leavened dough comes together quickly, is very forgiving to work with and fries up light and airy. The yeast must be fresh and active: Once stirred with warm water and sugar, let the mixture stand for 10 minutes. If the yeast is fresh, it will create a foamy, bubbly layer on top. (If this doesn't happen, you'll need to start over with new yeast.) You can cook the beignets in a Dutch oven or deep skillet, no deep-fryer necessary. To obtain the perfect puffs, fry the fritters in batches so they have plenty of room to cook evenly on all sides. Beignets are best eaten hot, buried in a blanket of powdered sugar.

  • In batches, fry dough until puffed and golden underneath, about 2 minutes. Flip the beignets and fry until golden on second side, 1 minute more. Transfer beignets to a paper towel-lined baking sheet and let stand for 1 minute. Generously dust with confectioners' sugar and serve warm.

1 ½ cups warm water (110 degrees F/45 degrees C)
½ cup white sugar
1 teaspoon salt
2 eggs
1 cup evaporated milk
7 cups all-purpose flour
¼ cup shortening
1 quart vegetable oil for frying
¼ cup confectioners' sugar

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, evaporated milk, and blend well. Mix in 4 cups of the flour and beat until smooth. Add the shortening, and then the remaining 3 cups of flour. Cover and chill for up to 24 hours.
  • Roll out dough 1/8 inch thick. Cut into 2 1/2 inch squares. Fry in 360 degree F (180 degrees C) hot oil. If beignets do not pop up, oil is not hot enough. Drain onto paper towels.
  • Shake confectioners' sugar on hot beignets. Serve warm.

After trying many different Fritter recipes, I realized that beignets are pretty close to fritters but are sweeter and tasty. After trying this Basic Beignet #171698 by SkinnyMinnie, I realized this was similar to what my mother called "Elderberry Blossum Fritters". We slathered those fritters with melted butter and topped with pancake syrup. MMMMmm, good!!!! These taste the same but the Confectioners suger and different flavors seasoning make them into a real treat. Plus, you can do these when Elderberrys are not in blossum. This recipe is for 180 servings. I am serving this recipe Labor Day Week End at Madison,Wisconsin's "Taste of Madison". Try using powdered chocolate, nutmeg or cinnamon for a variation.

8 cups milk (16 cups=1 gallon)
8 large eggs, beaten
1/2 cup vanilla extract
24 cups all-purpose flour
1 cup sugar
1/2 cup salt

1 gallon vegetable oil
2 lbs confectioners' sugar

Steps:

  • Combine all wet ingredients: water, milk, beaten eggs and vanilla extract. Mix well.
  • Combine in a very very large container all dry ingredients: flour, sugar, salt, baking powder. Mix well.
  • Add all the wet ingredients into dry ingredients. Mix well by hand or with beater. Beat until batter is slightly thicker than pancake batter. Thin with water or add flour to thicken. No lumps.
  • Pour oil half way up the side of a large cast Iron Dutch Oven. Heat oil to 360'F.
  • Drop batter by tablesponfulls into hot oil. Turning often to brown both sides until dark golden brown.
  • Remove from oil into mesh strainer, drain and then dump into rectanguliar pan lined with paper towels and roll around to remove excess oil. Sprinkle with confectioners sugar and serve 2 or 3 on plate.

3/4 cup warm water (about 110 degrees)
1/4 cup granulated sugar

1/2 teaspoon freshly grated nutmeg
2 tablespoons unsalted butter, softened
1/2 cup whole milk
1 large egg
8 cups safflower oil, for bowl and frying

Steps:

  • Using a standing mixer fitted with a dough hook, mix together yeast, warm water, and granulated sugar. Let stand until foamy, about 5 minutes. In a separate bowl, whisk together flour, salt, and nutmeg. While mixing yeast mixture on medium speed, add butter. Using a pizza wheel or sharp knife, cut dough into 3-inch squares. Transfer squares to a floured baking sheet and cover loosely with plastic wrap. Let rise in a warm, draft-free spot for 30 minutes.
  • Meanwhile, heat oil in a medium pot or deep-fryer until it registers 350 degrees on a deep-fry thermometer. Working in batches, add a few squares to the oil and fry, rolling them around constantly with a slotted spoon or spider, until golden brown all over, 1 to 2 minutes. Transfer beignets to a paper towel-lined baking sheet to drain. Coat with confectioners' sugar, and repeat process with remaining dough and more confectioners' sugar. Serve warm.
