STUFFED CELERY WITH OLIVES



Stuffed Celery with Olives image

1 8-ounce package cream cheese, at room temperature
1/4 cup heavy cream
3 tablespoons finely chopped pimiento-stuffed olives
3 tablespoons finely chopped pitted kalamata olives
2 tablespoons finely chopped fresh chives
1 teaspoon finely grated lemon zest
Kosher salt and freshly ground pepper
8 stalks celery, cut into 2-inch pieces
Sweet paprika, for dusting

Steps:

  • Beat the cream cheese and heavy cream in a large bowl with a mixer on medium speed until light and fluffy, 1 to 2 minutes. Fold in the olives, chives, lemon zest, a pinch of salt and a few grinds of pepper.
  • Transfer the cream cheese mixture to a piping bag fitted with a large star tip. Pipe into the celery, then dust with paprika.

1 bell pepper, diced
2 green onions, sliced
1 tomato, diced
1/2 cup flat leaf parsley, chopped
1/3 cup olive oil
Juice and zest of 1 lemon
Sea salt and freshly ground black pepper

Steps:

  • In a bowl combine olive oil, lemon juice, lemon zest, parsley, and season to taste. In another bowl, mix the remaining ingredients and toss gently. Pour the dressing over the salad, give everything a gentle mix, refrigerate or eat straight away.

1/2 cup chopped pitted green olives
2 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In a medium-sized glass or plastic bowl, stir together celery, olives, olive oil, vinegar, oregano, garlic powder, salt and pepper until well combined. Cover and refrigerate for at least 4 hours or as long as overnight.
  • Serve as an accompaniment to fish or meat.

Remember that filling that your Grandmother used to stuff celery with as an appetizer? Cream cheese, with things like olives, pickles and sometimes nuts? Well, I have taken that idea a few steps (decades!) further and turned it into a dip that is amazing with veggies or crackers. So full of flavor you won't be able to resist it!

1 (8 ounce) package cream cheese, softened
1/3 cup mayonnaise
1 Tablespoon dill pickle relish (or finely chopped dill pickle)
8 large Spanish Olives (pimento stuffed) chopped
1 teaspoon olive juice
1/2 teaspoon freshly cracked black pepper
1 Tablespoon chives
1 green onion, sliced (the whole thing)
2 ribs of celery, finely diced

Steps:

  • With a mixer, cream the cream cheese until smooth.
  • Add in mayonnaise, mix.
  • Add in dill pickle relish, chopped olives and olive juice. Cream together.
  • Fold in green onion and celery. (reserve a little green onion and/or sliced olive for serving if desired.)
  • Mix in ground black pepper and chives.
  • Store in a bowl in the fridge until you are ready to serve.
  • Serve with celery, carrots, bell pepper, crackers and chips.

1 cup Kalamata olives, pitted
1 cup cracked green olives, pitted
1 tender celery stalk, thinly sliced, leaves coarsely chopped
1 celery core (found at the base of the celery stalk), trimmed and thinly sliced
1 large garlic clove, peeled and thinly sliced
1 tablespoon extra-virgin olive oil
1 tablespoon red-wine vinegar

Steps:

  • Place all the ingredients in a shallow bowl and toss well. Cover for several hours, tossing from time to time, and serve. The olives may be prepared up to 2 weeks in advance and refrigerated; bring them to room temperature before serving.

2 large eggplants
Salt to taste
1 jar (6 1/2 ounces) oil-cured black olives, pitted and halved
1 jar (5 3/4 ounces) green olives with pimiento, drained and halved
1 jar (3 ounces) capers, drained
2 cups water
4 large stalks celery, diced
1/2 to 2/3 cup olive oil
2 large onions, sliced
2 cans (16 ounces each) tomato sauce
Freshly ground pepper, to taste
1/4 cup sugar
1/2 cup red wine vinegar

Steps:

  • Trim the eggplants, cut them into 1-inch cubes, and transfer them to a colander. Sprinkle with salt and let them stand for 30 minutes. Rinse, drain well, and pat dry. In a bowl, combine the black olives, green olives, and capers. Cover with warm water and let them plump for 20 minutes. Drain well. In a saucepan of boiling water, blanch the celery for 1 to 2 minutes, or until just tender. Drain and pat dry. In a large skillet set over moderately high heat, heat 3 tablespoons of the oil until hot. Add the eggplant in small batches and cook it, stirring occasionally and adding 3 to 4 tablespoons of water to prevent sticking, until just tender and golden brown. Transfer the fried eggplant to a bowl and, adding oil and water as needed, fry the remaining eggplant. Add 2 tablespoons of oil to the skillet and heat until hot over moderate heat. Add the onions and cook, stirring occasionally, just until tender. Add the tomato sauce, 2 cups of water, the reserved eggplant, olives, capers, celery, and salt and pepper. Simmer the mixture over low heat, stirring occasionally, for 30 minutes. In a small bowl, combine the sugar and vinegar, stirring until dissolved. Add the sugar mixture to the eggplant mixture and stir to combine. Transfer the caponatina to a bowl, let it cool to room temperature, and chill it, covered, for 1 to 2 days to allow the flavors to blend.

Steps:

  • 1. Wash the celery under cold running water, then peel the outside of the stalks using a swivel-blade vegetable peeler. Seek to remove all the strings that you possibly can. Cut the celery into skinny strips 2 to 3 inches long and no more than 1/4 inch wide. (I'd rather you did this by hand, but if you must use the food processor, insert the large shredding disk and cut the celery into pieces short enough to fit horizontally inside the processor's feed tube.) You want to end up with about 1 1/2 cup.
  • 2. Peel the avocado, split it in half, cut it lengthwise into sections, then cut it into thin slices no more than 1/2 inch wide.
  • 3. Split a large red pepper in half along its creases, save one half for cooking or for other salads, wash the other under cold running water, scoop away the seeds and white pith. Cut it into 1/4-inch dice, yielding approximately 2/3 cup diced pepper.
  • 4. Combine the celery, avocado, bell pepper, and black olives in a ceramic or glass bowl, sprinkle liberally with salt, add the vinegar, olive oil, and several grindings of pepper. Toss thoroughly, being careful not to mash the avocado too much.

1/3 cup Miracle Whip
1/4 teaspoon salt

  • Finely chop the pickles and olives; set aside. In a small bowl, beat the cream cheese, Miracle Whip, juices and salt until blended. Stir in the pickles, olives and pecans., Pipe or stuff filling into celery sticks. Store in the refrigerator.
