BROILED PEAR DESSERT
This sweet finale, from Karen Jurack of North Riverside, Illinois, is the perfect solution for pears that aren't quite ripe. For a real treat, top it with a scoop of vanilla ice cream.

Steps:
- Brush pears with lemon juice; place on a broiler pan, cut side up., In a small bowl, combine brown sugar and almonds; cut in butter until crumbly. Sprinkle over pears. Broil 3-4 in. from the heat for 2-3 minutes or until topping is golden brown.

ROASTED PEARS WITH BLUE CHEESE
Steps:
- Preheat the oven to 375 degrees F.
- Peel the pears and slice them lengthwise into halves. With a small sharp paring knife and a melon baller, remove the core and seeds from each pear, leaving a round well for the filling. Trim a small slice away from the rounded sides of each pear half so that they will sit in the baking dish without wobbling. Toss the pears with some lemon juice to prevent them from turning brown. Arrange them, core side up, in a baking dish large enough to hold the pears snugly.
- Gently toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation.
- In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature.
- Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula among 6 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt, and serve warm.

Steps:
- Preheat broiler.
- Brush 2 baking sheets with olive oil.
- Gently toss apples and pears in oil and rosemary.
- Arrange fruit in single layer on the 2 sheets.
- Broil until fruit is tender, about 5 minutes.
- Watch closely or it will burn-- you may need to turn the sheets to avoid burning.
- Transfer fruit to platter, sprinkle with pepper and a pinch of salt if you wish.
- Garnish with rosemary sprigs.
- Can be made ahead and served at room temperature.
BROILED PEAR AND PROSCIUTTO TOASTS

- Preheat the broiler on high and set the oven rack to a high position. Lay the pear slices on a baking sheet.
- Brush them with oil on both sides and sprinkle them with salt. Broil the pears for 2-4 minutes--until the edges are crisp and the flesh is tender.
- Smear a tablespoon of soft creamy cheese across each English muffin half. Once the pears are tender, lay one on each toast.
- Place the toasts on the baking sheet and top each with a slice of prosciutto.
- Broil again for 2-4 minutes, until the prosciutto and muffin edges are crispy. Serve warm!

ROASTED PEARS WITH BROWN SUGAR AND VANILLA ICE CREAM

Steps:
- Preheat the oven to 400 degrees F.
- Arrange the pears cut side up in an 8-inch square glass baking dish. Whisk the apple juice and sugar in a small heavy saucepan over medium-high heat until the sugar dissolves. Whisk in the butter. Pour the sauce over the pears. Bake until the pears are crisp-tender and beginning to brown, basting occasionally with the juices, about 35 minutes.
- Spoon the pears onto plates. Top with ice cream. Drizzle with any juices and serve.
- The pears can also be served frozen. To do so, cool the pears, then place them in the freezer until frozen solid, about 8 hours.
BROILED PEACHES
Steps:
- Sprinkle peach halves with sugar. Place under broiler and broil about 5 to 7 minutes until sugar is caramelized.
BRANDIED BAKED PEARS
Steps:
- Put oven rack in middle position and preheat oven to 450°F.
- Peel and halve pears, leaving stems intact, then core with melon-ball cutter and toss with brown sugar in a large bowl.
- Melt butter in a 3-quart shallow baking dish in oven, about 1 minute, then add pears, turning to coat with butter. Add water to dish and bake pears, turning over occasionally, until tender and edges are caramelized, 30 to 50 minutes, depending on ripeness of pears.
- Transfer pears with a slotted spoon to a plate, then add 1/4 cup brandy to baking dish and stir with a heatproof rubber spatula to dissolve any caramelized juices. Return pears to dish.
- Whisk cream in a bowl just until thick (before soft peaks form), then whisk in remaining teaspoon brandy. Serve pears with brandy sauce and drizzle with brandied cream.
