Steps:
- Whisk gelatin together with 1 cup boiling water until fully dissolved, about 2 minutes; whisk in 3/4 ice cold water. Chill just until slightly thickened. (Don't let it congeal.) Set aside 1/3 cup of the thickened gelatin. Add strawberries to the remaining gelatin; spoon into 3 to 5 parfait glasses (depending on size). Chill glasses at an angle until Jell-O is set. (I tilted the glasses in loaf pans). Meanwhile, whisk together the cream cheese and sugar until smooth; whisk in the reserved 1/3 cup gelatin, then gently fold in 1 cup Cool Whip. (Refrigerate if gelatin in glasses is not quite set). Spoon cheesecake mixture into the glasses of set Jell-O. Chill glasses upright until completely set. To serve, garnish top of parfaits with a dollop of Cool Whip and sliced strawberries.

- In a small bowl, combine sliced strawberries and sugar; set aside. In a small bowl, beat the cream cheese and 1/3 cup confectioners' sugar. Add the sour cream, 1/4 teaspoon vanilla and almond extract. , In a small bowl, beat cream until it begins to thicken. Add the remaining confectioners' sugar and vanilla; beat until soft peaks form. Fold into cream cheese mixture. , In two parfait glasses, layer a fourth of the sliced strawberry mixture, cake cubes and cream mixture. Repeat layers. Cover and refrigerate for at least 1 hour. Top each parfait with two strawberry halves.

- Mix together red velvet cake mix and cook according to package directions. Cool completely to room temperature (1-2 hours) and cut into ½ -inch (1.2 cm) cubes. Set aside.
- While the cake is baking, mix together cheesecake pie filling. Pour mix into a bowl and refrigerate for 1 hour or until it sets.
- Slice 3 or 4 whole strawberries and set aside. Cut the remaining strawberries into quarters and set aside as well.
- To assemble: fill the bottom inch of serving cups with red velvet cubes. Pipe or spoon another inch or so of cheesecake filling. Top with about 1 inch (2.5 cm) of cubed strawberries.
- Repeat the layers again and top with 1 or 2 strawberry slices and chocolate hearts. Serve.
- Enjoy!

I came up with this one as a spinoff to my trifle. It tastes just like cheesecake :) Try it with sugar free cherry or apple pie filling or blueberries!

Steps:
- Mix the skim milk, cream cheese, and lemon zest and juice together until well combined (no lumps!).
- Add pudding mix and blend well.
- Add about 1 tbsp.
- noncalorie sweetener and mix well, set aside.
- Sweeten strawberries to taste with sweetener.
- In 3 parfait glasses (Wal-mart sells some cute plastic ones) start with 1 graham cracker, broken in half.
- Place about 2 tablespoons of strawberries in each.
- Cover with 5 tablespoons of pudding mixture.
- Place 2 graham crackers in each glass, and cover with 2 tablespoons of strawberries, then 5 tablespoons of pudding mixture.
- Continue until all of the ingredients are used up.
- Serve immediately.
- If not serving immediately, use reduced fat Nilla wafers or thin slices of sugar free fat free angel food cake.

- Preheat an oven to 350F. Crush the vanilla wafer cookies in a blender or food processor to a crumble. In a small bowl add the cookie crumbs and the melted butter and mix to coat.
- Spread the cookie crumbs evenly over a parchment-lined baking sheet and bake for about 7-8 minutes until lightly toasted. Remove from oven and set aside.
- Meanwhile add the cream cheese, sugar, orange juice, Cointreau and milk to a large bowl and beat with a hand-mixer until smooth.
- Fill each of the four dessert glasses evenly with a layer of the cheesecake filling, then a layer of strawberries, another layer of cheesecake filling, more strawberries, a final dollop of cheesecake filling and then sprinkle with the vanilla wafer crumble.
