1 (4-serving size) box strawberry Jell-O gelatin
5 ripe strawberries, hulled and sliced
2 - 3 tablespoons cream cheese, softened
1 tablespoon sugar
2 cups thawed Cool Whip whipped topping, divided
Additional sliced strawberries for garnish, optional

Steps:

  • Whisk gelatin together with 1 cup boiling water until fully dissolved, about 2 minutes; whisk in 3/4 ice cold water. Chill just until slightly thickened. (Don't let it congeal.) Set aside 1/3 cup of the thickened gelatin. Add strawberries to the remaining gelatin; spoon into 3 to 5 parfait glasses (depending on size). Chill glasses at an angle until Jell-O is set. (I tilted the glasses in loaf pans). Meanwhile, whisk together the cream cheese and sugar until smooth; whisk in the reserved 1/3 cup gelatin, then gently fold in 1 cup Cool Whip. (Refrigerate if gelatin in glasses is not quite set). Spoon cheesecake mixture into the glasses of set Jell-O. Chill glasses upright until completely set. To serve, garnish top of parfaits with a dollop of Cool Whip and sliced strawberries.

1/3 cup plus 1 teaspoon confectioners' sugar, divided
1/4 cup sour cream
1/2 teaspoon vanilla extract, divided
1/8 teaspoon almond extract
1/4 cup heavy whipping cream
2-1/2 cups angel food cake cubes
2 whole fresh strawberries, halved

Steps:

  • In a small bowl, combine sliced strawberries and sugar; set aside. In a small bowl, beat the cream cheese and 1/3 cup confectioners' sugar. Add the sour cream, 1/4 teaspoon vanilla and almond extract. , In a small bowl, beat cream until it begins to thicken. Add the remaining confectioners' sugar and vanilla; beat until soft peaks form. Fold into cream cheese mixture. , In two parfait glasses, layer a fourth of the sliced strawberry mixture, cake cubes and cream mixture. Repeat layers. Cover and refrigerate for at least 1 hour. Top each parfait with two strawberry halves.

1 box red velvet cake mix, (use milk instead of water and butter instead of oil when preparing)
1 box cheesecake mix, (Set the crust mix aside as you won't be using it. Prepare according to package directions)
16 oz fresh strawberry , hulled and cut into cubes (save 3-4 strawberries to cut into slices for garnish)

chocolate heart

Steps:

  • Mix together red velvet cake mix and cook according to package directions. Cool completely to room temperature (1-2 hours) and cut into ½ -inch (1.2 cm) cubes. Set aside.
  • While the cake is baking, mix together cheesecake pie filling. Pour mix into a bowl and refrigerate for 1 hour or until it sets.
  • Slice 3 or 4 whole strawberries and set aside. Cut the remaining strawberries into quarters and set aside as well.
  • To assemble: fill the bottom inch of serving cups with red velvet cubes. Pipe or spoon another inch or so of cheesecake filling. Top with about 1 inch (2.5 cm) of cubed strawberries.
  • Repeat the layers again and top with 1 or 2 strawberry slices and chocolate hearts. Serve.

1 sugar free fat free French vanilla pudding and pie filling mix (4 serving size)
2 cups ice cold skim milk
1 (8 ounce) container whipped fat free cream cheese
1 lemon, juice and zest of
non-calorie artificial sweetener
5 sheets graham crackers, broken into fourths (20 crackers)
24 medium fresh strawberries, stemmed and chopped
non-calorie artificial sweetener

Steps:

  • Mix the skim milk, cream cheese, and lemon zest and juice together until well combined (no lumps!).
  • Add pudding mix and blend well.
  • Add about 1 tbsp.
  • noncalorie sweetener and mix well, set aside.
  • Sweeten strawberries to taste with sweetener.
  • In 3 parfait glasses (Wal-mart sells some cute plastic ones) start with 1 graham cracker, broken in half.
  • Place about 2 tablespoons of strawberries in each.
  • Cover with 5 tablespoons of pudding mixture.
  • Place 2 graham crackers in each glass, and cover with 2 tablespoons of strawberries, then 5 tablespoons of pudding mixture.
  • Continue until all of the ingredients are used up.
  • Serve immediately.
  • If not serving immediately, use reduced fat Nilla wafers or thin slices of sugar free fat free angel food cake.
