ASPARAGUS OR BROCCOLI CASSEROLE
My Aunt Naomi made this casserole years ago while we were all vacationing at Hilton Head. She wrote the recipe down on her personalized stationary for my mother. I was going through my mom's recipe box about a year ago and found the tattered and often used recipe. I thought I'd better record it here to preserve it and share this delicious casserole with others. Enjoy!

Steps:
- Preheat oven to 350 degrees.
- Mix first five ingredients in a bowl. Add partially cooked vegetable, then stir in Stove Top dressing. Pour in a greased 2 quart baking dish and top with shredded cheese.
- Bake 45 minutes, uncovered.

BROCCOLI, SPINACH AND CHICKEN CASSEROLE

Steps:
- Preheat oven to 375°F.
- Season chicken to taste with salt and pepper. Cook chicken in 2 T. olive oil over medium high heat until almost done. Remove from pan. Thaw spinach and drain and press out excess water.
- Using same pan add last of olive oil, onions and garlic. Cook until onions are translucent. Add flour and cook for 1-2 minute.
- Add the chicken broth, cream and milk to onions. Whisk well for 30 seconds. Bring to boil stirring frequently. Reduce heat to medium/low and simmer sauce until slightly thickened.
- Add broccoli, spinach, 1 cup cheese and sauce in large bowl. Stir until well mixed and pour into 9x13-inch glass baking dish.
- Cover with foil and bake until edges are bubbly and middle is hot. Remove foil and sprinkle remaining cheese on top. Return to oven until cheese is melted.
LISA'S BROCCOLI, SPINACH AND CHEESE CASSEROLE
I got this recipe from my cousin Lisa, but there is an (unrelated) amusing story that comes with it. When I was in college, my roommate's boyfriend HATED broccoli, until he tried this casserole. I gave the recipe to my roommate, who passed it on to his mom. When his family came down for graduation, his mom gave me a big hug and thanked me for finding a way to get her son to eat broccoli! Note: I've also made this into a complete meal by adding leftover cooked chicken to the broccoli mixture before baking.

- Preheat oven to 325 degrees F.
- Mix all the ingredients together except the butter and the crackers, and pour into a casserole pan.
- Crush the crackers, either in the unopened roll, or in a plastic bag.
- Melt the butter in a frying pan, and saute crackers until all the butter has been absorbed.
- Sprinkle the crackers on top of the broccoli mixture and bake for 45 minutes.

SPINACH AND BROCCOLI CASSEROLE
A good friend of mine gave me this recipe and it is AMAZING! Perfect as a side dish or main dish. Refridgerate the leftovers (if there are any!) and have a great breakfast!

Steps:
- Preheat oven to 350.
- Spray 9x13 glass dish with no-stick cooking spray.
- Cook the frozen vegetables according to packaged instructions, and drain well.
- Mix the cheeses with the soup.
- Beat eggs well and add to cheese and soup mixture.
- Combine all ingredients, stirring slowly into liquid mixture.
- Pour into glass dish and cook for approximately 35 minutes.

A wonderful pasta dish with lots of vegies. You can also add your favorite vegies to this dish very easily or omit those vegies you don't like. The sausage and fresh herbs really add to the flavor!

Steps:
- Heat oil in a large saute pan set on medium heat, until almost sizzling, about 2 minutes.
- Cook the sausage meat for 3 minutes or until lightly browned. Bring your water for the pasta to a boil and add pasta at this time.
- Transfer the sausage with a slotted spoon to a bowl and set aside.
- Add the garlic, shallots, salt, pepper and red pepper flakes to the same pan.
- (If you like it spicy, add more red pepper flakes)!
- Cook over medium heat for 3 minutes, stirring to mix well.
- Add the cooked sausage, basil, oregano and white wine and cook for 3 more minutes, stirring to scrape up any brown bits from the bottom of the pan.
- Add the chicken stock and bring to a slow boil. Lower heat. Add broccoli, tomatoes, asparagus and mushrooms at this time.

- Cover the pan and cook with lid slightly ajar, simmer for 8-10 minutes or until vegies are crisp.
- Drain your pasta and add it to the veggies. Co0k for 1-2 minutes.
- If you have too much liquid, thicken with the corn starch, not enough add water.
- Serve immediately with freshly grated cheese.

- Heat oven to 350°F Spread oil over the bottom of a medium-size baking dish.
- Arrange potatoes in layers in the baking dish, seasoning each layer with some of the salt and pepper. Scatter onions and asparagus pieces over the potatoes and season with the remaining salt and pepper.
