The secret to a flavorful pot roast is browning the meat and onions before roasting, which adds a rich meaty flavor and caramelized sweetness. This step is what separates our recipe from many others that use a slow cooker. And also unlike a slow cooker recipe, our sauce is simmered to reduce a little which concentrates the flavors. What you'll end up with is a roast that's fall-apart tender with a velvety sauce and delicious vegetables.

Number Of Ingredients 16

One 4-pound boneless beef chuck roast, trimmed and tied
4 tablespoons kosher salt
6 tablespoons vegetable oil
2 large onions, cut into 2-inch wedges
4 cloves garlic, finely grated
1 tablespoon tomato paste
1 cup dry red wine
2 bay leaves
3 tablespoons all-purpose flour
1 cup low-sodium chicken broth
1 1/2 teaspoons freshly ground black pepper
7 carrots, peeled, cut into 3-inch pieces
4 stalks celery, cut into 3-inch pieces
2 pounds medium red potatoes, quartered (halved if small)
Chopped flat-leaf parsley, for garnish
Chopped chives, for garnish

Steps:

  • Sprinkle the roast with 3 tablespoons of the salt, rubbing into the grain and covering all sides. Wrap tightly in plastic wrap and refrigerate at least 3 hours and up to 3 days.
  • Arrange a rack in the lower third of the oven and preheat to 275 degrees F.
  • Heat 2 tablespoons of the oil in a large heavy pot or Dutch oven over high heat. Cook the meat, turning occasionally, until browned on all sides, 10 to 12 minutes. Transfer to a plate.
  • Reduce the heat to medium-high and heat the remaining 4 tablespoons oil in the pot. Cook the onions and the remaining 1 tablespoon salt, stirring occasionally, until browned but not completely cooked through, 6 to 8 minutes (it's ok if the onion wedges break apart). Add the garlic and tomato paste and cook, stirring occasionally, until the paste is brick red and the garlic is fragrant, about 1 minute. Add the wine and bay leaves and cook, stirring occasionally and scraping the bottom of the pot, until slightly reduced and you can no longer smell the alcohol, about 4 minutes. Add the flour, stir to coat the onions and cook for 1 minute. Stir in the broth and pepper and bring to a boil.
  • Nestle the meat and any accumulated juices into the onions. Arrange the carrots, celery and potatoes around the roast, pushing them into the onions and surrounding the beef. Cover and transfer to the oven. Cook until the meat is very tender but still holds its shape and is not falling apart, 3 to 3 1/2 hours. Let rest, covered, at least 45 minutes before serving.
  • Transfer the roast to a cutting board and remove the twine with scissors, if necessary. Slice against the grain.
  • Divide the vegetables among plates and arrange the sliced beef over top. Spoon sauce over the top garnish with parsley and chives.

1 (3 to 4-pound) boneless bottom round roast
Kosher salt and freshly ground black pepper
1/4 cup vegetable oil
2 yellow onions, peeled and quartered
3 cloves garlic, smashed
1 tablespoon tomato paste
1 cup red wine
2 cups beef stock
2 fresh thyme sprigs
2 bay leaves
3 carrots, peeled and sliced into 1/2-inch pieces
Freshly chopped parsley leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the roast on all sides with salt and pepper.
  • In a Dutch oven over medium-high heat, heat the vegetable oil and sear the roast on all sides. Add the onions, garlic and tomato paste and cook until slightly colored. Add the wine, stock, thyme and bay leaves. Bring the liquid to a simmer, cover, and place in the oven.
  • Roast for 1 1/2 hours and then add the carrots. Continue to cook for 1 more hour. Transfer the roast to a cutting board and let rest for 15 to 20 minutes. Slice and place on a serving platter. Skim the fat off the braising liquid and serve with the roast. Garnish with parsley.

One 2 lb. Bison Inside Round Roast (fresh or fully thawed)
1/3 cup flour
2 tbsp. chopped or granulated garlic
1 tsp. coarse sea salt
1 tsp. coarse ground pepper
1/3 cup olive oil
I diced large onion chopped
3 medium carrots diced
2 stalks of celery
1 large leek sliced
1 tbsp. tomato paste
2 1/2 cups of beef stock
1 1/2 cups of beef stock and one cup of dry red wine

Steps:

  • Place bison pot roast in a large zip lock bag with flour, garlic, salt and pepper. Shake well to coat and allow to rest for 10 minutes.
  • Place a heavy bottomed pan on the stove and preheat for 10 minutes on medium low.
  • Add vegetable oil and brown the roast well on the first side for 7 minutes and the second side for 5 minutes. Remove and set aside on a platter.
  • Add onions to same skillet and saute until soft and clear, about 9 minutes. Add carrots and celery and cook for an additional 11 minutes. For best flavor the vegetables should caramelize.
  • Add one heaping tablespoon of tomato paste and continue to saute for an additional 2 minutes.
  • Add beef stock or stock/wine mixture. Return roast to pan, bring liquid to a boil and immediately reduce to a simmer.
  • Cover and cook on lowest stove top setting for 7 hours OR Set oven temp to 180°F and cook in covered heavy casserole for 8 hours OR Transfer to slow cooker and cook on low for 8 hours.
  • When the meat is fork tender, remove roast and let rest for 10 minutes before slicing.

2 -3 tablespoons olive oil
kosher salt
3 -5 lbs chuck roast
2 onions
6 -8 carrots
pepper
2 -2 1/2 cups beef broth
3 -4 fresh rosemary sprigs
2 -4 fresh thyme sprigs, or if you don't have those, she says to use a dash of the dried herbs instead, or omit completely.

Steps:

  • preheat oven to 275. Heat large pot or dutch oven over medium high heat. Add olive oil and let it get really hot.
  • Salt and pepper the chuck roast on both sides. Cut the onions from root to tip, cut the ends off, and peel the skin off. Brown onions on both sides in dutch oven, then remove to a plate. Thoroughly wash carrots, chop and add to dutch oven and toss them around until slightly brown, about a minute or so.
  • Remove the carrots and allow pot to become hot again.
  • Sear roast about 1 minute per side and then remove to plate.
  • Turn heat to high and deglaze the pot adding one cup of the beef broth.
  • Add Meat back to pot, followed by carrots and onions. Pour beef broth into pot to cover the meat half way. Tuck thyme and rosemary into the broth, if you are using them.
  • Cover pot and roast for 3-5 hours depending on the size of your roast. For a 3 pound roast, allow 3-3 1/2 hours, for a 4 to 5 pound roast, cook for 4 to 5 hours.
  • When cooking time is over, check for doneness; insert a fork into meat, the fork should go in very easily and the meat should be very tender.
  • Remove to cutting board and slice against the grain.
  • Serve.
  • Congratulations, you're a hero.

3 lbs boneless chuck roast

2 cups beef stock

2 cups button mushrooms, quartered
6 potatoes, cut into 1 inch chunks

1 tablespoon butter (optional)
1 tablespoon flour (optional)

Steps:

  • Heat a large skillet with cover over high heat.
  • Add olive oil and just as the oil begins to smoke add the roast to the pan and brown on all sides, seasoning with salt and pepper.
  • Add the onions, carrots and celery to skillet and stir to coat in oil; let vegetables cook for 3 minutes.
  • Add the brandy and the beef stock and bring mixture to boil; add the thyme and bay leaf; cover.
  • Reduce heat to simmer and cook for 2 hours; add the mushrooms and potatoes and cook for another 45 minutes.
  • Remove the beef from pan and let it rest on cutting board, tented with foil; with a slotted spoon remove the vegetables and place in a serving bowl; increase the heat and reduce the sauce to desired consistency; if you want a thicker gravy cook 1 tbsp butter and 1 tbsp flour together in a small saucepan.
  • Pour the liquid from the skillet into saucepan and whisk vigoroulsy; season with salt and pepper to taste.
  • Slice the pot roast and serve with vegetables.
  • Pour the sauce over the top or serve separately.

2 lbs beef brisket
2 onions, coarsely chopped
6 celery ribs, thickly sliced

1 1/4 cups Guinness stout
1 bay leaf
3 teaspoons dried thyme
1 teaspoon brown sugar

  • Preheat the oven to 350 degrees F.
  • Heat the oil in a large flameproof casserole and brown the meat on all sides; remove from pan and drain.

  • Add the bay leaf, thyme, sugar.

By cooking this roast in its own juices, rather than with canned stock or water, it is full of flavor and falls apart! It took years to perfect this recipe, my own creation, but well worth it. The butter adds a real creaminess to this dish, and the seasonings give it that extra kick!

salt and pepper
2 -3 tablespoons olive oil
2 tablespoons butter
1 yellow onion, Quartered

red wine
1 beef bouillon cube
1 tablespoon dried parsley
1 tablespoon italian seasoning
2 cups carrots, chopped
2 cups yukon gold potatoes, chopped
2 tablespoons butter
2 tablespoons flour
2 -3 cups beef stock
salt and pepper

Steps:

  • Warm skillet with olive oil to medium high heat. Add butter until melted. Sprinkle roast with salt and pepper and brown on all sides. Remove from pan and set on plate.
  • Carmelize onions and garlic in the skillet then deglaze pan with red wine.
  • Put bouillon on bottom of crock pot, and pour stock from skillet on top, including onions and garlic. Place meat on top.
  • Sprinkle parsley and Italian seasoning over meat, toss in carrots and potatoes.
  • Cook for 1 hour on high then reduce to medium high for 3 to 5 hours.
  • Remove roast and veggies to serving platter.
  • Pan Gravy: In saucepan melt butter, then whisk in flour and cook until slightly browned.
  • Whisk in ladles filled with crock pot juices until desired thickness. Add salt and pepper if needed.
  • Spoon over roast and serve remaining gravy at table.

I call this my belt buster recipe because we seem to end up stuffing ourselves on it till our stomachs can't stretch anymore. This is really easy to throw in before work in the morning. I usually prepare mine the night before and stick my crock pot in the fridge and just pop it on the base in the morning. The house smells like heaven when I get home. The vegetable ingredients are not exact measurements, add as much or as little as you like! PS - This pot roast meat is one of the only meats I can get my 14-month-old to eat - I guess because it is fall-apart-in-your-mouth easy to chew. PPS - if you are careful on which seasoning mix you use, this is also a great lactose-free recipe

10 new potatoes, quartered if you prefer (but not necessary)
