SAUSAGE AND EGG CASSEROLE WITH SUN-DRIED TOMATOES AND MOZZARELLA

Steps:
- Preheat oven to 375°F. Butter 13x9x2-inch glass baking dish. Sauté sausage in medium nonstick skillet over medium heat until brown and cooked through, breaking up with back of fork into small pieces, about 10 minutes. Add shallots and garlic and sauté 3 minutes. Add sun-dried tomatoes and 2 tablespoons parsley; stir 1 minute. Spread sausage mixture in prepared dish. (Can be made 1 day ahead. Cover and refrigerate.)
- Whisk eggs, egg yolks, half and half, whipping cream, 1 1/2 cups cheese, and salt in large bowl to blend well. Pour egg mixture over sausage mixture in dish. Sprinkle remaining 1/2 cup cheese and 2 tablespoons parsley over. Bake until top of casserole is golden brown and knife inserted into center comes out clean, about 30 minutes. Let stand 5 minutes before serving.

- Preheat oven to 350°. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 6-8 minutes; drain. Mix hash browns and cheddar cheese. Layer an 11x7-in. baking dish with half of each of the following: hash brown mixture, sausage, spinach and tomatoes. Repeat layers; sprinkle with mozzarella cheese. Whisk together eggs, milk, salt and pepper; pour evenly over top., Bake, covered, 35 minutes. Sprinkle with Parmesan cheese. Bake, uncovered, until bubbly and cheese is melted, 10-15 minutes. Let stand 5-10 minutes before serving., Make-Ahead: Refrigerate unbaked casserole, covered, several hours or overnight. To use, preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake as directed.

- Butter bottom and sides of 9 x 13" baking dish.
- Spread 3 tablespoons butter over one side of each slice of bread, then cut bread into 1" pieces. Scatter half of bread evenly into prepared dish and sprinkle with half of mozzarella, Parmesan, and tomatoes. Repeat with remaining bread, mozzarell, Parmesan, and tomatoes.
- Whisk together eggs, milk, onion, salt, pepper, mustard, and Tabasco and pour evenly over bread. Press lightly on the bread to submerge. COver tightly with plastic wrap and refrigerate at least 8 hours and up to 36 hours.
- Remove dish from refrigerator and uncover. Preheat oven to 350 degrees. Adjust oven rack ti middle position and heat oven to 350 degrees. Bake until puffed and golden brown, about 1 hour. Serve immediately.

This strata makes breakfast less hectic because all the prep work is done the night before. The quantities of mushrooms, onions, and green peppers can be varied to suit the tastes of those who will be eating this dish.

- Grease a 9x13 inch baking dish. Layer half of the torn bread in the bottom of the dish. Sprinkle the mushrooms and green bell pepper evenly over the bread layer. Sprinkle with half of the cheese. Top with remaining bread pieces, then layer with the onion and ham. Sprinkle with remaining cheese. Whisk together eggs and milk; pour over the entire pan. Cover with aluminum foil, and refrigerate for 12 to 24 hours.

- In a large skillet over medium-high heat, cook sausage, stirring occasionally, and breaking up meat with a spoon, until browned, 8 to 10 minutes. Add onion; cook. Stirring, until soft, 8 to 10 minutes. Stir in sun-dried tomatoes. Transfer to a plate; let cool until barely warm.
- Butter an 8-inch-square baking dish. In a large bowl, whisk together eggs, milk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. SAUSAGE AND CHEESE STRATA WITH SUN-DRIED TOMATOES
An incredible alternative to Lasagna. You will not believe how light and puffy it bakes up. Never any thrown away. Actually better the next day in my opinion as the ingredients blend. Instead of crustless white bread I usually use Italian bread just broken into small pieces. I believe I obtained this recipe from Bon Apetit a few years ago.

Steps:
- Place sun-dried tomatoes in medium bowl.
- Pour enough boiling water over to cover.
- Let stand until softened, about 15 minutes.
- Drain.
- Sauté sausages in heavy medium skillet over medium heat until cooked through, breaking up with back of spoon, about 5 minutes.
- Using slotted spoon, transfer sausage to paper towels and drain well.
- Butter 13x9x2-inch glass baking dish.
- Whisk milk, eggs, thyme, salt and pepper in large bowl to blend.
- Add sun-dried tomatoes, sausage, bread, onion and Parmesan cheese and stir to blend.
- Transfer to prepared dish.
- Cover and refrigerate at least 4 hours or overnight.
- Preheat oven to 375°F.
- Bake strata uncovered until puffed and golden brown, about 45 minutes.
- Sprinkle with mozzarella and goat cheese and bake until mozzarella melts, about 5 minutes.
- Transfer pan to rack and cool 5 minutes.
- Sprinkle with parsley.

- Generously spray a 11x8 casserole or 10 inch square dish with cooking spray. Add ½ the bread to the dish, along with ¾ cup of shredded cheese and crumbled sausage or pepperoni (if using) followed by the remaining bread, set aside.
- In a medium bowl, combine the eggs, milk, parmesan, basil, sun-dried tomatoes, garlic, salt, pepper, and red pepper flakes and whisk until thoroughly mixed.
- Pour the prepared mixture over the bread. Use a wooden spoon to help push the bread down so it soaks up all the liquid. Sprinkle the remaining cheese on top, cover the dish with plastic wrap and refrigerate for at least 8 hours so the bread soaks up the egg mixture.
- Position a rack in the center of the oven and preheat the oven to 375ºF. Bake the casserole, uncovered for 35-42 minutes or until the cheese melts and a toothpick inserted in the casserole comes out without any liquid on it. Allow the casserole to cool for 5-10 minute before slicing and serving.

- Melt 1 tablespoon butter. For individual stratas, brush insides of four 1-cup baking dishes. If serving family style, brush inside of 2-quart baking dish.
- In large skillet over medium heat, melt remaining 2 tablespoons butter. Add garlic and shallot; sauté for 2 minutes. Add mushrooms and marjoram and cook for another 4 minutes. Remove from heat and place mushroom mixture in large bowl with bread chunks, artichoke hearts, kalamata olives, sun dried tomatoes, Parmesan and Fresh Mozzarella and stir to mix. Season lightly with kosher salt. Fill baking dishes evenly with the bread mixture.
- In 4-cup liquid measuring cup, mix eggs with half and half and pour 1 cup of egg mixture evenly over bread in each dish. Garnish with basil and more Parmesan.
