A perfect way to use up leftovers. Just by adding a few peppers and onions, you have a hearty breakfast. You can add any type of meat or vegetables to this dish and make it your own. This was just my husband's favorite breakfast. Enjoy!

¼ cup vegetable oil
¼ pound bulk pork sausage
1 4x4-inch square prepared cornbread, crumbled
4 eggs
1 (10 ounce) package frozen bell pepper and onion mix, thawed
1 dash hot sauce, or to taste
salt and ground black pepper to taste

Steps:

  • Heat vegetable oil in a large skillet over medium heat; cook and stir sausage until browned and crumbly, about 8 minutes. Gently mix cornbread with sausage and cook until heated through, about 3 minutes. Stir eggs into sausage and cornbread, one at a time, cooking until eggs are scrambled and firm.
  • Stir bell pepper and onion mix into skillet; cook until heated through, stirring occasionally, about 5 minutes. Season with hot sauce, salt, and black pepper.

1 onion, chopped
2 large eggs eggs, lightly beaten
1 ½ cups buttermilk self-rising cornmeal mix
1 (15 ounce) can cream style corn
½ cup sour cream
¼ cup vegetable oil
2 cups shredded sharp Cheddar cheese
½ cup milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 10 inch ovenproof skillet.
  • In a medium skillet, brown the sausage and onion; drain well.
  • In a large bowl, combine eggs, corn meal mix, corn, sour cream, milk, and oil. Pour half of corn meal mixture into the greased pan, and sprinkle with sausage mixture and cheese. Pour remaining batter over top.
  • Bake for 30 to 40 minutes. Let stand 10 minutes before serving.

The combination of ham and kale is traditional for a reason: it's so unbelievably good. But this satisfying casserole is easy to adapt to other greens and meat pairings, depending on what you have on hand: Try cooked sausage with frozen spinach or Andouille with frozen mustard greens.

3 tablespoons unsalted butter, plus more for greasing the baking dish
1 medium onion, finely chopped
1 teaspoon fresh thyme leaves
Kosher salt and freshly ground black pepper
Two 16-ounce bags frozen corn, thawed
1 1/2 cups heavy cream
1/2 pound thick-sliced deli ham, diced
5 ounces frozen kale (about 1 3/4 cups)
3/4 cup yellow cornmeal
3/4 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon sugar
Kosher salt and freshly ground black pepper
1 1/2 sticks (12 tablespoons) cold unsalted butter, cut into small pieces
3/4 cup heavy cream
1 cup shredded sharp yellow Cheddar
Hot sauce, for serving

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2-quart oval baking dish.
  • For the creamed corn: Melt the butter in a large skillet over medium heat. Add the onions, thyme, 1/2 teaspoon salt and a few grinds of pepper, and cook, stirring frequently, until the onions are soft and translucent, about 10 minutes. Add the corn and cream, and bring to a simmer, stirring occasionally, until the mixture reduces in volume and bubbles rapidly, about 15 minutes. Transfer 2 cups of the corn mixture to a food processor, puree until smooth, then stir it back into the skillet. Fold in the ham and kale. Transfer the creamed corn to the prepared baking dish; set aside. Clean the food processor bowl.
  • For the cornbread topping: Pulse the cornmeal, flour, baking powder, sugar and 1/2 teaspoon each salt and pepper in a food processor to combine. Add the butter, and pulse until the mixture resembles coarse breadcrumbs. Add the cream and 1/2 cup of the Cheddar, and pulse until the batter just comes together.
  • To assemble: Sprinkle the cornmeal batter over the creamed corn. (Don't worry if the corn isn't completely covered; the batter will puff and spread as it bakes.) Sprinkle with the remaining 1/2 cup Cheddar. Place the casserole on a baking sheet, and bake until the corn is bubbling and the crust is puffed and golden brown, about 35 minutes. Let cool for 15 minutes. Serve with hot sauce.

3 Hot Italian sausages (about 1½ cups), cooked and diced
2 jalapeño peppers (about ½ cup), de-seeded and diced
1 cup jalapeño Monterey Jack cheese, shredded
1 cup yellow cornmeal
1 cup all-purpose flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 cup milk
¼ cup maple syrup
1 large egg
2 tbsp butter

Steps:

  • Preheat the oven to 400 degrees F.
  • Using a 10-inch cast iron skillet, add a tablespoon of butter and fry the sausages until cooked through. Place the cooked sausage on a plate with a paper towel to help soak up excess fat. Once cooled, dice the sausage into pieces.
  • Meanwhile, in a large bowl, whisk together the flour, cornmeal, baking soda, baking powder, and salt. Then mix in the milk, maple syrup, and egg until the ingredients are just combined.
  • Fold in most of the cheese, pepper, and sausage, reserving a small handful of each ingredient. The batter will be thick.
  • Using the same cast iron skillet, at medium-high heat, swirl a tablespoon of butter into the pan, allowing the skillet to heat up and the butter to melt before removing from the heat. Make sure the butter coats the entire pan.
  • Pour the batter into the hot skillet. Top with the reserved sausage, pepper, and cheese. Bake for 20-25 minutes, until the cornbread is golden-brown on top and a wooden skewer comes out clean.
  • Let the cornbread cool for 10 minutes. Cut into pieces and serve warm.

1/2 lb pork sausage link
4 tablespoons butter
1/2 cup brown sugar, packed
4 small apples, peeled cored, and sliced into eighths
1 cup flour
3/4 cup yellow cornmeal
3 tablespoons brown sugar, packed
1 tablespoon baking powder
1 teaspoon salt
1 egg, lightly beaten
4 tablespoons butter, melted
1 cup milk

Steps:

  • Grease bottom and sides of a 8" or 9" square baking pan.
  • Brown the sausages in a medium skillet over moderately high heat, rotating them until browned and cooked through.
  • Remove the sausage and discard all but 2 tablespoons of the drippings.
  • Add butter and brown sugar to the pan.
  • Heat, stirring until sugar is melted.
  • Add apples and saute them over moderate heat, turning occasionally, until soft (about 10 min).
  • Arrange sausages in rows across the prepared pan.
  • Insert the apple slices, round side down, between the sausages, wedging them in tightly.
  • Pour over juices from the skillet (the pan can be covered and refrigerated overnight at this point, if desired).
  • Bring to room temperature before proceeding.
  • Preheat oven to 400°F
  • To make cornbread, stir together the flour, cornmeal, brown sugar, baking powder, and salt in a medium bowl.
  • Add the egg, melted butter and milk.
  • Stir with a wooden spoon until well combined.
  • Pour the batter over the sausage and apples, smoothing the top to cover well.
  • Bake for 25 minutes or until cake tester inserted in middle comes out clean.
  • Remove from oven.
  • Immediately invert onto a serving dish.
  • Cut into squares and serve.

Flatten and press dough pieces together to seal perforations. Bake at 375° for 11-14 minutes or until golden brown., Meanwhile, crumble sausage into skillet; cook over medium heat until no longer pink. 14 oz. creamed style corn (canned)
4 oz. diced green chilies (canned)
1 ½ c shredded sharp cheddar cheese (divided)

Steps:

  • To begin, preheat your oven to 350 degrees.
  • Grease a 9x9 square baking dish, and set it aside for now.
  • In a skillet, sauté the sausage and onion with the butter over medium-low heat until the onions are tender and the sausage is slightly browned. Transfer the sausage mixture to a plate lined with paper towels to drain any excess grease.
  • In your mixing bowl, combine the cornmeal, salt and chili powder.
  • Stir in the eggs, milk, oil, creamed corn and green chilies.
  • Add 1 cup of the shredded cheese and the sausage mixture. Fold it together.
  • Spread the batter into your prepared baking pan. Sprinkle with the remaining cheese.

1 pound breakfast sausage links, casings removed, or ground breakfast sausage mix, broken up into ½" pieces
2½ cups chopped onions (about 1 medium plus 1 large onion)
3 medium celery stalks, sliced
2 large eggs
2½ cups low-sodium chicken broth
½ cup chopped parsley
2 tablespoons chopped sage
1 tablespoon chopped thyme
2 teaspoons chopped rosemary
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
A 13x9x2" or other 3-quart baking dish

Steps:
