6 skinless, boneless chicken breast halves
1 (16 ounce) bottle Italian-style salad dressing

Steps:

  • To Marinate: Pour salad dressing into a large, resealable plastic bag. Add chicken breasts, seal bag and shake to coat. Place in refrigerator for at least 1 hour or overnight (the longer you marinate, the more taste the chicken will absorb).
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove chicken from bag, discarding remaining marinade. Place chicken in a lightly greased 9x13 inch baking dish and bake at 350 degrees F (175 degrees C) for 1 hour, or until chicken is cooked through and juices run clear. Note: Turn chicken occasionally while baking.

3 cups chopped cooked chicken
1 (10 ounce) can condensed cream of chicken soup
1 cup sour cream
½ cup milk
1 (6 ounce) package dry bread stuffing mix
½ cup melted butter
hot water as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Arrange chicken in the bottom of a 2-quart casserole dish.
  • Combine cream of chicken soup, sour cream, and milk in a small bowl; mix well. Pour over the chicken.
  • Toss stuffing mix with melted butter in a bowl, adding hot water to moisten. Sprinkle stuffing over chicken in the casserole dish.
  • Bake in the preheated oven until bubbly, about 30 minutes.

My oldest is the pickiest eater in the history of the world. Even now, at 15 years old, there are very few meals that he actually likes (although he will force down pretty much whatever I make). Most days he comes home from school and asks, "Are we having chicken tonight?" and I know he means this ridiculously simple baked chicken. Keep in mind that I have 2 boys (14 & 15) and this serves all 4 of us with some leftovers sometimes. I usually serve with green beans and some parmesan-butter noodles.

1 tablespoon minced garlic
2 (5 ounce) frozen skinless, boneless chicken breasts
1 (4.5 ounce) can sliced mushrooms, drained
2 (.7 ounce) packages dry Italian-style salad dressing mix
1 cup chicken broth
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) package cream cheese

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter to melt; then add garlic and saute for about 1 minutes. Add chicken, mushrooms, and 1 package of salad dressing mix. Pour broth over top.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 5 minutes. Take chicken out and shred with 2 forks.
  • Select Saute function. Add cream of chicken soup, remaining Italian dressing mix packet, and cream cheese; stir to mix. Add shredded chicken back in. Heat through, stirring occasionally, for 5 minutes. Serve.

balsamic vinegar
2 large boneless skinless chicken breast halves
2 tablespoons extra virgin olive oil
2 medium red potatoes (sliced thin)
1 medium white onion (sliced thin)
McCormick's Montreal Brand steak seasoning, by mccormick
1/2 cup white wine
3/4 cup fresh green beans (cut in halv)
1/2 cup fresh carrot (chopped)
1 (14 ounce) can crushed tomatoes
10 leaves fresh basil (chopped or torn)
2 sprigs fresh oregano (or 1/2 tsp dried)
3/4 cup shredded Italian cheese (romano, parmesan or mozzerella)

Steps:

  • Cut chicken into 1" slices. Place in a bowl and douse with balsamic vinegar, set aside.
  • Chop all your ingredients.
  • In a deep skillet, heat 1 Tbls olive oil over medium-high heat. Brown chicken and remove from pan.
  • Add remaining 1 Tbls olive oil to same skillet. Add a thin layer of potatoes and onion, sprinkle with Monteray seasoning, and repeat until all your potatoes and onions are in the pan. Let cook, stirring occasionally until potatoes and onion begin to brown. Add green beans and carrots, sprinkle with a touch more Montreal seasoning. Add chicken back to the pan.
  • Pour crushed tomatoes over the top. Sprinkle with basil and oregano. Cover and cook over medium heat until potatoes are tender.
  • Meanwhile: Turn on broiler.
  • When potatoes are tender, sprinkle cheese over the top, and place under broiler just until the cheese melts and begins to turn brown.
