Braised Lamb Shanks with Cannellini Beans image

This is delightfully simple as everything goes into one pot, no accompaniments are needed, and it provides a complete menu for two people. It is also very good with flageolet or borlotti beans to ring the changes.

2 lamb shanks (each weighing about 1 lb/450 g)
1 fresh bay leaf
2 tablespoons fresh rosemary bruised in a mortar, then chopped, plus 4 sprigs, to garnish
salt and freshly milled black pepper
4 oz (110 g) dried cannellini beans, pre-soaked and drained
4 medium-sized, ripe tomatoes
1 large stick celery
2 tablespoons olive oil
2 cloves garlic, chopped
1 large onion, peeled and cut into eighths through the root
1 large carrot, peeled and chopped into 2 inch (5 cm) chunks
15 fl oz (425 ml) red wine

Steps:

  • Begin by skinning the tomatoes. Place them in a heatproof bowl and pour boiling water on to them. Leave them for exactly a minute, then remove them and slip off their skins (protecting your hands with a tea cloth if they are hot). You can watch how to do this in our Online Cookery School Video on the right. Then chop them fairly roughly. Next, using a potato peeler, remove the worst of the stringy bits from the celery and cut it into 2 inch (5 cm) chunks. Now pre-heat the oven to gas mark 1, 275°F (140°C). After that, you need to heat the oil in the casserole over a highish heat. Then, season the lamb shanks with salt and freshly milled black pepper and, when the oil is really hot, brown them on all sides, holding them at the bone end while protecting your hand again with the tea cloth, and turning them round in the hot oil. When they're nicely browned, remove them to a plate and, keeping the heat high, add the celery, onion and carrots and brown them as well, turning and tossing them around for about 6 minutes. Now stir in the garlic, cook for one minute, then add the drained beans and give everything another good stir. Next, add the tomatoes, wine, bay leaf, chopped rosemary and some seasoning. Then, finally, place the lamb shanks on top and when everything is beginning to simmer, cover with the lid and transfer the casserole to the oven to braise very slowly for 3 hours. Serve garnished with the sprigs of rosemary.

This made the house smell heavenly, a perfect cool weather dish. The meat literally falls off the bones. Mashed potatoes as an accompaniment is a must. The total cooking time is actually 2 hours 15 minutes, adding in the time to thicken the sauce the total cooking time is 2 1/2 hours.

6 lamb shanks (trimmed of fat)
1 large onion
4 garlic cloves
3 cups beef stock
1 cup red wine
1 tablespoon italian seasoning
2 tablespoons vegetable oil
1/2 cup flour
1 teaspoon fresh coarse ground black pepper
4 bay leaves
salt and pepper

Steps:

  • Combine flour and pepper in large ziplock bag (I used a freezer bag).
  • Dredge lamb shanks in flour.
  • Thinly slice onion, mince garlic.
  • Heat oil in large frying pan.
  • Fry shanks until golden brown on each side.
  • Turn with tongs.
  • Place shanks in Dutch Oven, or large oven proof pot with lid.
  • Add minced garlic and bay leaves to pot.
  • Add onion slices to frying pan.
  • Cook stirring occasionally until onion is soft.
  • Add red wine to frying pan.
  • Cook stirring occasionally until slightly syrupy, approximately five minutes.
  • Pour onion mixture over shanks.
  • Sprinkle Italian seasoning over shanks.
  • Pour beef stock into pot.
  • Cook in 375 F oven for 2 hours and 15 minutes.
  • Sprinkle with salt and pepper to taste.
  • If desired sauce may be thickened by removing lamb shanks to plate and simmering sauce on stove top for 15 minutes or until it coats the back of a spoon.
  • Return shanks to sauce to rewarm.

4 lamb shanks
6 garlic cloves, cut into slivers
1 tablespoon fresh rosemary leaves (or one teaspoon dried)
3 tablespoons extra-virgin olive oil
1/2 pound Great Northern beans
Water to cover
3 medium-size onions, peeled
Herb bouquet (thyme, parsley and bay leaf tied in a cheesecloth bag)
Coarse salt and freshly ground pepper to taste
3 carrots, sliced
1 1/2 cups dry white wine
1 1/2 cups chicken or meat stock
1/3 cup diced salt pork
3/4 cup fresh bread crumbs
2 tablespoons unsalted butter
2 tablespoons parsley, chopped

Steps:

  • Make small incisions in the lamb shanks and stud them with the slivers of garlic. Sprinkle the lamb with the rosemary. Coat the shanks with two tablespoons of the olive oil, cover, and marinate overnight in the refrigerator. Soak the beans overnight in cold water to cover.
  • Rinse the beans, put them in a large saucepan and cover them with fresh water. Add an onion, chopped, the herb bouquet, and salt and pepper. Simmer for about an hour, or until the beans are tender.
  • Heat remaining olive oil in a large pan and brown the lamb shanks on all sides. Remove the shanks and pour off the fat.
  • Chop the remaining onions and add them to the pan. Cook gently until the onions are soft. Add the carrots, wine, lamb shanks and stock. Bring to a boil, lower the heat and simmer for an hour.
  • Preheat oven to 350 degrees.
  • Drain beans, reserving cooking liquid. In a large casserole, put a layer of beans, a layer of salt pork, the vegetables and the juice from the shanks and then the shanks. Add remaining beans and juices. If the stew is too dry, add some of the liquid from the beans. Bake one hour.
  • Sprinkle with bread crumbs and butter and bake, uncovered, for 30 minutes longer. Sprinkle with the parsley and serve.

250g haricot beans , soaked overnight and drained
2 large onions , 1 roughly chopped, 1 quartered
3 whole carrots , peeled, 1 halved lengthways, 2 diced
2 sticks celery , 1 halved, 1 diced
2 bay leaves
bunch of parsley , stalks and leaves separated, leaves chopped
6 black peppercorns
2 tbsp olive oil
1kg braising lamb (shoulder is good), cut into chunks
4 garlic cloves , finely chopped
400g can cherry tomatoes
1 tbsp tomato purée
400ml lamb stock or chicken stock

Steps:

  • Put the beans in a saucepan and cover with water. Add the quartered onion, the halved carrot and halved celery, the bay leaves, parsley stalks and peppercorns. Bring to the boil, reduce the heat and simmer for 30-40 mins until the beans are soft. Drain well and reserve the cooking liquid, discarding the onion, carrot and celery.
  • While the beans are cooking, heat half the olive oil in a heavy-based flameproof casserole. Brown the lamb in batches over a high heat. As each batch is cooked, remove it and set aside on a plate. Reduce the heat, add the chopped onion to the pan with the diced celery and carrot and cook until well coloured. Add the garlic and cook for another couple of mins.
  • Return the lamb to the pan and add all the remaining ingredients, except the beans. Bring to the boil, reduce the heat to very low and cover, then cook for 2 hrs. Add the beans 45 mins before the end of cooking time. Stir the lamb round every so often. If the lamb looks dry, add some of the bean cooking liquid.
  • Remove the lid for the last 30 mins of cooking time, and season. This helps the cooking liquid to reduce. You should end up with a thick stew of tender lamb and soft beans. Scatter over the parsley and serve.

2 tablespoons olive oil
1 medium onion, chopped coarse
1 medium carrot, chopped coarse
1 celery rib, chopped coarse
8 garlic cloves, chopped coarse
3 1/2 cups Bordeaux or other full-bodied red wine
4 cups chicken broth
1 tablespoon tomato paste
2 fresh thyme sprigs
For gremolata
3 tablespoons chopped fresh parsley leaves (preferably flat-leafed)
1 teaspoon freshly grated lemon zest (about 1 lemon)
3 garlic cloves, minced
For beans
2 tablespoons extra-virgin olive oil
2 small onions, chopped fine
2 small carrots, chopped fine
2 celery ribs, chopped fine
3 garlic cloves, minced
2 cups cooked white beans (preferably Great Northern or navy)
2 to 2 1/2 cups chicken broth
2 tablespoons unsalted butter
1 bay leaf
1 tablespoon unsalted butter
3 fresh tarragon sprigs

Steps:

  • Make lamb shanks:
  • Pat lamb shanks dry and season with salt and pepper. In an 8-quart heavy flameproof casserole heat oil over moderately high heat until hot but not smoking and brown lamb shanks well in batches, transferring to a plate as browned. To casserole add onion, carrot, celery, and garlic and sauté until onion is softened. Add wine and simmer mixture, stirring occasionally, until liquid is reduced to about 3 cups. Return lamb shanks to casserole and stir in broth, tomato paste, and thyme. Bring liquid to a boil and simmer, covered, stirring and turning lamb shanks occasionally, 1 1/2 hours. Simmer mixture, uncovered, stirring occasionally, 1 hour more, or until lamb shanks are tender.
  • Make the gremolata while lamb is cooking:
  • In a small bowl stir together gremolata ingredients.
  • Make beans while lamb is cooking:
  • In a saucepan heat oil over moderately high heat until hot but not smoking and cook onions, carrots, celery, and garlic, stirring, 2 or 3 minutes, or until softened. Add beans, 2 cups broth, butter, and bay leaf and cook over moderate heat, stirring occasionally and adding enough remaining broth to keep beans moist and to reach a creamy consistency, about 30 minutes. Discard bay leaf and add half of gremolata and salt and pepper to taste.
  • Transfer lamb shanks to a plate and keep warm, covered with foil. Strain braising liquid through a sieve into a saucepan, discarding solids, and stir in butter and tarragon. Boil sauce, stirring occasionally, until thickened slightly. Strain sauce through sieve into a bowl and season with salt and freshly ground black pepper.
  • Sprinkle lamb shanks with remaining gremolata and serve with beans and sauce.
