The most decadent oat cookies on the planet... Chocolate Peanut Butter Crunchies! They're made with oats, coconut, cocoa and brown sugar and they are AMAZING.

Steps:
- Preheat oven to 170°C.
- Melt butter, peanut butter and syrup in a small saucepan. Stir in the baking soda, then the vanilla essence and coffee and set aside.
- Mix dry ingredients together in a large mixing bowl and then stir in the butter mixture until well combined.
- Press into an oblong baking pan. You want them about 1cm thick, if your pan is too big don't worry, just finish off the edge neatly by pushing the mixture into a straight line (and leave an empty bit of pan), they won't change shape much.
- Bake for about 15 - 20 minutes. They'll be soft when you take them out of the oven but they'll crisp up on the outside as they cool.
- Cut them into squares when they are still ever so slightly warm to the touch, then take them out of the pan and allow to cool completely on a cooling rack.

- Once melted, add the cornflakes to the bowl and fold to coat with the melted chocolate

- Let sit at room temperature (or in the fridge for a quicker result) until firm

- Line a small baking tray with parchment paper. Combine chocolate chips and peanut butter in a large, microwave-safe bowl. Heat in 30 second increments, stirring after each. Should take 2-3 rounds to melt completely. Add corn flakes to mixture; stir well. Using a serving spoon, scoop a large amount of the mixture onto the prepared tray. Repeat until all mixture has been scooped into individual portions. Refrigerate for 10-15 minutes or until firm. Store in a sealed container.

I love this recipe because there's very little cooking and kids can help make them. There are some major decisions to make before starting though-regular rice cereal or chocolate rice cereal, plus the really big decision - creamy or crunchy peanut butter. Marriages have nearly broken up over this one so choose wisely and consult the whole family before proceeding. - Place the cereal in a bowl. In a saucepan combine the brown sugar and corn syrup and bring to a boil. Boil for 1 minute then turn off the heat. - HEAT oven to 375 degrees F. Coat cookie sheets with no-stick cooking spray.
- BEAT shortening, brown sugar, granulated sugar, peanut butter, eggs and vanilla in large bowl on medium speed of electric mixer until well blended. Combine oats, flour, baking soda, baking powder and salt in small bowl. Gradually mix into shortening mixture at low speed just until blended. Cover and chill 30 minutes.
- STIR in chocolate chips and candy bars. Drop by heaping teaspoonfuls 2 inches apart onto prepared cookie sheets. Bake 8 minutes or until lightly browned. Cool 2 minutes. Remove to wire racks to cool completely.

- Reserve 1/3 cup chopped pretzels. In a large microwave-safe bowl, microwave 6 tablespoons butter on high for 45-60 seconds or until melted. - Put the oatcakes into a mixing bowl and crumble into small pieces. Stir in the goji berries, nuts, seeds and spices.

A delicious and easy-to-make treat for Easter or any time of year. I was surprised at how quickly these came together. Use tinted coconut for "nests" for your eggs if desired. Do not use a lowfat or generic brand of peanut butter for this recipe. I recommend Jif's Extra Crunchy. I also recommend you use a very good quality chocolate chip.

- In a large saucepan, combine brown sugar, corn syrup and crunchy peanut butter.
- Cook and stir over medium heat until smooth. Remove from heat, stir in the cereals.
- Drop by a tablespoon onto a cookie sheet lined with aluminum foil that has been lightly sprayed with PAM or other non-stick spray. When cool enough to handle, spray your hands with PAM and shape each dropful into egg shape.
- Refrigerate until firm.
- Melt the chocolate chips and shortening in the microwave or in a double boiler, whichever you prefer. Stir until smooth and completely melted.
- Dip eggs in chocolate, turning to coat, and allowing excess to drip off.
- Place on cookie sheet and decorate with candy sprinkles. Let stand until set.
- Place in a decorative arrangement onto tinted coconut on a tray.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together the margarine, peanut butter and sugar until smooth. Beat in the egg. Combine the flour, baking powder and salt; stir into the peanut butter mixture. Crush the cereal squares and stir into the dough until well blended. Roll tablespoons of dough into balls and place them 2 inches apart onto the prepared cookie sheets. Flatten slightly using a fork and making a criss cross pattern. Dip the fork in sugar to prevent sticking.
- Bake for 8 to 10 minutes in the preheated oven, or until the bottoms are lightly browned. Let stand on the cookie sheet for 1 minute before removing to wire racks to cool completely.
