1 tablespoon oil from oil-packed sun-dried tomatoes
3 garlic cloves, thinly sliced
1/2 cup dry white wine
1/3 cup whipping cream
1/4 cup drained oil-packed sun-dried tomatoes thinly sliced
3 tablespoons thinly sliced fresh basil

Steps:

  • Sprinkle chicken with salt and pepper. Heat oil in a heavy medium skillet over medium-high heat. Add chicken to skillet and sauté until golden, about 4 minutes preside. Add garlic and stir for 30 seconds. Add wine, cream, and tomatoes, and bring to a boil.
  • Reduce heat to medium-low, cover skillet, and simmer until chicken is just cooked through about 3 minutes. Transfer chicken to plates. Add basil to sauce in skillet. Increase heat and boil until sauce thickens enough to coat spoon, about 2 minutes. Season sauce to taste with salt and pepper; spoon over chicken and serve.

1 large yellow onion, diced

1 cup chicken broth

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat. Season chicken breasts with salt and pepper and add to hot oil. Cook for 4 minutes, then flip and cook until browned, about 4 minutes more. Remove chicken to a plate.
  • Add onion, garlic, and thyme leaves to the skillet. Cook, stirring frequently, for 3 minutes. Stir in flour; mix until combined. Add broth and sun-dried tomatoes. Return chicken to the skillet and bring mixture to a boil. Reduce heat, cover, and simmer until no longer pink in the center and the juices run clear, 15 to 18 minutes. Steps:

  • Season chicken thighs with salt and pepper.

1 (10 3/4 ounce) can cream of chicken soup
1 (6 ounce) jar sun-dried tomatoes packed in oil (5-6 chopped tomatoes)
2 large chicken breasts
1/2 cup milk
1/2 cup swiss cheese (about three slices)
1/2-3/4 cup seasoned bread crumbs
1 teaspoon hot pepper flakes (to taste)
1/4 cup grated romano cheese
1/4-1/2 cup mozzarella cheese

Steps:

  • defrost chicken breasts and cut in half making four equal pieces. I used large chicken breasts for this.
  • Next use meat tenderizer and pound to desired thickness.
  • Mix breadcrumbs,Romano cheese, Mozzarella cheese, diced sun dried tomatoes, and enough oil or melted butter to moisten mixture. I used both oil and butter for this.
  • Coat chicken in breadcrumb mixture and put in a 9X13inch baking dish.
  • Heat in medium saucepan over medium heat until throughly combined and warmed through 1/2 cup of milk, cream of chicken soup, swiss cheese, red hot pepper flakes.
  • Pour over chicken and bake in 350 degree oven for 40-45 minutes.

A simple light casserole with cannellini beans, basil and green chilli served with gluten-free Parmesan cornmeal

2 tbsp olive oil
3 banana shallots , finely sliced
4 chicken legs
300ml gluten-free chicken stock
2 large garlic cloves , peeled but left whole
a few lemon thyme sprigs
400g cherry tomato
3 plum tomatoes , quartered
400g can cannellini bean , drained and rinsed
1 green chilli , finely sliced
175g quick-cook fine polenta
85g finely grated parmesan
knob of butter
small bunch basil , leaves picked and torn, to serve

Steps:

  • Heat oven to 190C/170C fan/gas 5. Heat 1 tbsp of the oil in a shallow flameproof casserole dish over a medium heat. Throw in the shallots and soften, then remove and set aside. Season the chicken, turn up the heat and add to the pan with the remaining oil, browning all over. Return the shallots to the dish, pour over the stock and add the garlic, thyme, tomatoes, beans and chilli. Bring to the boil, cover and put in the oven for 30 mins or until the chicken is cooked through. Remove the lid and cook for 10 mins more to reduce the sauce.
  • Meanwhile, pour the polenta into 700ml boiling water while whisking. Cook for 2 mins (or according to pack instructions). Season generously, remove from the heat and stir through the Parmesan and butter. Serve the polenta with the chicken on top, scattered with basil.

Chicken and Sun-Dried Tomatoes in 'Cream' Sauce image

1/2 cup sun-dried tomato halves
4 skinless, boneless chicken breasts, about 1 1/2 pounds
1 large clove garlic, minced
1 tablespoon olive oil
1 cup dry white wine
1 tablespoon fresh marjoram leaves
1 1/4 cups low-fat ricotta cheese, at room temperature
1 1/4 cups nonfat yogurt, at room temperature

Steps:

  • Pour boiling water on tomatoes and soak for 2 minutes.
  • Grill or saute chicken breasts until done. Set aside and keep warm.
  • Drain liquid from tomatoes. Saute garlic in oil in same pan in which chicken was cooked, for 30 seconds. Stir in tomatoes, wine and marjoram and cook over high heat until liquid is reduced to about 1/3 cup.
  • In food processor or blender, beat ricotta and yogurt until smooth.
  • Remove tomato mixture from heat. Stir in ricotta mixture.
  • Cut chicken into strips and stir into sauce.
