This is cheap eating at it's best. Really good for scraping by at the end of the month if your cash gets low. Goes best with freshly baked corn muffins drizzled with honey.

1 lb dried great northern beans (mixed if desired) or 1 lb other dried beans (mixed if desired)
3 garlic cloves, peeled and sliced
1 large sweet onion, chopped coarsely
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon chopped parsley
1/4 teaspoon ground cloves
1 lb smoked ham or 1 lb ham hock
6 cups water or 6 cups broth

Steps:

  • Sort beans and soak in enough water to cover overnight.
  • Or you may sort them and place in a saucepan with 2-inches of water to cover.
  • Bring them to a boil, boil for 3 minutes, then cover and remove from heat.
  • Allow to sit for one hour after boiling (don't lift the lid).
  • Whichever method you use, rinse and drain the beans before placing them in the crock pot.
  • Put the rinsed beans, garlic, onion, salt, pepper, parsley, cloves, ham (chopped into large chunks) or ham hocks into the crock pot along with 6 cups water or broth.
  • Cover crock, and cook on low for about 8 hours, or until beans are tender and creamy.
  • Skim any excess fat, if necessary, before serving.

I used to spend all day cooking a pot of beans and watching them carefully so they didn't burn. The crock pot solves that problem. Serve a big bowl of these with big piece of cornbread...That's good eating.

1 lb dried pinto bean, sorted and washed
5 cups water
1 large onion, chopped
4 -8 ounces cooked ham, chopped
3 garlic cloves, minced
2 jalapeno peppers, seeded and chopped
1 tablespoon chili powder
1 teaspoon pepper
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano
salt, to taste

Steps:

  • Cover beans with water and soak overnight; drain.
  • Place beans in a 6 quart crock pot with water and remaining ingredients except salt. Cook on low setting for 8-10 hours, or until beans are soft and done. Stir a couple of times during cooking, if possible. Add salt after beans are done. Cooking salt in the beans will make them tough.
  • Note: The jalapenos will give your beans a bit of heat. You can control how hot you want them by the amount of pepper you add. If you want no heat, replace the jalapeno with 2 tablespoons of chopped green bell pepper.

This is how I have been making my ham and beans for years. . .I think you either love these or hate these!!! Total comfort food for me, as I make them very similar to my dad's recipe which I had growing up. Perfect served with corn bread on a cool fall or winter day. I add 3 T of Andrea's Sauce (a savory steak marinade with flavors of worchester, garlic, and onion), but Recipezaar does not recognize it. This freezes well, so don't be afraid to serve it once and freeze the leftovers for later!

1 lb great northern bean
1/2 onion, chopped
2 stalks celery, chopped
1 cup shredded carrot
8 garlic cloves
1 cup cubed ham
1 bay leaf
7 cups water
4 teaspoons chicken bouillon
1 ham bone

Steps:

  • Rinse and sort thru beans (has anyone ever really found a rock in these?). Cover with water and let sit overnight.
  • In the morning, drain water, rinse again and place beans in the crockpot. Dump in all of the other ingredients (except ham bone) and give it a few good stirs.
  • Put the ham bone in the crockpot, cover and cook on high for 6-8 hours.
  • Remove the bay leaf, ham bone and fish out any bones that may have fallen off during cooking. Stir the beans a few times. Remove 1 cup of the beans and place in a bowl, mash them with a potato masher or back of a spoon, then return to the beans and stir; this helps thicken it up a bit.
  • Take off any meat left on the ham bone, chop and return it to the crockpot.
  • Stir again and serve!

2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
2 teaspoons red pepper flakes
1 tablespoon hot paprika
1 4-to-5-pound bone-in picnic ham
1 pound dried butter beans or lima beans
1 bay leaf
4 sprigs thyme
1 28-ounce can whole fire-roasted tomatoes
1 bunch scallions, chopped
4 cloves garlic, minced

Steps:

  • Combine the tomato paste, Worcestershire sauce, red pepper flakes and paprika in a 5-to-6-quart slow cooker. Add the ham, beans, bay leaf and thyme. Pour in 4 cups water; cover and cook on low, undisturbed, 8 hours.
  • Pour the tomatoes into a bowl and crush them with your hands. Add the tomatoes and their juices, the scallions and garlic to the slow cooker. Cover and cook 30 more minutes.
  • Remove the ham from the slow cooker and transfer to a cutting board to cool slightly before slicing. Set aside about one-third of the ham and 3 cups of the stewed bean mixture to make Ham Jambalaya. Serve the remaining ham with the bean mixture.
  • Turn leftovers into Ham Jambalaya

This recipe is for those whom have a difficult time making Ham and Beans, Dedicated to one of JAP'S own Diane. These are so very Easy. On a Budget as Many are today, Ham and Beans with Rice, or Cornbread, or a cold slaw, and you have a full course meal.

SOAK OVER NIGHT .. . OR . . BRING TO BOIL,
1 lb - dry pinto beans or any bean of your choice, navy or great northern, or lima beans
PLACE IN CROCK POT;
5 cups - water
1 Lge - onion, chopped
3 - good sized ham hocks or 8 oz chunks of ham
1 tsp - liquid smoke flavoring (optional)
1 tsp ea. - salt and pepper to taste
- 3/4 c diced carrots & celery (optional)

Steps:

  • Sort and go thru beans for any dirt or rocks that sometimes is in a bag of Beans. Rinse Dry Beans, to remove any dirt. Soak over Night, then Drain. OR if in a hurry, Bring to Boil boil 10 min. Turn Heat Off. Let set 20 min. then Drain.
  • Add the beans into your Crock-pot. add: water, onion, ham or Ham Hocks,Liquid Smoke, Salt and Pepper to taste.
  • Cook on high about 3 -4 hrs, turn down to Low for additional time till beans are tender and meat falls off the bone. Check every 3 hrs for any needed water, if needed add; HOT water, 1 cup at a time.
  • Optional Flavors You can add one of the following 1)Bacon in place of Ham. 2)3 cloves of Minced garlic, 2 Jalapino peppers seeded and chopped, with 1 Tbs Chili powder & 1/2 tsp cumin, . . this is similar to Chili beans. 3) Celery 4) you can replace the Jalapeno for 2 Tbs of Chopped Bell Peppers. 5) Refried Beans, Remove the meat, Mash beans with a Potato Masher, till smooth. Note: "you can control the Heat" as to "how hot" you want your beans with the Jalapenos by the amount of Jalapenos you add. These are Just samples of a few things you can do with your Beans. Serve over Rice, or with Buttered Hot Cornbred, or Cornbread Muffins drizzled with Honey, and you have a full budget meal. BEAN SOUP: Follow above recipe, add Celery, and if Too thick add more Water for the Consistency of soup, and bring to a boil, Taste Test season and enjoy.

I came up with this recipe when I had an abundance of fresh green beans. After canning 30 quarts, I knew I needed to find something else to do with all those beans! It's easy to prepare and one of my family's "comfort food" favorites. NOTE: not every crockpot cooks the same. My Rival crock pot is 20 years old and on the "high" setting food actually comes to a low boil. If your crock pot does not get that hot, then you will need to adjust for a longer cooking time.

1 smoked ham hock, cut up

1 medium onion, chopped
2 cups Swanson chicken broth
1/2 teaspoon salt

  • Place cut up ham hock in crock pot.
  • Rinse beans and snap into halves or thirds.
  • Place beans over ham.
  • Place chopped onion and minced garlic over bean/ham mixture.
  • Sprinkle with salt and pepper.
  • Pour chicken broth over all.
  • Cover and cook on high 4 hours.

Many variations to Ham Bone (or Hocks) and beans but this is pretty much how I remember it from my childhood. I find by not soaking the beans they have better texture and flavor.I use Great Northern Beans as my favorite choice of bean for this recipe. I have used 15 bean mix with good results just omit the ham flavor packet.

1 meaty ham bone or 4 -6 ham hocks
1 large yellow onion, chopped
2 stalks celery, minced
1 carrot, shredded (optional)
2 bay leaves
1 tablespoon minced garlic
1 lb great northern bean, rinsed and picked over
6 -8 cups low sodium chicken broth
1/2 teaspoon pepper (or to taste)

Steps:

  • Add onion and celery to crock pot.
  • Place ham bone or hocks on top of onion and celery.
  • Pour rinsed beans around ham and sprinkle with pepper.
  • Add bay leaves and garlic.
  • Add chicken stock and stir to combine all ingredients cover and cook on low for 8 hours.
  • When ham is tender (6-7 hours) Remove meat from bones (discarding fat and bones) and return meat to the pot. Stir to combine and break up ham pieces.
  • To thicken smash some of the beans on the side of crock pot.
  • When done skim any fat off and discard bay leaves.
