- Bring pot of water to rolling boil. Season with salt. Add pasta and cook boiling until pasta is al-dente (about 10-12 minutes) For best results, check pasta package for al-dente cooking time.
- Heat oil in a large heavy bottom skillet to medium-high heat. Add garlic and chili flakes. Cook stirring often for 20-30 seconds or until garlic is fragrant. Don't let garlic burn. Add diced chicken. Sprinkle generous pinch of salt on chicken before stirring. Stir cook chicken for 2-3 minutes or until chicken is no longer pink and develops some color. Transfer chicken to a plate.
- In, now empty, same pan on medium heat, add basil pesto. You don't need more oil since pesto has oil in it. Cook pesto for 30 seconds to 1 minute or until it is fragrant. Add cream half and half, water (or stock if using). Bring to boil then lower heat to medium. Mix in half of the parmesan cheese. Add chicken back into the sauce with cherry tomatoes and zucchini. Cook for 3-5 minutes or until Pesto Sauce thickens and chicken is fully cooked. Once sauce thickens, mix in lemon juice and salt. Taste and adjust salt and black pepper.
- Add cooked and drained pasta to chicken with pesto. Sprinkle remaining parmesan cheese on the top of pasta. Now, coat the pasta in the sauce. Add 2-3 tbsp of the chopped fresh herb of your choice. Serve Chicken Pesto Pasta while still hot. Enjoy.

- Bring a large pot of salted water to a boil. Cook pasta for 8-10 minutes, or until al dente, drain and rinse with cold water. Set aside.
- In a large skillet, heat oil over medium heat. Add decased sausage to skillet and crumble with a wooden spoon as it cooks. Add red pepper flakes and continue sauteing until sausage is no longer pink. Add onion and garlic to skillet and continue until onion softens. - Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente. Drain, and set aside.
- Heat 2 tablespoons vegetable oil in a skillet over medium-high heat. Cook and stir chicken cubes, reducing heat if necessary, until no longer pink in center and juices run clear. Set aside.
- In a medium saucepan, bring 2 cups cream to a simmer, stirring often. Whisk in bouillon and cheese until well blended and bouillon has dissolved completely. Dissolve cornstarch in 2 tablespoons water, and whisk into mixture. Cook and stir 2 minutes more, then remove from heat and set aside.
- Melt butter in a medium skillet over medium high heat. Stir in prosciutto, garlic, and mushrooms and cook until mushrooms are tender, about 3 minutes. Add chicken, reduce heat, and continue cooking until chicken is heated through. Return sauce to the stove and add remaining 1/4 cup cream and parsley flakes. Heat through.
- To serve, place pasta in a large mixing or serving bowl. Add chicken and mushroom mixture and pour in cream sauce. Toss well, and serve.

- Bring a large pot of water to a boil. Cook the pasta according to the package directions. Drain and set aside.
- Slice the chicken into thin strips and season with salt and pepper. Heat the butter and oil in a large skillet over medium-high heat. Add the chicken strips and cook until deep golden brown on both sides and done in the middle. Remove the chicken from the skillet and add the minced garlic. - Heat 1 tablespoon of olive oil in a large skillet on medium heat. Add shallot, sauté about 5 minutes until softened, then add garlic, sauté another minute. Stir in the mushrooms, cook about 3-4 minutes until they begin to soften.
- Stir in the cooking wine along with the thyme and oregano. cook a couple of minutes so the mushrooms absorb the wine.
- Push the mushroom mixture to the sides of the pan, put another tablespoon olive oil into the center of the pan and heat. Cook the chicken on 1 side until that side turns white, about 2-3 minutes, then flip to begin cooking the other side.
- Start cooking the pasta according to package instructions around the time you add the chicken to the skillet.
- When the outside of the chicken pieces are white and beginning to brown, stir up the pan to combine the chicken with mushrooms. Cook a couple minutes more until the chicken is nearly cooked through, then stir in the cream and simmer to finish cooking the chicken. The chicken will need about 10-12 minutes total cooking time-but cut a piece open to see that it is cooked through.
- Drain the pasta when it has cooked to your liking. Toss with the chicken and mushroom mixture and the grated cheese. Add salt and pepper to taste. Serve and enjoy!

CREAMY FARFALLE WITH PEAS AND BACON

- Bring a medium pot of salted water to a boil. Add farfalle and cook according to package instructions until done then drain and set aside.
- Meanwhile, in a large skillet, over high heat, saute bacon until browned (3-4 minutes). Remove from heat and use a paper towel to soak up most of the fat.
- Place skillet with bacon back over high heat. Add garlic and saute about 1 minute.
- Add heavy cream to skillet and simmer for about 5 minutes. Add the peas to the skillet and return to a simmer. Cook about 3 more minutes.
- Add parmesan cheese into sauce.
