BOURBON BARBECUE PORK RIBS



Bourbon Barbecue Pork Ribs image

4 to 5 pounds pork ribs
Salt and pepper
No-Cook Low Carb Bourbon Barbecue Sauce, recipe follows
29 ounces no sugar added tomato sauce
6 ounces no sugar added tomato paste
2 ounces bourbon
2 tablespoons white vinegar
2 tablespoons liquid smoke
1 tablespoon Worcestershire sauce
1/2 tablespoon hot sauce
3/4 cup sugar substitute (recommended: Splenda)
1/4 cup brown sugar substitute, optional (recommended: Sugar Twin brand)
2 tablespoons red onion, finely chopped
1 small clove garlic, minced
1/4 teaspoon garlic powder
1 tablespoon kosher salt
1 teaspoon black pepper
1 teaspoon onion powder

Steps:

  • Preheat oven to 290 degrees F.
  • Season the ribs liberally with salt and pepper on both sides and place in a proportionate size deep roasting pan. Add 1 cup barbecue sauce and 2 cups water over the ribs until almost completely submerged; if not add a bit more sauce and water or use a smaller pan. Cover tightly with aluminum foil, place on center rack of the oven, and bake for about 2 hours or until meat is almost falling off the bone. Remove, drain liquid immediately, and coat cooked ribs with fresh barbecue sauce. It is best to make the ribs a day ahead up to this point. Refrigerate overnight and bring to room temperature before grilling.
  • Preheat a grill to high. Place ribs on grill and grill for just a few minutes on each side. Serve.
  • Combine sauce ingredients in a bowl and whisk well to combine. Reserve.

1/2 cup packed brown sugar
1/2 cup Bourbon
1/3 cup soy sauce
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon fresh coarse ground black pepper
1/4 teaspoon hot pepper sauce
1 cup water
2 flank steaks, well trimmed (about 1 1/2 pounds each) or 2 beef top round steak, about 1 1/2 inches thick (about 1 1/2 pounds each)

Steps:

  • Prepare marinade; In large plastic bag, Mix 1 cup water with all the ingredients except steaks.
  • Add steaks, turning to coat, seal bag, pressing out excess air.
  • Place bag in shallow glass baking dish and refrigerate at least 4 hours or over night, turning bag occasionally.
  • Remove steaks from marinade.
  • Discard marinade.
  • Put steaks on grill over medium heat and cook 15 to 20 minutes for medium-rare or until desired doneness, turning once.
  • (Or preheat broiler and place steaks on rack in broiling pan. Broil steaks at closet position to source of heat for 15 to 20 minutes for medium-rare) If using top round grill or broil for 25 to 30 minutes.

30 grinds fresh black pepper
6 ounces Dubliner cheese (Kerrygold brand), thinly sliced and divided into 6 (1-ounce) servings
1 tablespoon olive oil
1 tablespoon unsalted butter (European style)
1 large Vidalia onion, halved (through the core) and thinly sliced (1/4-inch)
1/4 teaspoon table salt
8 grinds fresh black pepper
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 cup bourbon (recommended: Bulleit brand)
Brioche hamburger-sized buns, halved
3 tablespoons unsalted butter (European style), at room temperature

Steps:

  • Combine well-chilled ground chuck with bourbon and Worcestershire sauce and mix lightly with a fork to combine. Add oregano, cumin, salt, and pepper and mix lightly with a fork to combine. Combine more thoroughly with hands, being careful not to over mix. Separate meat mixture into 6 even portions and form into patties. Set patties on a board.
  • Heat nonstick grill pan over medium-high heat.
  • Heat olive oil and butter in nonstick skillet over medium heat for 1 minute. Add onion slices to skillet and toss in the oil and butter. Add salt, pepper, oregano, and cumin and toss. Continue to saute onions, but start cooking burgers.
  • Place patties on grill pan and cook for 2 1/2 minutes on 1 side. Flip patties and place cheese on top of each. Cook for 1 minute and then tent foil over patties and cook for 1 1/2 minutes. Remove patties from grill and place on a clean board. Replace foil tent over patties and let rest for 5 minutes. Turn heat under grill pan down to low and give pan a quick wipe with a damp paper towel (held in tongs).
  • Once onions start to turn slightly golden, pour bourbon into skillet, off the burner. Once alcohol cooks off, turn heat under skillet down to low, and let onions absorb liquid.
  • Place bun halves on grill pan and toast until lightly golden, 1 to 2 minutes. Remove from grill pan and butter with 1/2 tablespoon of butter per bun. Place 1 patty on each bun bottom, top with approximately 1/4 cup onions, and bun top.
  • Serve and enjoy!

1 teaspoon Bourbon (I use more)

1 clove garlic, minced
3 teaspoons butter, divided

Steps:

  • Season both sides of the steaks generously with salt and pepper. Be especially generous with the pepper.
  • Melt duck fat in a steel pan over medium-high heat. Add steaks; cook until firm and reddish-pink in the center for medium-rare, about 5 minutes per side. Sear the edges until browned, about 30 seconds each. Transfer steaks to a plate; let rest while you make the sauce. Turn off the heat.
  • Stir garlic into the same pan using a spoon. Add 1 teaspoon butter; let melt. Pour in bourbon. Heat until reduced to a sticky glaze, about 15 seconds. Add chicken stock. Bring to a boil over high heat while scraping up the browned bits at the bottom to deglaze. Cook until reduced by half, about 2 minutes. Add heavy cream; season with salt and cayenne pepper. Boil until thickened, 2 to 3 minutes.
  • Turn off heat and add remaining 2 teaspoons butter; swirl until melted, about 30 seconds more. Spoon sauce warm onto serving plates. Place steaks on top.

1/4 cup maple syrup
1/4 cup sorghum molasses (recommended: Kentucky)
2 tablespoons bourbon
2 tablespoons sweet chili sauce (such as Heinz)
1 1/2 teaspoons Asian garlic chili paste
One 8-bone crown roast of pork, 5 to 7 pounds, with 1/4-inch fat and bones "Frenched"*
Country Ham Jus, recipe follows
Pawpaw Relish, recipe follows
8 ounces country ham bones or smoked pork bones (recommended: Kentucky brand)
4 cups water
1 small onion, chopped
1 rib celery, chopped
1 small carrot, chopped
1/2 teaspoon dried thyme
1 bay leaf
1 tablespoon whole peppercorns
2 cups demi-glace or very rich veal stock
1 green tomato, diced
1 mango, diced
1/2 red bell pepper, diced
1/2 red onion, diced
1 lime, juiced
2 tablespoons honey
1/4 bunch cilantro leaves, chopped
1/2 teaspoon ground cumin
Salt and pepper
1/4 cup pawpaw puree**

Steps:

  • To marinate the pork roast, combine maple syrup, molasses, bourbon, chili sauce, and chili paste in a shallow dish and mix well. Brush the roast all over with the marinade and refrigerate it 8 hours or longer.
  • Preheat 1 side of a grill to high heat.
  • To cook, sear the roast all over on a hot grill. Once it browns, move the meat to a cooler spot. Lower the heat and continue to cook, covered, at a lower temperature, until it is done, about 11/2 to 2 hours, depending on its size -- the meat should register 150 to 155 degrees F in its thickest part.
  • To serve, reheat the Country Ham Jus and divide it among serving plates. Place pork on plates and add a generous spoonful of Pawpaw Relish.
  • For the country ham jus, combine the ham bones, 4 cups water, onion, celery, carrot, thyme, bay leaf, and pepper in a large stockpot. Simmer, uncovered, for 3 hours, or until liquid is reduced to 1 cup. Strain out the solids. Combine with demi-glace in pot and cook until reduced to 1 1/2 cups. Add salt, to taste. Refrigerate.
  • Mix all the ingredients together.

1/4 cup Brown Sugar (or Coconut Sugar)
1/2 cup Soy Sauce
1/2 cup Pineapple juice
2 teaspoons Bourbon
1/2 teaspoon Pepper
1/4 teaspoon Garlic Powder
1/4 cup Canola Oil (preferably expeller pressed)

Steps:

  • Add all of the ingredients, except for the salmon, to a container or plastic bag that seals.
  • Seal the bag and gently massage to combine ingredients or gently stir with a spoon.
  • Lift the salmon fillets into the bag with the marinade. Seal tightly, removing excess air, and gently turn to coat.
  • Allow the salmon to marinate about 30 minutes. Turn fish in bag as necessary to ensure that marinade is distributed evenly over fish.
  • Remove fish from bag and discard marinade.
  • Preheat oven to 375 degrees F and bake skin side down for approx. 10-15 minutes (10 minutes per inch of thickness.) Fish is done when flesh is opaque and separates easily with fork. Alternatively, grill salmon over medium-high heat.

1 tablespoon ground ginger
1/2 cup Worcestershire sauce
1/2 cup brown sugar
1/2 cup Jack Daniels Whiskey
1/2 teaspoon garlic powder
4 chicken breasts or 4 pork chops

Steps:

  • Mix all the ingredients, except the meat, in a bowl.
  • Place the meat in a shallow baking dish or tupperware container.
  • Add what ever meat you are using to the marinate, cover and refrigerate overnight.
  • Make sure that all the meat is soaking in the marinate.
  • Preheat oven to 325 degrees.
  • Bring the contents of the dish to room temperature before cooking.
  • Bake for 1 hour if using chicken.
  • Bake for 1 1/2 hours if using pork chips.
  • Turn meat over half way thru the cooking time.
  • Remove the meat from the baking dish and keep warm.
  • Strain the marinate into a bowl.
  • In a sauce pan simmer over a medium flame to reduce it by half.
  • Once reduced, remove from the heat and stir in 1 tablespoon of butter to make the sauce creamy.
  • Serve with the meat.
