4 slices bacon, chopped
2 pounds baby bok choy
1 teaspoon olive oil
½ small red onion, chopped
1 teaspoon red pepper flakes
1 teaspoon minced garlic
salt to taste

Steps:

  • Fry bacon in a large skillet over medium heat until crispy. Remove bacon and drain the fat, reserving one tablespoon of the grease in the skillet. Add the olive oil, onion, red pepper flakes and garlic. Cook and stir over medium heat until the onions are starting to be tender.
  • Add the bok choy, and place a lid on the pan. Let cook for 3 to 5 minutes. Remove the lid; cook and stir until the bok choy is tender but still crunchy, about 2 minutes. Stir in the bacon, and season with salt. Serve piping hot!

3 baby bok choy (4 oz each, rinsed and dried, halved lengthwise )
2 tablespoons avocado oil
1 tablespoon minced garlic
2 tablespoons reduced-sodium soy sauce (or use a gluten-free alternative)
1 tablespoon rice vinegar
1 tablespoon sesame oil
1/4 teaspoon red pepper flakes

Steps:

  • Heat the oil in a large 12-inch lidded skillet over medium-high heat. Add the garlic and cook, stirring, for 30 seconds.
  • Add the bok choy in a single layer, cut side down. Drizzle it with soy sauce and rice vinegar.
  • Cover the pan and cook until the bok choy's core is fork-tender, 3-5 minutes. If the bottom of the pan becomes too dry, add a tablespoon or two of water.
  • Remove the pan from the heat. Arrange the bok choy on a serving plate. Drizzle the pan juices on top, then drizzle it with the sesame oil and sprinkle with red pepper flakes. Serve immediately.

1 teaspoon Sriracha, sambal oelek or other Asian chile sauce
1 teaspoon sugar
1/4 cup vegetable oil
6 ounces Canadian bacon, cut into 1/2-inch pieces
10 ounces shiitake mushrooms, stemmed and sliced
Kosher salt
1 red bell pepper, chopped
1 red onion, chopped
2 cloves garlic, minced
6 heads baby bok choy, trimmed and chopped
4 cups cooked brown rice, for serving

Steps:

  • Combine the soy sauce, Sriracha and sugar in a bowl; set aside. Meanwhile, heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the Canadian bacon; cook, stirring, until crisp and browned around the edges, about 4 minutes. Transfer to a bowl.
  • Add 1 more tablespoon vegetable oil to the skillet, then add the mushrooms and 1/4 teaspoon salt. Cook, stirring occasionally, until the mushrooms start browning, 4 minutes. Add the remaining 2 tablespoons vegetable oil, the bell pepper and red onion and cook, stirring occasionally, until the pepper is crisp-tender, about 3 minutes.
  • Add the garlic, bok choy and 1/4 teaspoon salt and cook, stirring, until the bok choy is just wilted, about 2 minutes. Return the Canadian bacon to the skillet, add the soy sauce mixture and stir to combine. Serve over brown rice.

1 lb Chinese cabbage or 1 lb bok choy
5 tablespoons vegetable oil
2 teaspoons salt
1 teaspoon sugar
1 cup stock
1 tablespoon cornstarch
1 1/2 tablespoons water
1/4 cup milk
ground pepper

Steps:

  • Separate the leaves and cut each in half length-wise, then cross-wise.
  • Heat 4 T of the oil in a wok until hot.
  • Add cabbage and fry for 3 minutes.
  • Add salt & Sugar and mix well.
  • Remove from pan when tender.
  • Heat 1 T oil in the wok.
  • Add stock and bring to a boil.
  • Put cornstarch in water, mix well
  • Add cornstarch mix & milk to stock, stirring well about 1 minute until thick.
  • Pour 1/2 the stock mix into a container.
  • Add cabbage to sauce left in the pan and mix and heat thoroughly.
  • Put on serving plate and top with remaining sauce. Grind pepper on top.

2 teaspoons salt
2 ½ ounces butter
3 slices bacon, cut into thin strips
1 clove garlic, minced
2 cups water
1 pinch dried basil
8 ounces dry fettuccine pasta
2 tablespoons milk, or more to taste
freshly ground black pepper to taste
2 tablespoons milk

Steps:

  • Combine bok choy and salt in a bowl and rub leaves with salt.
  • Melt 1 1/2 ounces butter in a pot over medium heat. Add bacon and garlic and cook until garlic has softened and bacon is crisp, about 3 minutes. Add bok choy, cover pot, and cook until leaves have softened, about 3 minutes. Add water, cover, and simmer for 20 minutes. Season with basil and remaining butter.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain and keep warm.
  • Drain half the liquid from the pot with the bok choy and transfer remaining contents to a skillet over medium-high heat. Season with pepper and add milk. Mix in cooked fettuccine. Cook and stir for 1 minute.
