- In a large skillet over medium-high heat, heat the butter and oil. When hot, add the green beans in one layer. When the beans are just beginning to color, stir them around and add the Worcestershire, sriracha and lemon juice. Cook until the beans are crisp-tender, a few more minutes. Transfer them to a plate, crumble over the blue cheese and serve.

- Heat oven to 400°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cook green beans as directed on bag; set aside.
- Meanwhile, in 3-quart saucepan, melt 1/4 cup of the butter over medium-high heat. Cook onion in butter 4 minutes, stirring occasionally, until tender. Reduce heat to medium. Sprinkle onion with flour; cook 3 minutes longer, stirring constantly. Stir in broth. Heat to boiling. Remove from heat. Stir in black pepper, salt, red pepper and sour cream with wire whisk until blended. Stir in green beans. Spoon mixture into baking dish.
- In medium microwavable bowl, microwave remaining 1/4 cup butter uncovered on High until melted. Add bread crumbs and cheese; mix until blended. Sprinkle evenly over green bean mixture.
- Bake uncovered 20 to 23 minutes or until bubbly and topping is golden brown.

- Pre cook beans in lightly salted water about 5 to 6 minutes.
- While beans are cooking, mix bread crumbs and butter.
- Drain beans in bowl lined with paper towels to absorb moisture.
- Put about 1/3 of the crumb mixture in bottom of lightly sprayed casserole dish.
- Add green beans, crumbled bleu cheese and heavy cream.
- Add the rest of crumb mixture and season to taste with pepper.
- Bake at 350 for about 15 min.until bubbly.
- Let rest for about 5 minute before serving, as it will be extremely hot and could burn your mouth!

- Cook green beans in boiling water for 5-10 minutes or until cooked but still crispy. (Remember to put the beans in the pan only when water starts boiling hard.) Drain and rinse with very cold water to stop cooking process.
- Arrange beans neatly in the bottom of a greased casserole.
- Beat eggs well and add blue cheese, mushrooms and pepper. When well mixed fold in cream; do NOT beat.
- Pour egg mixture over beans. Mix bread crumbs with melted butter and sprinkle on casserole.

- Preheat the oven to 450 degrees F (230 degrees C). Generously grease a casserole dish with 1 tablespoon butter. Bring a generously salted pot of water to a rolling boil over high heat.
- Remove stems from beans by trimming with a knife or snapping them off with your fingers. Cut beans in half.
- Add beans to the boiling water, stir, and cook until just barely tender, 5 to 6 minutes, testing often to make sure you don't overcook them.
- Remove beans with a strainer and immediately place in a bowl of cold water to stop the cooking process.
- Once beans have cooled to the touch, use your hands to drain and transfer them into the prepared casserole. It's okay if they're still a bit wet.
- Season beans with pepper, kosher salt, and Dijon mustard; mix until beans are well coated. Pour in cream, scatter Comté cheese over top, and sprinkle with Parmigiano-Reggiano.
- Combine melted butter and bread crumbs in a small bowl. Stir until well combined and mixture resembles wet sand. Spoon and sprinkle bread crumbs over the casserole, then dust with cayenne.
- Bake in the center of the preheated oven until browned and bubbly, 15 to 20 minutes.
- Let cool for 10 minutes before serving.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with aluminum foil.
- Cut top 1/3 off garlic heads, exposing the cloves. Place garlic in the prepared baking dish cut side up. Pour olive oil over the garlic and season with salt. Fold up foil and seal to create a tight packet.
- Bake in the preheated oven until a paring knife inserts easily into the center of a garlic clove, about 1 hour; set aside to cool. Once cool, remove each garlic clove from the skin. Reserve remaining olive oil.
- Increase oven temperature to 400 degrees F (200 degrees C).
- Bring a large pot of salted water to a boil; add green beans and cook until bright green and nearly tender, 4 to 6 minutes. Drain beans and transfer to a large bowl of ice water to cool completely; drain well and set aside.
- Melt butter in a large skillet over medium heat. Add almonds; cook and stir until lightly browned, 3 to 4 minutes.

- Preheat oven to 375°F.
- Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onions, stirring occasionally, until they begin to brown, about 4 minutes. Reduce heat to moderate and cook onions, stirring occasionally, until golden brown, about 12 minutes.
- Peel potatoes and slice paper-thin crosswise (slightly less than 1/16 inch thick) with slicer. Combine potatoes and cream in a 2-quart heavy saucepan (potatoes on top may not be completely immersed) and bring to a boil. Remove from heat and cool to warm, about 30 minutes.

- Preheat the oven to 325 degrees F (165 degrees C). Grease a casserole dish.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes.
- Meanwhile, bring water to a simmer. Add green beans and cook until tender, 5 to 10 minutes. Drain beans, reserving cooking liquid. Drain bacon slices on paper towels, reserving grease in the skillet. Crumble bacon.

- 2. Add the onions and slowly cook until they caramelize, about 20-30 minutes.

PUREE OF GREEN BEANS AU GRATIN

- Tear off and discard tips of each green bean. If there are "strings" along the side, strip them off and discard them. Break beans in half or in quarters.
- Bring enough water to a boil to cover beans when they are added. Drop beans into the water and when water returns to the boil let cook 8 to 9 minutes until crisp tender. Drain thoroughly.
- Pour beans into container of a food processor or electric blender and blend until coarsely processed. There should be about two cups.
- Heat butter in a saucepan and add bean puree. Add cream, salt, pepper and nutmeg. Heat, stirring, until piping hot.
- Meanwhile, preheat broiler to high.
- Spoon green bean mixture into a shallow round or oval baking dish and cover evenly with cheese. Place under broiler and cook until cheese is thoroughly melted and nicely browned on top, 3 to 5 minutes.

- Preheat the oven to 375 degrees F (190 degrees C). Butter a 2 quart casserole dish, rub with one of the garlic cloves, and sprinkle with a little salt. Set aside.
- Heat the half-and-half in a small saucepan over medium heat. Add the thyme, bay leaf and both garlic cloves. Remove from the heat just before it boils.
- Place the leek, turnip, squash, mushrooms and carrots into a large saucepan and fill with about 1 inch of water. Bring to a boil, cover and steam over medium heat for about 5 minutes. Drain and layer vegetables into the prepared casserole dish. Sprinkle rosemary in between the layers. Season with salt and pepper and sprinkle blue cheese and Gruyere cheese over the top. Strain the half-and-half and pour into the casserole.
- Bake, uncovered, in the preheated oven until vegetables are tender and sauce is thick, about 40 minutes. Uncover for the last 20 minutes to allow the top to brown.
