1/4 pound (1 stick) unsalted butter at room temperature
8 ounces Stilton cheese, crumbled (about 12 ounces with rind), at room temperature
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 extra-large egg beaten with 1 tablespoon water for egg wash
1/2 cup roughly chopped walnuts

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and Stilton together for 1 minute, or until smooth. With the mixer on low speed, add the flour, salt and pepper and mix until it's in large crumbles, about 1 minute. Add 1 tablespoon of water and mix until combined.
  • Dump the dough onto a floured board, press it into a ball, and roll into a 12-inch long log. Brush the log completely with the egg wash. Spread the walnuts in a square on a cutting board and roll the log back and forth in the walnuts, pressing lightly, and distributing them evenly on the outside of the log. Wrap in plastic and refrigerate for at least 30 minutes or for up to 4 days.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Cut the log 3/8ths-inch thick with a small, sharp knife and place the crackers on a sheet pan lined with parchment paper. Bake for 22 minutes until very lightly browned. Rotate the pan once during baking. Cool and serve at room temperature.

  • Mix the butter, blue cheese, flour, and salt in a food processor, and process until smooth. Transfer to a bowl, and stir in the walnuts. Cover, and chill 5 minutes in the refrigerator.
  • Divide dough in half. Form each half into a log shape. Wrap in plastic wrap, and refrigerate 1 hour, until firm.
  • Preheat oven to 350 degrees F (175 degrees C). Slice the dough logs into 1/4 inch rounds, and arrange rounds on a baking sheet.

150g (1 cup) white flour (, plain / all purpose)
200ml (3/4 cup + 1 tbsp) warm water (, tap water (200g) (Note 1))
1/2 tsp salt (, cooking/kosher salt (1/4 tsp table salt))
1/2 tsp white sugar
1 tsp baking powder
1 tsp yeast (, instant/rapid rise OR dry active yeast (Note 2))
1 tbsp warm water ((just tap water))
2 tbsp unsalted butter (, melted (or vegetable oil))

Steps:

  • Place flour, water and salt in a bowl and whisk for 2 minutes (electric beater 1 minute on speed 5).
  • Yeast Mixture - Dissolve Yeast into 1 tbsp warm water in a small bowl.
  • Add Yeast Mixture, sugar and baking powder into bowl, then whisk for 30 seconds (or 15 sec speed 5).
  • Cover with cling wrap or plate, then place in a very warm place for 15 to 30 minutes until the surface gets nice and foamy. It will only increase in volume by ~10 - 15%.
  • Grease 2 or 3 rings with butter (approx 9 cm / 3.5" wide, though any ring or metal shaper will do, Note 3) (TIP: Non stick rings - brush with melted butter. Everything else - smear with butter)
  • Brush non stick skillet lightly with melted butter then place rings in the skillet.
  • Turn stove on medium high (medium for strong stoves) and bring to heat (Note 4 for "sizzle test").
  • Pour 1/4 cup batter into the rings (65ml), about 1cm / 2/5" deep (will rise ~60%).
  • Cook for 1 1/2 minutes - bubbles should start appearing on the surface (but not popping yet).
  • Turn heat down to medium, cook for 1 minute - some bubbles should pop around the edges.
  • Turn heat down to medium low, cook for a further 2 1/2 to 4 minutes, until the surface is "set" and it's clear there will be no more bubbles popping! (At this stage you can help the final bubbles pop with a skewer!)
  • Remove rings (you might need to run knife around to loosen).
  • Then flip and cook the other side for 20 to 30 seconds for a blush of colour.
  • Transfer to write rack (golden side down) and fully cool.
  • Can be eaten once cool, but it's even better the next day (Note 5).
  • Toast in a toaster until the base is crispy.
  • Slather generously with butter, then spread of choice (honey is perfection) and devour immediately!

1 cup flour
2/3 cup walnuts, ground
1 tablespoon sugar
1/4 teaspoon salt
1/2 teaspoon dry mustard
1/8 teaspoon cayenne pepper
3 ounces unsalted butter, cold cut into cubes
1 -2 tablespoon milk
2 tablespoons olive oil
1 large onion, finely diced
1/2 teaspoon salt
1 cup cranberries (fresh or frozen)
1 tablespoon sugar (optional, but I always use it)
1 1/3 cups almonds, toasted (chopped or sliced)
2 teaspoons fresh thyme, minced
2 eggs
1 cup heavy cream (no substitutes)
2 -3 ounces blue cheese, crumbled (I use the whole 4 oz package)

Steps:

  • CRUST: Pulse dry ingredients and butter in food processor until mixture resembles fine bread crumbs. Add milk; pulse until cough comes together. Turn mixture into a ball then press it into a 9" tart pan. Prick crust. Freeze half hour. Bake at 375 F for 15-20 minutes, until golden.
  • FILLING: Heat oil in heavy pan, add onion and salt and saute 10-15 minutes--be sure to stir constantly. Add cranberries and sugar; cook until berries pop. Stir in nuts and thyme; set aside.
  • Combine eggs and cream and whisk until smooth. Spoon walnut-berry mixture into tart shell; crumble blue cheese over top and pour egg mixture over it.
  • Bake at 350 F for 15-20 minutes, until golden.
  • Cool 15 minutes before serving.

2 large yellow onions, thinly sliced
1 tsp minced garlic
3 lb Yukon Gold potatoes, peeled and cut into 1" chunks
1 tsp salt
1/2 tsp freshly ground black pepper
1/8 tsp cayenne
1 bay leaf
4 cups chicken stock
1 cup light cream
1/2 cup heavy cream
1 cup crumbled Roquefort or other creamy blue cheese, divided
2 tsp chopped fresh thyme
2 Tbsp Tawny port
6 slices bacon, cooked or crumbled
Blue Cheese and Walnut Crumpets:
5 oz Roquefort or other creamy bleu cheese, crumbled
5 tsp unsalted butter
4 tsp Tawny Port
7 tsp chopped walnuts
1/8 tsp salt
8 Crumpets or English Muffins, split
16 walnut halves

Steps:

  • In a large saucepan, melt the butter over med-high heat. Add the onions and cook, stirring until just beginning to caramelize, about 10 minutes. Add the garlic and cook, stirring for about 30 seconds. Add the potatoes, salt, pepper, cayenne and bay leaf and cook, stirring for 3 minutes. Add the stock and bring to boil. Reduce heat to med-low and simmer, covered, until the potatoes are tender, about 25 to 30 minutes.
  • Remove and discard the bay leaf. Remove from heat and puree with a hand-held immersion blender or in batches in a food processor until smooth. Add the light and heavy cream and stir well to blend. Gently reheat and barely simmer being careful not to boil. Add 3/4 cup of the cheese, the thyme and port and whisk until the cheese is just melted. Adjust the seasoning to taste.
  • Ladle soup into bowls and top with some of the remaining 1/4 cup of cheese and the crumbled bacon. Serve immediately with the Blue Cheese and Walnut Crumpets.
  • Blue Cheese and Walnut Crumpets:
  • In a bowl, cream together the cheese and butter. Add the port, walnuts and salt and mix until creamy.
  • Lightly toast each crumpet or muffin half. Spread about 1 heaping tablespoon of the cheese mixture onto each of the 16 crumpet or muffin halves and top with half a walnut. Toast until just bubbling. Serve immediately with the Potato, Onion and Roquefort Soup.
