IHOP PANCAKE RECIPE
Steps:
- In a large bowl, combine the buttermilk, vegetable oil, and vanilla extract.
- Add the solid ingredients (sugar, baking powder, flour, baking soda, salt) into the mix. Whisk the batter gently. Don't get rid of the lumps!
- In another bowl, combine the lemon juice and egg. Then add it to the batter. Refrigerate the batter for 30 minutes to an hour.
- Heat a large skillet over medium heat and smear with butter. Pour 1/3 cup of batter into the skillet.
- Let it cook for two minutes or until you see bubbles forming on the surface. Flip the pancake over with a spatula. Let the other side cook for 1 to 2 minutes.
- Repeat steps 6-10 until you cook all the batter.
- Drizzle with maple syrup and choose your favorite toppings.

Steps:
- Whisk eggs in a bowl.
- Mash bananas in separate bowl.
- Combine all ingredients, to form the pancake batter.
- Brush a tablespoon of coconut oil onto a non-stick pan.
- Ladle about a third of a cup of batter into the pan.
- Cook until bubbles start to form on the surface of the batter.
- Flip to cook the other side.
- Top with slices of fresh banana and caramel sauce.
- Melt coconut oil in a saucepan.
- Whisk in honey/maple syrup, vanilla, and coconut cream.
- Cook for about 3 minutes over medium heat stirring constantly. Consistency should easily coat the back of a spoon.

- Prepare banana pudding according to package directions.
- Place first five ingredients into a bowl; add buttermilk, oil and egg. With a spoon mix all ingredients and beat until smooth.
- Heat a frying pan or a griddle to 375 degrees. Spray cooking surface with non-stick spray. Pour 4 ounces of batter for each pancake, cook until hot and bubbly one one side, flip and then cook for about another 30 seconds or so and remove from the cooking surface. Place pancakes on a plate until they are ready to be used.
- Turning pancakes is made much easier if you spray your pancake turner with a non-stick spray. The turner does not stick to the uncooked dough of pancake when you are turning them. If batter seems to be too thick, add a little more buttermilk and mix well.
- To assemble, lay one pancake on a plate, add about 1/4 cup of banana cream and spread on pancake. Place about 4 or 5 banana slices onto banana pudding. Top banana pudding layer with another pancake. Add 4 or 5 slices of banana to the top of the pancake. Drizzle with caramel sauce. Top with whipped cream if desired.

BANANA NUT PANCAKES
This recipe is from a cookbook that says that the pancakes are like the ones from the International House of Pancakes (IHOP). I've never had banana nut pancakes from there but I liked the taste of these (even though I didn't make the banana syrup).

Steps:
- Combine syrup ingredients except for extract or flavoring in a small pan over high heat.
- After it boils, remove the pan from heat and add extract or flavoring.
- In a large bowl, combine pancake ingredients except the pecans and banana.
- Using electric mixer, blend until smooth.
- Heat pan or griddle over medium heat and coat it with butter or nonstick cooking spray when hot.
- Pour 1/4 cup portions of batter into the pan (it will spread out to about 4").
- Sprinkle about 1/2 tablespoon of pecans into the center of each pancake immediately after you pour the batter (this cooks the nuts into the pancakes).
- Cook the pancakes for 1 or 2 minutes per side or until golden brown.
- Slice the banana, divide it up and place on top each stack of pancakes.
- Sprinkle remaining nuts on top of each stack of pancakes.

Yummy...anyone who has been to Bali, Indonesia would surely have tried their banana pancakes. Anyway this is a recipe as close as I can get to them making it, however it always tastes better over there!

- Blend the first 6 ingredients together until a smooth consistency.
- Pour pancake mixture into the hot pan.
- Whilst the one side is cooking add slices of the banana to the uncooked side.
