Hot Cocoa with Almond Milk image

This dairy-free take on a classic compromises nothing in taste and can be made with any soy, rice, or nut milk.

4 cups unsweetened almond milk
2 cinnamon sticks, split lengthwise
1/4 cup unsweetened natural cocoa powder
2 ounces dark chocolate (preferably at least 70 percent cacao), finely chopped
1/4 cup granulated sugar
1/4 teaspoon coarse salt

Steps:

  • Bring milk and cinnamon sticks to a boil over medium heat. Reduce heat, and simmer gently for 10 minutes. Remove cinnamon sticks, rinse, and reserve.
  • Whisk in cocoa, chocolate, sugar, and salt, whisking vigorously until mixture is foamy, 1 to 2 minutes. Divide among mugs. Garnish with cinnamon sticks.

2 cups almond milk (, see note 1 & 2 (500 milliliters))
3 tablespoons unsweetened cocoa powder
2 tablespoons creamy almond butter
10 raw almonds (, or to taste, finely chopped, see note 3)

Steps:

  • Pour almond milk in a saucepan and add cocoa powder. On low heat, slowly heat up the mixture while whisking (the warmer the milk the easier the powder will melt in).
  • Make sure the cocoa has melted before you turn the heat off.
  • Stir almond butter in and pour into mugs/heat-proof glasses and top with chopped almonds (optional).
  • Enjoy warm!

1 cup cocoa (Dutch-process preferred)
2 1/2 cups powdered milk
1 teaspoon salt
2 teaspoons cornstarch
1 pinch cayenne pepper, or more to taste
Hot water

Steps:

  • Combine all ingredients in a mixing bowl and incorporate evenly. In a small pot, heat 4 to 6 cups of water.
  • Fill your mug half full with the mixture and pour in hot water. Stir to combine. Seal the rest in an airtight container, keeps indefinitely in the pantry. This also works great with warm milk.
