1 extra ripe avocado
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
8 slices turkey bacon
8 slices whole wheat bread
8 leaves romaine lettuce
2 medium tomatoes, cut into 12 slices
1 small red onion, thinly sliced

Steps:

  • Combine spread ingredients in a bowl. Mash until smooth and set aside.
  • Prepare bacon as directed on package; drain thoroughly on paper towels.
  • Toast bread. Place 4 slices on 4 plates. Spread an equal amount of avocado spread on each slice.
  • Top each with 1/4 of the bacon, lettuce, tomato and onion. Cover with another slice of toast.
  • Cut sandwiches in half and serve immediately.

8 slices of bread (cut 1/2" thick)
12 slices bacon
2 large ripe tomatoes (thickly sliced)
4 green lettuce leaves (rinsed and spun dry)
1 large avocado (or 2 small avocados pitted, peeled and sliced.)
salt and black pepper (to taste)
1/2 cup real mayonnaise
2 Tbsp sour cream
2 tsp yellow mustard

Steps:

  • Preheat oven to 400˚F. Place bacon on a foil-lined baking sheet in a single layer. Bake 18 to 20 minutes or until browned and crisp then transfer to a paper towel-lined plate to cool.
  • In a small bowl, combine sauce ingredients and set aside.
  • Lightly butter both sides of the toast and toast on a dry griddle or skillet over medium-high heat just until golden brown.
  • Arrange 4 slices of bread on a cutting board and spread 1 Tbsp of sauce over each toast. Add lettuce then tomato, bacon, avocado. Sprinkle salt and pepper over the avocado.
  • Spread 1 Tbsp sauce over the remaining toasted bread and place over the sandwich, sauce side down. Cut in half if desired and serve.

1/2 pound bacon slices
4 plum tomatoes, halved lengthwise
Kosher salt
1 whole-wheat baguette, cut into 4 pieces and split open
4 tablespoons extra-virgin olive oil
1 clove garlic
Freshly ground pepper
2 avocados, halved, pitted and thinly sliced
1 cup frisee or other salad greens

Steps:

  • Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Transfer to a paper-towel-lined plate. Season the cut sides of the tomatoes with salt.
  • Heat a grill pan over high heat. Brush the cut sides of the baguette with the olive oil and grill, cut-side down, until toasted, about 2 minutes. Rub the grilled sides with the garlic. Rub just the bottom halves of bread with the tomatoes until most of the juice is absorbed, then top with the tomato skins and season with salt and pepper.
  • Layer the avocado slices on top of the tomatoes, then add the bacon and frisee. Close with the bread tops.

2 ripe avocados, halved, pitted and peeled
3 scallions, whites and light greens chopped

1 tablespoon fresh lemon juice
1/2 teaspoon crushed red pepper flakes
Fine salt and freshly ground black pepper
8 slices smoked bacon
1 tablespoon unsalted butter
4 slices sourdough or crusty white bread, cut 3/4 inch thick
4 large eggs
2 cups loosely packed mixed greens
Four 1/2-inch-thick slices tomato

Steps:

  • Mash the avocados in a medium bowl until chunky-smooth. Stir in the scallions, lemon juice, red pepper flakes, 1/2 teaspoon salt and a few grinds of black pepper; set aside.
  • Cook the bacon in a large nonstick skillet over medium heat until crisp, about 4 minutes per side; transfer to a paper towel-lined plate. Remove and reserve all but 1 tablespoon of the drippings. Add the butter to the skillet, and swirl to melt and combine with the drippings. Dip both sides of each bread slice in the fat to coat, then cook until browned and crisp, about 2 minutes per side. Transfer the toasts to a cutting board. Raise the heat to medium-high. Add 1 tablespoon of the reserved drippings to the skillet, crack the eggs in a single layer, cover and fry until the whites are crisp at the edges but the yellows are runny, about 2 minutes.
  • Meanwhile, spread each toast with 1/4 of the mashed avocado, and transfer to a serving plate with a spatula. Top each toast with 1/2 cup of the greens, 1 tomato slice sprinkled with salt and pepper, 2 slices bacon and a fried egg, and serve with a fork and knife.

6 thick-cut slices smoked bacon
4 slices good white bread, cut 1/2-inch thick
4 tablespoons good mayonnaise (recommended: Hellman's)
4 to 8 tender green lettuce leaves, washed and spun very dry
1 ripe Hass avocado
1/2 lemon, juiced
1 large ripe tomato, sliced 1/2-inch thick
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Place a baking wire rack on a sheet pan and arrange the bacon on the rack in a single layer. Bake for 15 to 25 minutes, until the bacon is browned and crisp. Drain on paper towels and set aside.
  • Place the bread slices on a sheet pan and toast them for 5 minutes. Turn the slices and toast for 1 more minute, until all the bread is evenly browned. Place 2 slices on a cutting board. Spread each slice with about 1 tablespoon of mayonnaise. Cover the slices with a layer of lettuce. Peel the avocado and slice it 1/2-inch thick. Toss the avocado slices gently with the lemon juice, and arrange on top of the lettuce leaves. Place 3 slices of bacon on top of each sandwich and then add a layer of tomato slices on top of the bacon. Sprinkle liberally with salt and pepper.
  • Spread each of the remaining 2 slices of toasted bread with 1 tablespoon of mayonnaise and place, mayonnaise side down, on the sandwiches. Cut in half and serve.

1/2 teaspoon coarse salt
2 teaspoons chili powder
2 tablespoons fresh lime juice, plus more for sprinkling
1/2 cup light mayonnaise
1 (12 ounce) package center-cut bacon
8 slices , hearty white farmhouse bread
1 large ripe avocado
2 medium tomatoes, thinly sliced
8 lettuce leaves, torn into pieces
8 dill pickle spears

Steps:

  • Chop the crushed garlic with the salt and press it with the side of the knife until mashed. Scrape the garlic into a small bowl and stir in the chili powder, 2 tablespoons of lime juice and the mayonnaise.
  • In a large skillet, cook the bacon in 2 batches until crisp. Pour off the fat between each batch. Drain the bacon on paper towels.
  • While the bacon cooks, toast the bread. Slice the avocado and sprinkle the slices with a few drops of the lime juice.
  • Spread 1 side of each piece of toast with the spicy mayo. Arrange the avocado slices on 4 of the toasts, pressing them firmly against the mayo. Arrange the bacon, tomatoes and lettuce on the avocado slices. Top the sandwiches with the remaining toast. Cut the sandwiches in half on the diagonal and serve with the dill pickle spears.
