2 cups water
24 fresh asparagus spears (about 1 pound), trimmed
1 package (8 ounces) reduced-fat cream cheese
1/2 teaspoon salt
1 package (17-1/4 ounces) frozen puff pastry dough, thawed
1/4 cup egg substitute

Steps:

  • In a large nonstick skillet, bring water to a boil. Add asparagus; cover and cook for 3 minutes. Drain asparagus and immediately place in ice water; drain and pat dry. In a bowl, beat cream cheese and salt until smooth; set aside., Unfold the dough on a lightly floured surface. Cut each sheet in half widthwise. For each rectangle, spread cream cheese mixture lengthwise over half of the dough to within 1/2 in. of edges. Arrange two rows of three asparagus spears lengthwise in a single layer over cream cheese., Brush edges of dough with some of the egg substitute; fold dough over filling and press edges together to seal. Cover and refrigerate for 1 hour., Cut widthwise into 1-1/4-in. pieces. Place 1 in. apart on a baking sheet coated with cooking spray. Brush with remaining egg substitute. Bake at 425° for 8-12 minutes or until golden. Serve warm.

Flour, for work surface
1 sheet frozen puff pastry
5 1/2 ounces (2 cups) Gruyere cheese, shredded
1 1/2 pounds medium or thick asparagus
1 tablespoon olive oil
Salt and pepper

Steps:

  • Preheat oven to 400 degrees. On a floured surface, roll the puff pastry into a 16-by-10-inch rectangle. Trim uneven edges. Place pastry on a baking sheet. With a sharp knife, lightly score pastry dough 1 inch in from the edges to mark a rectangle. Using a fork, pierce dough inside the markings at 1/2-inch intervals. Bake until golden, about 15 minutes.
  • Remove pastry shell from oven, and sprinkle with Gruyere. Trim the bottoms of the asparagus spears to fit crosswise inside the tart shell; arrange in a single layer over Gruyere, alternating ends and tips. Brush with oil, and season with salt and pepper. Bake until spears are tender, 20 to 25 minutes.

1 pound asparagus, trimmed
1 sheet frozen puff pastry (about 1/2 pound), thawed
All-purpose flour, for dusting
1 cup grated fontina cheese (about 3 ounces)
1 cup grated comte or gruyere cheese (about 3 ounces)
1 tablespoon minced shallot
2 large egg yolks
3 tablespoons whole milk
1/8 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
2 teaspoons extra-virgin olive oil
1/2 teaspoon finely grated lemon zest

Steps:

  • Fill a large bowl with ice water. Bring about 1 inch of water to a boil in a large skillet. Add the asparagus; cook until bright green and crisp-tender, 2 to 5 minutes, depending on the thickness of the asparagus. Drain and transfer to the ice water to stop the cooking; drain and pat dry. Preheat the oven to 400 degrees F.
  • Roll out the puff pastry into a 10-by-16-inch rectangle on a floured surface. Transfer to a parchment-lined baking sheet and prick all over with a fork. Bake until light golden brown, about 12 minutes. Let cool slightly on the baking sheet.
  • Meanwhile, mix the fontina, comte, shallot, egg yolks, milk, nutmeg and a pinch each of salt and pepper in a bowl until combined. Spread the cheese mixture evenly over the puff pastry, leaving a 1-inch border on all sides. Toss the asparagus with the olive oil, 1/4 teaspoon salt, and pepper to taste. Arrange the asparagus on the tart and bake until the cheese mixture is slightly puffy, 15 to 20 minutes. Sprinkle with the lemon zest. Serve warm or at room temperature.

ASPARAGUS, HERB AND GOAT CHEESE PUFF PASTRY

8 ounces fresh goat cheese
1/2 cup ricotta
3 large eggs
1/2 cup freshly grated Parmesan
1/3 cup roughly chopped fresh flat-leaf parsley leaves
1/4 cup chopped fresh chives
2 tablespoons chopped fresh dill fronds
1 tablespoon lemon zest
2 cloves garlic, grated
Kosher salt and freshly ground black pepper
1 pound thick-stem asparagus, trimmed
1 tablespoon extra-virgin olive oil
One 8-ounce sheet puff pastry, thawed
All-purpose flour, for dusting

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  • Add the goat cheese, ricotta and 2 eggs to the bowl of a food processor fitted with the blade attachment. Pulse until the mixture is evenly combined. Next, add the Parmesan, parsley, chives, dill, lemon zest, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Pulse once again to combine all the ingredients. The mixture may look slightly liquidy, but once it bakes the egg will help stabilize the cheese mixture. Set aside.
  • On a separate rimmed baking sheet, toss the asparagus with the olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Set aside.
  • Unroll the puff pastry on a lightly floured work space and dust a rolling pin lightly with flour. Roll the puff pastry out to a 13-by-11-inch rectangle. Add the goat cheese-herb mixture to the puff pastry and spread it out into an even layer, leaving a 1-inch border all the way around the puff pastry. Nestle in the asparagus into the cheese mixture, alternating directions.
  • To make the egg wash, whisk the remaining egg with a splash of water. Use a pastry brush to brush the exposed crust all the way around the edges.
  • Transfer the tart to the oven and bake until the crust is golden and the cheese mixture is set, 25 to 30 minutes

Steps:

  • Preheat oven to 425°F. Blend cream and 2 ounces feta in a food processor until smooth; season with salt and pepper.
  • If using 14-ounce package of puff pastry, cut in half and roll out each half on a lightly floured surface into a 16x10" rectangle. (If using 17.3-ounce package, use 1 sheet of pastry for each tart.) Transfer each piece of pastry to a parchment-lined baking sheet. Using a paring knife, lightly score pastry (do not cut all the way through), leaving a 1" border.
  • Spread feta mixture over pastry, dividing evenly and staying within border. Arrange artichoke hearts over feta mixture and crumble remaining 2 ounces feta over; drizzle with oil. Brush pastry border with egg.
  • Bake tart until pastry is puffed and beginning to brown, 10-15 minutes. Reduce oven temperature to 375°F and continue to bake until pastry is deep golden brown and cooked through, 20-25 minutes longer. Serve warm or at room temperature.
  • Do Ahead
  • Tart can be made 2 hours ahead. Let stand at room temperature.
  • Variations:
  • The feta and puff pastry in this tart pair well with any number of toppings. In place of the artichokes, try:
  • Red Pepper + Olive: Scatter feta cream with jarred roasted red peppers, black olives, and chopped fresh rosemary, then bake. Finish with a drizzle of olive oil.
  • Asparagus + Egg: Top cheese with asparagus that's been halved lengthwise. Once out of the oven, slide on a few fried eggs.
  • Smoked Salmon + Scallion: Bake tart with feta only. When slightly cooled, add smoked salmon and sliced scallions.

3 clove garlic minced
1 medium shallot chopped
1 lb asparagus trimmed
1 puff pastry sheet
1/2 c ricotta cheese
1/2 c parmigiano reggiano grated
basil leaves
1 medium egg

Steps:

  • 1. beat the egg with a little water. Set aside. Preheat oven 450 degrees.
  • 2. Heat the olive oil in a saute pan. Add the shallot, garlic and asparagus and saute until crisp tender. Remove from heat.
  • 3. Roll out the puff pastry into about a 20 x 15 rectangle. Place on baking sheet lined with parchment paper. Spread the ricotta cheese over the puff pastry leaving a 1 inch border around the edge
  • 4. Top with the asparagus mixture. Add the parmigiano reggiano cheese. Roll up the sides of the puff pastry and brush the egg mixture on the borders
  • 5. Bake for about 20 to 25 minutes. Add the basil leaves the last 5 minutes. Remove from oven and let cool a bit and cut into squares.

1 lb pizza dough
1 small bundle asparagus
extra-virgin olive oil
4-8 oz. goat cheese
1 cup grated aged Gouda, Parmesan or extra old white Cheddar

Steps:

  • Preheat the oven to 450?F.
  • Divide the dough in half and roll each into a rough oval. Place on a parchment-lined baking sheet (or two).
  • Snap the tough ends off the asparagus wherever they naturally break. Place on a plate or in a bowl, drizzle with oil and toss with your hands to coat. Drizzle the pizza dough with oil and lay asparagus in a row on top. Sprinkle with salt and pepper.
  • Crumble the goat cheese over each pizza, and sprinkle with grated Gouda, Parmesan or cheddar and bake for 15-20 minutes, until bubbly and golden.
  • Cut in between the asparagus into strips to serve. Serves 6-8.

1/2 c. Fresh Mozzarella, Grated

Steps:

  • Thaw the puffed pastry on the counter for 45 minutes or in the fridge for several hours.When thawed, carefully open the sheet, then slice it in half down the middle. Place both halves on a baking sheet lined with parchment or a baking mat. Preheat oven to 415 degrees, then start on the pizza toppings.In a large skillet over medium-high heat, saute mushrooms and garlic in the butter for 2 minutes, then pour in the wine and season with salt and pepper. Allow to continue cooking for 5-7 minutes, until mushrooms are cooked down and liquid is mostly gone. Remove from heat and set aside.To build the pizzas: Brush a thin layer of olive oil in the center part of each half of puffed pastry.On each half, sprinkle on half the cheese so that it covers all but a 1/2 inch border all around the pastry.On one half, sprinkle on the cooked mushrooms.   • Heat oven to 425°F and place oven rack in lower third of oven. Unfold the pastry onto a piece of parchment paper and roll 1/2" bigger on all sides. Slide the parchment (and pastry) onto a baking sheet.
  • Beat the egg in a bowl. Lightly brush a 1/2" border of egg around the pastry. Add the ricotta and 1/4 teaspoon each salt and pepper to the bowl with the remaining egg. Finely grate the zest of the lemon into the bowl; mix to combine. Fold in the chopped scallions and chopped herbs, then spread onto the pastry, leaving the 1/2" border of egg uncovered.
  • Top with the asparagus and drizzle with 1/2 tablespoon olive oil. Bake until the crust is golden brown, 18 to 20 minutes.

3 garlic cloves
2 tablespoons Dijon mustard
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce
1/4 cup olive oil
1/2 cup grated parmesan cheese
3/4 lb asparagus
1 sheet puff pastry
2 eggs
1/2 cup ricotta cheese
1 cup parmesan cheese
2 tablespoons chopped chives
1 pinch black pepper
1 pinch salt

Steps:

  • Blend garlic cloves, dijon mustard, lemon juice, worcestershire sauce, hot sauce and gradually add oil while blending.
  • After it's well mixed, add paremsan cheese and black pepper.
  • Blanch asparagus (boil for 1-2 minutes then place in an ice bath).
  • Spread out asparagus in a baking pan, top with the caesar salad mixture.
  • Prepare the puff pastry dough, roll it out flat until you have a rectangle shape.
  • Create a border around the edges of the puff pastry, approximately 3/4" wide, using a small sharp knife.
  • Then create diagonal score marks around the edges of the puff pastry.
  • Poke holes throughout the pastry dough using a fork.
  • Brush the egg yolk + water wash around the crush (edges).
  • Bake the pastry at 400F for 10mins.
  • To make part filling, combine egg, ricotta cheese, parmesan cheese, chives, black pepper--mix using a whisk.
  • Spread tart filling evenly on top of the pastry.
  • Spread the asparagus evenly on top of the filling.
  • Gently place 2 eggs (make sure not to break the yolk) on top of the asparagus.
  • Bake at 400F for 25mins.

1 (17.3-oz) package puff pastry, defrosted
1½ Tbsp dijon
2 bunches fresh asparagus
9 slices prosciutto
1 cup grated/shredded gruyere cheese
1 egg
1 Tbsp water
½ tsp garlic powder
½ tsp salt
½ tsp black pepper

Steps:

  • Preheat oven to 400°F. Line baking sheets with parchment paper. Set aside.
  • Unfold pastry sheets. Cut each sheet into 9 squares for a total of 18 squares.
  • Trim asparagus to fit down the diagonal of the puff pastry squares. Set aside.
  • Spread about ½ teaspoon of mustard down the diagonal of the puff pastry square. Top the mustard with half a slice of prosciutto and 2 or 3 spears of asparagus. Top the asparagus with cheese. Fold two opposite corners of each square over the filling and press edges to seal. Place on the prepared baking sheet.
  • Whisk together egg and water. Brush mixture over pastry puffs.

320g sheet ready-rolled light puff pastry
6 tbsp tomato purée
1 tbsp tomato ketchup
1 tsp dried oregano
75g mozzarella or cheddar
sweetcorn , olives, peppers, red onion, cherry tomatoes, spinach, basil

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Unroll the pastry, cut into six squares and arrange over two baking trays lined with baking parchment. Use a cutlery knife to score a 1cm border around the edge of each pastry square. Bake for 15 mins, until puffed up but not cooked through.
  • While the pastry cooks, make the sauce and prepare your toppings. Mix the tomato purée, tomato ketchup, oregano and 1 tbsp water. Grate the cheese and chop any veg or herbs you want to put on top into small pieces. Set aside.
  • Remove the pastry from the oven and squash down the middles with the back of a spoon. Divide the sauce between the pastry squares and spread it out to the puffed-up edges. Sprinkle with the cheese, then add your toppings. Bake for another 5-8 mins and serve.

1 egg mixed with 1 tablespoon milk and 1 teaspoon Dijon mustard
2 tablespoons olive oil
2 large or 3 medium shallots, peeled and thinly sliced
Salt and pepper, to taste
12 to 18 spears asparagus, tough ends removed
4 ounces chèvre cheese, at room temperature
2 ounces cream cheese, very soft
1 teaspoon fresh thyme, plus extra leaves for garnish
6 to 8 thin slices prosciutto
2 ounces Parmigiano-Reggiano cheese
Extra virgin olive oil or truffle oil, for drizzling
Lemon slices, for garnish
Kalamata olives
Oil-cured tomatoes
Roasted red peppers
Capers
Roasted garlic

Steps:

  • Preheat oven to 425° F.
  • Trim puff pastry to a 9- by 6-inch rectangle. Lay pastry out on a parchment paper-lined baking sheet. About 1/2 inch from the outer edge, cut a border into the pastry all the way around. (Don't cut completely through to the work surface.) With a fork, prick the surface of the pastry all over except around the border. This will allow the border to rise and the center to stay less aerated when it bakes. Brush the entire pastry sheet very lightly with the egg wash.
  • Bake for 5 minutes and allow to cool.
  • Heat olive oil in a small sauté pan over medium heat and sauté shallots until golden, about 4 minutes. Season with salt and pepper.
  • If asparagus spears are thicker than your little finger, blanch for 30 seconds in boiling, salted water; refresh in cold water and pat dry. If thin, leave uncooked.
  • Combine chèvre cheese, cream cheese and thyme and spread on puff pastry; scatter with shallots. Lay asparagus spears side by side on top of shallots and distribute prosciutto over the top. Shave or grate cheese and distribute over the tart. Add any other toppings you prefer.
  • Bake until the pastry is a deep golden, 9 to 12 minutes. Drizzle with a little olive oil or truffle oil. Garnish with lemon slices and thyme leaves.

1/2 pkge (1 sheet) frozen puff pastry, thawed
1 3/4 lbs. asparagus
1 medium onion
3 T. butter
S & P
2 oz. Swiss cheese (about 1/2 c. grated)

Steps:

  • Pre-heat oven to 425F. Snap off ends of asparagus where stalks break easily and peel stalks if desired. Cut off asparagus tips. Cut stalks into thin slices on the diagonal. Chop onion. Melt butter in frying pan over medium heat and saute onions until soft and translucent, about 5 minutes. Add all the asparagus, 1 tsp. salt and 1/4 tsp. pepper and cook, stirring often, until almost tender, about 5 minutes. Taste and adjust salt and pepper if needed. On a lightly floured surface, roll out puff pastry to a 10" X 12" rectangle. Put on an ungreased baking sheet and prick with a fork every 1/2". Bake until golden, 8 to 10 minutes. Grate cheese. Top pastry with asparagus and onion mixture then top with grated cheese. Return to oven and bake until cheese melts, 5 to 10 minutes. Cut into 3" squares and serve immediately.

Prosciutto Asparagus Puff Pastry Bundles image

Very easy and elegant appetizer or also for brunch. Make this when you can find the very thin asparagus spears.

12 -16 ounces thin asparagus, ends trimmed
1 tablespoon extra virgin olive oil
1 sheet frozen puff pastry, thawed
4 ounces gruyere cheese, shredded
6 slices prosciutto
1 egg, beaten

Steps:

  • Preheat oven to 425°F. Line a sheet pan with parchment paper.
  • On a lightly floured surface, roll the puff pastry out to a large rectangle about double the original size. Square off edges and cut into 6 squares. (I use a pizza cutter to do this).
  • Toss asparagus in olive oil and season with salt and pepper.
  • To make the bundles, place slice of prosciutto on top of the square. I folded the prosciutto in half so that it fit nicely on the square. Follow with 3-4 stalks of asparagus (depending on size) and 1-2 tablespoons of cheese.
  • Lift two opposite corners of the puff pastry squares and wrap them around the asparagus and press to seal. Brush puff pastry with egg wash. Sprinkle with more pepper if desired.
  • Bake until puff pastry is golden and puffed, about 12-15 minutes. Serve immediately.
