Steps:
- Preheat the oven to 400 degrees F.
- Line a rimmed baking sheet with foil and place a rack on top. Arrange the bacon on the rack in a single layer. Bake until browned and crisp, 20 to 25 minutes. Let cool, then break the bacon in half.
- Meanwhile place the eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil over medium-high heat. Boil for about 30 seconds, then turn off the heat, cover the pan and let stand 20 minutes. Drain, add cold water and let stand in the cold water for 5 minutes. Drain, peel the eggs and chop.
- Combine the eggs with the mayonnaise, onion, relish, Dijon, paprika, celery, 1/2 teaspoon salt and pepper to taste in a bowl. Stir, mashing the eggs slightly, until very well combined. Season with additional salt and pepper.
- Lay out 4 slices of toast and top evenly with half of the egg salad, bacon, lettuce and tomato. Sprinkle the tomato with salt. Add another piece of toast to each and top with the remaining ingredients. Close the sandwiches with the last 4 pieces of toast. Use a sharp knife to trim the crusts from the sandwiches; cut in half diagonally.

Steps:
- Heat a medium nonstick skillet over medium heat. Add the bacon and cook, 5 to 6 minutes, turning halfway until crisp. When cooked, set aside on a paper towel and wipe some of the fat, leaving a little to cook the egg. Crack the egg, cover and cook until the yolk is set.
- Meanwhile, toast the bread. Assemble the sandwich by putting the mayo on the bottom, then the egg, then the lettuce, bacon and tomatoes. Cut in half and eat right away.

BLT
The basic classic: bacon, lettuce, and tomato -- nothing fancy, just delicious. (I personally use fake vegetarian bacon these days, and it's still really good!)

- Place the slices of cheese on one slice of the toasted bread and place in a toaster oven or under a broiler to melt the cheese.
- Spread the other slice of toast with the mayonnaise, top with the cooked bacon, the sliced tomato, and the lettuce.
- In a nonstick skillet, melt the butter over medium heat. Fry the egg, turning over briefly when the bottom is set (keep the yolk runny!). Alternatively rather than flipping it, put a lid on the pan and let the top of the egg gently cook with its own steam. There’s less of a chance to break the yolk, and the egg still turns out perfect.

- Cook bacon however you like, but to bake: Preheat oven to 375°F and line a baking sheet with aluminum foil. Place bacon strips on prepared baking sheet and bake for 12-15 minutes or until bacon has reached your desired crispness. Remove cooked bacon from sheet, blot with a paper towel, and set aside.
- Spray a non-stick skillet with cooking spray and heat over medium-low heat. Crack egg into the skillet and raise heat to medium-high. Let egg cook until the whites have solidified and become white/opaque. Carefully place a spatula underneath the egg about halfway under the egg and gently flip the egg over to the other side, trying not to disturb the yolk. Let cook for another 30 or so seconds. Remove the egg and place it on top of the tomato on the breakfast sandwich.
- Take one piece of bacon and cut it in half, and then place bacon on top of egg. Add avocado slices and top with the remaining half of the bagel thin. Serve while warm.

- Place the eggs in an even layer in a large pot. Cover with water. Bring to a boil over medium-high heat, then cover and turn off heat. Let sit for 10-12 minutes. Drain in a colander and run cool water over the eggs. This helps stop the cooking and also cools them down a bit for using in your sandwiches.
- Peel the hard-boiled eggs and chop. Add the eggs to a medium-size bowl then add the mayonnaise, dill weed, salt and pepper and stir to combine.
- Meanwhile, cook your bacon. I like to fry mine in a pan over medium heat. It takes about 8-10 minutes on the first side, until it’s cooked and getting crispy, then flip and cook another 2-4 minutes. At least for my thick-cut bacon; regular bacon will cook faster - just keep an eye on it. You can also make your bacon in the oven if you prefer. Once cooked, drain on paper towels to absorb the extra grease.
- Toast your bread, if desired. I like it untested for regular egg salad sandwiches but I prefer it toasted for these sandwiches.

- Cook Bacon until crispy - Preheat Oven to 400. Place bacon on baking sheet (on an oven safe rack, if you have one) and bake for about 20 minutes until crispy. Start checking oven at around 15 minutes to make sure it doesn’t burn. Feel free to line the pan with tin foil, for easy clean-up. Place bacon on paper-towel lined plate to soak up excess grease.
- While bacon is cooking, slice tomatoes into 8 pieces. Toast the buns, and add the sliced cheese to melt. Mix the mayo with the sriracha until smooth.
- Once the bacon is done, fry the eggs to your desired doneness. I prefer to cook my eggs to medium - whites fully cooked, with a runny yolk. (See notes above for tips)
- Add about a tablespoon of sriracha mayo to each bun. Add lettuce, 2 slices of bacon (cut in half), red onion (optional), tomato, avocado (optional), and finally the fried egg on top of everything else. Add the top bun and dig in!
