KID-APPROVED SWEET AND SOUR CHICKEN SAUCE
This is an easy lunch or dinner that tastes just like take out! Very forgiving and allows for substitutions! This is enough for 4 kids, double for a family dinner! Serve this as a sauce for chicken nuggets and rice. You can substitute a can of orange soda for the pineapple juice.

Steps:
- Stir reserved pineapple juice, vinegar, sugar, and ketchup in a saucepan over medium heat until blended, 2 to 3 minutes.
- Whisk cornstarch and water in a bowl until cornstarch is dissolved; stir into pineapple juice mixture.
- Stir pineapple and carrots into the sauce; bring to a boil, reduce heat to medium-low, and cook at a simmer until the sauce thickens, about 5 minutes.

POT-ROASTED CHICKEN WITH SWEET AND SOUR SAUCE
This is a Jamie Oliver Recipe that I tried the other night - it was sooooo yummy. Mmmm! You will need about 4 inch piece of fresh ginger and a handful of fresh parsley.

Steps:
- Preheat the oven 190c/375F/Gas5.
- You will need a casserole dish large enough for the chicken to sit on top of all the vegetables and pineapple .
- You will also need a food processor.
- Crush the fennel seeds and put to one side.
- Chop the parley and put to one side.
- Cut the stalk off the top of the chillies. Snap them in half and put those to one side too.
- Grate the ginger - Leaving the skin on.
- Season the chicken inside and out with salt and pepper and stuff the cavity with the parsley and ginger.
- Cut the red onions and peppers and pineapple into quarters and put into a cold casserole dish.
- Add the chillies and crushed fennel seeds. Drizzle with 3 good glugs of olive oil.
- Sprinkle with salt and pepper and give it a good stir to coat everything well.
- Place the chicken on top and pat it with a little oil. Cook in the middle of a pre-heated oven until the chicken is cooked - about 1 and 50 minutes.
- ***Please note cooking time is APROX - please read the lable on the chicken. The chicken is only cooked when the juices run clear and you can easily pull the bone from the thighs.
- When cooked, remove the chicken and drain the juices over the pan.
- Also remove half of the vegetables and half of the pineapple and put with the chicken and keep warm.
- Put the remaining vegetables and pineapple from the pan into a food processor with the sugar and balsamic vinegar. Correct the seasoning with a little salt and pepper - if needed.
- Blend to make a lovely sauce. ONLY if needed add a little boiling water to loosen and thin out.
- Remove the chicken from the bone and put onto serving plates - pour over the sauce.
- I served mine with boiled rice.
POT ROAST IN SWEET AND SOUR SAUCE
Prep time includes browning the roast, this is started on top of the stove then finished cooking in the oven --- the exact amounts really do not matter for this recipe I just eyeball all ingredients, start with 1/3 cup brown sugar and add in more if needed while cooking, when I make this I find that for my taste I need more than 1/3 cup --- the cayenne was left as optional if you like some heat then add it in and adjust to taste or you may used crushed chili flakes, there is tons of sauce to this so there is no need to double the amounts --- cooking time is only estimated it will depend on the size of your roast, this will also work well using a pork roast.

- Set oven to 325 degrees F.
- In a bowl combine all the sauce ingredients together until smooth and well combined, start with 1/3 cup brown sugar if you prefer a sweeter taste you can always add in more during cooking.
- Heat oil in a 5-quart Dutch oven over medium-high heat (use enough oil to cover the bottom of your Dutch oven).
- Season the roast liberally with seasoned salt and fresh ground black pepper; add to the pot and brown well on all sides, then remove to a plate or bowl.
- Add in onions and bell pepper; saute for about 3-4 minutes or until softened).
- Add in the sauce; bring to a medium simmer.
- Add the roast back to the pot and turn a few times to coat in the sauce.
- Cover with a lid then transfer to oven.
- Cook for about 3 to 3-1/2 hours turning the roast over every hour of cooking or you may turn halfway through cooking (cooking times will vary depending on the size of your roast).
- Remove the roast to a cutting board and slice thinly, transfer to a serving platter.
- Remove any fat the has accumulated on top of the sauce, then drizzle some on top of the beef slices.
- Serve remaining sauce on the side.

- In slow cooker, place carrots, celery, green pepper and onion. Top with chicken breasts. Sprinkle with salt. Pour sweet-sour sauce and pineapple chunks over all. Cover. Cook on low 7 to 8 hours or high 3 1/2 to 4 hours.

- Place potatoes in a 5-qt. slow cooker. Trim fat from roast; cut in half. In a large skillet, brown roast in oil on all sides. Transfer to slow cooker., Reserve 1 tablespoon drippings; saute onion in reserved drippings until tender. Stir in the tomato sauce, brown sugar, Worcestershire sauce, vinegar and salt. - Whisk egg yolks, soy sauce, cornstarch, salt, and pepper for marinade together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 20 minutes.
- Beat egg whites for coating in a bowl until foamy. Add water, then cornstarch, then flour, mixing completely after each addition.
- Combine hot water, sugar, rice wine, vinegar, cornstarch, soy sauce, bouillon granules, and salt for glaze in a bowl.
- Remove chicken from the refrigerator. Dip each piece in coating.
- Heat vegetable oil in a wok over medium-high heat until hot. Add chicken and cook in small batches until crispy, about 5 minutes per batch. Remove chicken to a plate and drain oil from the wok.
- Add bell pepper and garlic to the wok and stir-fry until tender, about 3 minutes. Remove from the wok onto a separate dish.
- Add pineapple chunks to the wok. Stir the reserved glaze and pour over pineapple. Simmer until sauce thickens, 2 to 3 minutes.
- Add chicken and bell pepper mixture back to the wok; toss everything together. Drizzle sesame oil over top, stir, and sprinkle with sesame seeds.

- Trim the chicken of fat and gristle, then cut the breasts or thighs into thirds.
- Sprinkle both sides of the chicken pieces with garlic salt; place into container and let stand in the fridge for an hour.
- Preheat your crock pot on low.
- Take the chicken from the fridge; put cornstarch and beaten eggs in separate shallow pans or dishes.
- Dredge the chicken pieces in the corn starch, then the egg.
- In a large skillet over medium temperature, heat the oil; slowly cook the dredged chicken pieces, frying to a golden brown on both sides, about 6 to 7 minutes per side.
- Remove the chicken from the skillet and place in the crock pot.
- In a saucepan over medium heat, combine the sugar (or sugar substitute*), vinegar, chicken stock, salt, catsup, and soy sauce; simmer, stirring occasionally, until sugar has dissolved and ingredients have incorporated well.
- Pour the sauce over the cooked chicken in the crock pot.
- Cook on low for 4 hours, then serve with rice and enjoy!
- *Note:if you use granular Splenda or Splenda Sugar Blend, you might want to use a bit less than 1/4 cup, then prepare the sauce to taste to make sure that it comes to the sweetness you prefer.
- Julie notes: I'd make some slight additions to the sauce, such as about a 1/2 teaspoon minced garlic and some chopped scallions; also, if you use chicken broth instead of stock, use unsalted broth then season with salt and/or soy sauce to taste.

- Heat oil in a pot over medium-high heat. Cook and stir roast and onions in hot oil until roast is browned and onions are soft, 5 to 10 minutes. Stir honey, sugar, lemon juice, black pepper, cloves, and salt into pot.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place eggs in a bowl. Combine cornstarch and garlic salt in a second bowl.
