Blood Orange and Mixed Bean Salad With Sprouts image

Beans can roll with virtually any flavor profile, including bright fresh citrus, lime juice, and chiles in this wintery salad.

Number Of Ingredients 10

1 red Thai chile or other small hot red chile, thinly sliced
1/4 cup olive oil
2 tablespoons fresh lime juice
2 teaspoons Sherry vinegar or red wine vinegar
Kosher salt, ground black pepper
2 cups cooked, cooled mixed beans (such as black-eyed peas, giant white lima beans, and/or gigante beans)
3 blood or navel oranges
2 small stalks celery, very thinly sliced on a diagonal
1 cup sprouts (such as alfalfa, radish, or broccoli), divided
1/2 cup cilantro leaves, divided

Steps:

  • Combine chile, oil, lime juice, and vinegar in a medium bowl. Season with salt and pepper. Add beans and toss to coat. Let sit 10 minutes to allow flavors to meld.
  • Meanwhile, using a small knife, remove peel and white pith from oranges. Cut crosswise into 1/4"-thick rounds.
  • Add oranges, celery, and half of sprouts and cilantro to beans. Season with salt and pepper and toss once to combine.
  • Serve topped with remaining sprouts and cilantro.

3 blood oranges
1 ruby red grapefruit
1/2 small red onion, julienned
1 Thai bird's eye chile, thinly sliced
Kosher salt
1 tablespoon high-quality extra-virgin olive oil
3 sprigs fresh mint, cut into a chiffonade

Steps:

  • Over a small bowl, supreme the blood oranges: Start by removing the top and bottom of the oranges, then place one of the flat ends of the orange on your cutting board and cut the skin off the outside while preserving the round shape. Be sure to remove all of the white pith. Pick the orange up and cut each section out of the orange in between the membranes. You will have lovely tender sections of the orange without any of the white membranes. You will be left with a "skeleton" of the orange. Squeeze the remaining juice out of the skeleton into the bowl. Repeat with the grapefruit and halve the segments.
  • Toss the onions and chile into the bowl with the fruit and juice and season with a pinch of salt and the olive oil. Let sit for at least 20 to 30 minutes. Stir in the mint right before serving.

1 (19 ounce) can red kidney beans, rinsed and drained
1 (19 ounce) can white kidney beans, rinsed and drained
1 (19 ounce) can black beans, rinsed and drained
1 (19 ounce) can romano beans, rinsed and drained
1 (19 ounce) can chickpeas, rinsed and drained
1 large red onion, chopped thinly
1 cup parsley, chopped
1/3 cup canola oil
1/2 cup vinegar
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Mix beans, onion and parsley together in a large mixing bowl.
  • In a separate bowl mix together oil, vinegar, salt and pepper. Add to bean mixture and mix.
  • Refrigerate until ready to serve. Enjoy!

3 tablespoons rice vinegar
2 tablespoons orange juice
1 tablespoon honey
1 teaspoon sesame oil
1/8 teaspoon ground cinnamon
1 (11 ounce) can mandarin orange segments, drained
3 cups bite-size pieces lettuce
2 cups bite-size pieces spinach leaves (cleaned, no stems)
1 cup thinly sliced fresh mushrooms
1 cup bean sprouts
1/3 cup thinly sliced red onion
2 teaspoons sesame seeds, toasted

Steps:

  • Mix (or shake) the first five ingredients until well blended.
  • Pour mixture over mandarin orange segments in a salad bowl (I like to use a glass or clear salad bowl for this recipe), cover with plastic wrap and refrigerate until well chilled.
  • About 15-20 minutes.
  • Add the lettuce, spinach, mushrooms, bean sprouts, onions to the mandarins in the salad bowl and toss well.
  • Sprinkle with sesame seeds.
