Blistered Padron Peppers and Garlic image

Blistered padron peppers cooked in olive oil and garlic. These bite-sized peppers make a great appetizer!

1/2 pound padron peppers
2 cloves garlic
1 tablespoon avocado oil

Steps:

  • Preheat a cast-iron skillet on medium heat.
  • Add oil and garlic and cook for 1 minute.
  • Pour in the padrone peppers and cook, stirring frequently, until the skin starts to blister.
  • Enjoy!

2 tablespoons olive oil
1 pound Padrón or shishito peppers
Flaky sea salt (such as Maldon)

Steps:

  • Heat 1 tablespoon oil in a large skillet over high heat until just smoking. Add half of the peppers; cook, tossing occasionally, until skins are blistered and flesh is softened, about 4 minutes. Transfer to a bowl, sprinkle with salt, and toss to coat. Repeat with remaining peppers, remaining 1 tablespoon oil, and more salt.

  • Peel garlic cloves and juice lemon. Place garlic, lemon juice, and salt in a food processor and process until garlic is very finely chopped. Add olive oil and process for approx. 30 seconds. Add mayonnaise and process for approx. 15 seconds more. Set aside.
  • Wash the peppers thoroughly and dry well with paper towels. Heat vegetable oil in a frying pan and add peppers, frying on medium-high heat and using tongs to turn often until skin blisters and browns, approx. 5 – 6 min. Remove from pan, drain on a paper towel-lined plate, and sprinkle with flaky sea salt. Serve immediately with garlic dip. Enjoy!
