1 1/2 pounds top blade beef chuck steaks (1/2 to 1 inch thick)
3/4 teaspoon salt
1/2 teaspoon black pepper
5 tablespoons extra-virgin olive oil
2 tablespoons coarsely chopped fresh oregano
2 tablespoons coarsely chopped fresh flat-leaf parsley
1/4 teaspoon grated fresh lemon zest
1 tablespoon fresh lemon juice
1 teaspoon chopped garlic (1 clove)

Steps:

  • Pat steaks dry and cut 3 slits (1 inch long and 1/4 inch deep) 1 inch apart across center cartilage of each steak (to keep from curling), then sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Heat 1 tablespoon oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook steaks, turning over once, until meat is just medium-rare, 4 to 7 minutes total.
  • While steaks cook, pulse herbs with zest, lemon juice, garlic, and remaining 1/4 cup oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a food processor until finely chopped.
  • Transfer steaks to a platter and let stand, loosely covered with foil, 5 minutes, then serve with sauce.

1 1/2 pounds beef sirloin steak (about 1 inch thick)
1 large red onion, sliced into 1/2-inch-thick rings
2 large zucchini or yellow squash, cut diagonally into 3/4-inch-thick slices
1/2 cup barbecue sauce
1 tablespoon chili powder
2 teaspoons Worcestershire sauce
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, at room temperature
2 tablespoons finely chopped fresh parsley
1/2 teaspoon grated lemon zest

Steps:

  • Preheat a grill to medium high. Combine the steak, red onion and zucchini in a large bowl. Add the barbecue sauce, chili powder, Worcestershire sauce, 1/2 teaspoon salt, and pepper to taste; toss to coat. Let stand 5 minutes. Meanwhile, mash the butter with the parsley, lemon zest and a pinch of salt in a small bowl; set aside. Transfer the steak to the grill and cook 4 to 5 minutes per side for medium rare; remove to a cutting board and let rest. Add the vegetables to the grill and cook, turning occasionally, until crisp-tender and charred in spots, about 8 minutes. Cut the steak into 4 pieces. Top each piece with some of the lemon-herb butter. Serve with the grilled vegetables.

1/2 teaspoon grated lemon peel
2 tablespoons fresh lemon juice
1 tablespoon dry vermouth, dry white wine or Progresso™ beef flavored broth (from 32-oz carton)
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon crumbled dried sage leaves
1 teaspoon chopped fresh oregano leaves or 1/4 teaspoon dried oregano leaves
1/2 teaspoon salt
1/4 teaspoon coarse ground pepper
4 beef boneless top sirloin butt steaks

Steps:

  • Mix all ingredients except beef steaks in shallow glass or plastic dish. Add beef; turn to coat with marinade. Cover and refrigerate at least 4 hours, turning beef occasionally.
  • Heat coals or gas grill for direct heat. Remove beef from marinade; discard marinade. Cover and grill beef 4 to 5 inches from medium heat 12 to 16 minutes for medium doneness, turning once.

4 -5 cloves garlic, minced
1 teaspoon caraway seed, crushed
1/2 teaspoon thyme
salt and pepper
1 cup chicken stock
2 cups country style gravy

Steps:

  • mix spices with garlic and rub on both sides of steaks and let sit 1 hour or more.
  • Brown in a small amout of olive oil in oven proof pan.
  • Add chicken stock and cover with foil or lid Bake for 1 1/2 hours at 350 degrees.
  • Top with thick peppery country gravy.
  • Serve with mashed potatoes of rice and fresh veg.

1 to 11/2 pounds flank steak
1/2 cup chopped scallions, light green and white parts only (about 5 scallions)
1/4 cup fresh chopped chives (from 1 bunch)
1/4 cup extra-virgin olive oil plus more for cooking the steak
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh flat-leaf parsley
1 tablespoon lemon zest and 2 tablespoons lemon juice (from 1 to 2 lemons)
1 tablespoon lime zest and 1 tablespoon lime juice (from 1 to 2 limes)
2 teaspoons whole grain mustard
1/4 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • Remove the flank steak from the refrigerator 30 minutes prior to cooking to bring it to room temperature.
  • In a medium bowl, add the scallions, chives, olive oil, basil, parsley, lemon zest, lemon juice, lime zest, lime juice, mustard, red pepper flakes and 1/2 teaspoon kosher salt. Stir to combine and set aside.
  • Heat a grill pan over medium-high heat. Drizzle a small amount of olive oil onto one side of the steak and use a silicone brush to spread it all over the steak. Sprinkle with a nice pinch of kosher salt and pepper. Transfer the meat to the grill pan, seasoning side down. Drizzle the other side of the steak with a small amount of olive oil and once again brush it to cover and sprinkle with salt and pepper. For medium-rare, cook the steak until the internal temperature is 135 degrees F, 4 to 5 minutes per side. Remove the steak to a plate and let it rest for 10 minutes before slicing.
  • Slice the steak against the grain. Add the slices to a platter and spoon on the lemon-lime herb sauce. Serve extra sauce on the side.

They may appear under different names - flatiron or book steaks, for instance - in your butcher case, but they're easy to spot: Neat ovals that are slightly larger than your palm and bisected by a slender white ribbon - of gristle.

4 (1/2-inch-thick) top chuck blade steaks (18 oz)
1 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons unsalted butter
1 tablespoon olive oil
1 large shallot, finely chopped
1/2 cup dry white wine
3 tablespoons finely chopped fresh chives
2 tablespoons finely chopped fresh parsley

Steps:

  • Pat steaks dry and sprinkle both sides with salt and pepper.
  • Heat 1 tablespoon butter and oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté steaks 3 minutes per side for medium. Transfer steaks with tongs to a plate and keep warm, loosely covered.
  • Add remaining 2 tablespoons butter to skillet and cook shallot over moderate heat, stirring, until softened, about 2 minutes. Remove skillet from heat and carefully add wine and any meat juices that have accumulated on plate with steaks. Simmer until reduced by half, about 3 minutes. Remove from heat and stir in herbs and salt and pepper to taste.
  • Serve steaks with sauce poured over.

2 tablespoons butter or 2 tablespoons margarine
1/4 cup finely chopped onion
1 clove garlic, crushed or minced
1 1/2 tablespoons flour
1/2 teaspoon dried oregano, lightly crushed
1/4 teaspoon dried marjoram, lightly crushed
1/4 teaspoon dried thyme, lightly crushed
2 teaspoons fresh lemon juice
1/2 cup white wine
1/4 cup water
1 tablespoon sugar
fresh ground black pepper
1 flank steak, seasoned and broiled as desired
chopped fresh parsley (to garnish)

Steps:

  • Melt butter or margarine in a medium skillet or saucepan, add onion and garlic, and cook over medium heat, stirring occasionally, until onions are tender.
  • Add flour, and continue cooking for 5-7 more minutes.
  • Remove from heat, and stir in herbs.
  • Stir in lemon juice, wine and water.
  • Heat mixture until it boils, stirring regularly.
  • Add sugar, reduce heat to low, and cook an additional 5 minutes, stirring twice.
  • Season to taste with salt and pepper, and set aside, keeping warm.
  • Thinly slice flank steak on an angle across the grain, and serve topped with sauce.
  • Garnish with parsley.

1 1/2 lbs swordfish steaks (or tuna, shark)
1/4 cup snipped fresh parsley
1/4 cup chicken broth
1 teaspoon finely shredded lemon peel
2 tablespoons lemon juice
1 tablespoon snipped fresh rosemary
1 tablespoon olive oil
1 shallot, finely chopped
1 1/2 teaspoons snipped fresh tarragon
1/4 teaspoon salt
3 garlic cloves, minced

Steps:

  • Thaw fish, if frozen. Place fish in a resealable plastic bag set in a shallow dish.
  • In a small bowl combine parsley, chicken broth, lemon peel, lemon juice, rosemary, olive oil, shallot, tarragon, salt and garlic.
  • Pour marinade over fish. Seal bag. (If doing OAMC, you would freeze at this point.).
  • Marinate at room temperature for 30 minutes.
  • Drain fish, reserving marinade. Grill fish on the greased rack of an uncovered grill directly over medium coals for 5 minutes, brushing once with the marinade.
  • Turn fish and grill 3-7 minutes more until fish flakes easily with a fork. Discard any remaining marinade.
