HAWAIIAN MUFFINS WITH PINEAPPLE, BANANAS AND COCONUT
Hawaiian Muffins loaded with bananas, pineapple, and coconut are one of my favorite muffins for an easy breakfast or a sweet treat late at night.

Steps:
- Preheat the oven to 350°F. Coat a muffin tin with cooking spray or line with paper muffin liners. Whisk together the flour, baking soda, salt, and cinnamon; set aside. Whisk the egg, sugar, and vanilla together in a large bowl until well combined. Add melted butter or coconut oil and mix well.
- Smash the bananas then add to the batter, as well as the pineapple, and coconut. Stir until combined. Combine the wet and dry ingredients. Stir just until the ingredients are combined.
- Divide the batter evenly into the muffin tins then sprinkle each top with coconut. Bake for 18-20 minutes or until lightly browned and a toothpick comes out clean.
- Let the muffins cool on a rack then serve plain or slathered in butter. Enjoy!

Steps:
- Preheat oven to 375 degrees F.
- STREUSEL TOPPING: Combine sugar, flour, and cinnamon.
- With a pastry blender, cut in butter until mixture resembles crumbs; set aside.
- BATTER: Combine flour, salt, baking soda, sugar and cinnamon; stir in pecans.
- Combine eggs,vegetable oil, mashed bananas, drained crushed pineapple and vanilla extract in separate bowl; add to flour mixture, stirring just until dry ingredients are moistened.
- Do not over stir.
- Fill paper-lined muffin tins a little more than half full.
- Sprinkle tops with streusel mixture.
- Bake about 25 minutes.
- Let cool for 10 minutes, then remove and finish cooling on wire racks.
- Batter can be used to make 2 medium-sized loaves.
- Bake at 350 degrees F.

- Preheat oven to 180°C Spray a 12 hole muffin tray with cooking oil.
- Sift flour into large bowl; add sugar and stir to combine. Make well in centre. Combine milk, reserved juice, egg and butter in a jug; pour into well. Add pineapple. Using a large metal spoon, stir until just combined.
- Spoon mixture into prepared holes. Bake for 20-25 minutes or until skewer inserted comes out clean. Let cool for 5 minutes. Lift muffins to a wire rack.
- When cool, spread muffins with icing; sprinkle with coconut.
- ICING:.
- Using an electric mixer, beat cream cheese and sugar in a medium bowl until light and fluffy. Stir in essence.

MAKE-AHEAD COCONUT-PINEAPPLE MUFFINS
I make and refrigerate the batter for these not-so-sweet muffins the night before. The next morning, I bake them and they are ready for breakfast or for a quick snack. I sometimes dip them in a brown sugar glaze to sweeten them up a bit.

- Sift flour, baking powder, baking soda, and salt together in a bowl. Set aside.
- Cream sugar and butter in a second bowl with an electric mixer. Add Greek yogurt, egg, and coconut extract; beat until well combined. Add in flour mixture and mix until just combined. Fold in pineapple, coconut, and pecans. Cover and refrigerate batter for 8 to 12 hours.
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin or line with paper liners.
- Fill each liner with batter using an ice cream scoop.
- Bake in the preheated oven until a toothpick inserted in center comes out clean, 20 to 25 minutes. Cool for 5 minutes in the pan, then transfer to a wire rack. Cool completely before glazing.
