This one sheet pan Garlic Rosemary Roasted Cabbage Steaks side dish is so easy to make and bursting with flavor! It's easy on the budget and deeply flavored with herby aromatics and topped with a vibrant chimichurri sauce.

1/2 cup fresh cilantro {about 2 small handfuls}
1/4 cup fresh Italian parsley {about 1 small handful}
1 tsp fresh rosemary leaves
1 fresh garlic clove, smashed
Zest and juice of 1/2 lemon
1/4 tsp Celtic sea salt (
2 tbsp organic extra virgin olive oil
1 head of cabbage
2-4 tbsp grass-fed butter, ghee - melted, or avocado oil
2 fresh garlic cloves, finely chopped
2 tsp finely chopped fresh rosemary
1 tsp Celtic sea salt (

Steps:

  • Preheat the oven to 400 degrees F. Grease a baking sheet or line with unbleached parchment paper and set aside.
  • Slice the cabbage into 1/4" to 1/2" thick rounds. Place the cabbage slices on greased baking sheet and set aside.
  • In a small mixing bowl, add the melted fat of choice, chopped garlic and chopped rosemary and give it a quick stir. Evenly distribute the garlic-herb mixture over the top of each cabbage slice. Season each cabbage slice with sea salt. Place in the oven for 35 to 40 minutes or until the cabbage slices have softened and begin to have golden brown edges. Since all ovens vary, please check your cabbage "steaks" around 20 minutes to gauge how much longer they will need in your oven. You don't want the cabbage to burn or it becomes bitter so watch it carefully.
  • While the cabbage "steaks" are roasting make the chimichurri sauce. Add all of chimichurri ingredients to a blender or food processor. Mix it for just a few seconds until everything comes together. It's okay to leave it a bit chunky if you prefer or blend until completely smooth. Set aside.
  • When the roasted cabbage steaks are done, serve immediately and generously drizzle the chimichurri sauce over each cabbage steak.

1 medium cabbage
4 tbsp. plant based or regular butter (I used Country Crock® Plant Butter)
1 tsp. salt (or to taste)
2 tsp. taco seasoning * (or to taste)
1 1/2 tbsp. garlic powder (or to taste)

Steps:

  • Remove the bruised outer leaves from the cabbage. With a sharp knife, gently cut it into 1-inch-thick rounds.
  • Spread the softened butter on top of the cabbage rounds and season with salt, taco spice, and garlic powder.
  • Line a large baking sheet with parchment paper. Arrange the cabbage rounds on the paper, seasoned side down. Now spread the butter on the top of the rounds again and sprinkle the seasonings on as well.
  • Bake for about 20 minutes at 450 degrees Fahrenheit. Remove the cabbage rounds from the oven, flip them over carefully, and bake them again for another 15-20 minutes. When done, they should be nicely roasted and cooked through.

salt and ground black pepper to taste
8 cloves garlic, crushed, or to taste

Steps:

  • Center a rack in the middle of the oven and preheat oven to 400 degrees F (200 degrees C).
  • Slice each cabbage quarter into 1/2-inch or 1/4-inch wedges. Spread half of the cabbage in a large roasting pan. Season lightly with salt and black pepper; scatter 4 garlic cloves on top. 4 cloves of garlic, minced
2 tablespoons of your favorite BBQ Sauce
1 Onion sliced, optional
A Handful of mushrooms Sliced, optional
salt & pepper

Steps:

  • Shred the cabbage
  • Heat a pan with a tablespoon of oil and add the cabbage and garlic. Stir and toss until cooked to your preference. I like mine a little crunchy so it only takes 6 - 7 minutes to cook. (add the mushrooms & onions at this stage too if using)
  • When your cabbage is soft enough, add your favourite BBQ Sauce and mix until the sauce is combined and heated through.
  • Season with salt & pepper if necessary. - You may not need to if your BBQ Sauce is seasoned nicely.
  • TOP TIP! Don't let your cabbage or garlic go brown or burn as this will give a bitter taste, if the pan is too hot, turn the heat down and add a splash of hot water!

1 head Napa cabbage rinsed well (outer leaves removed and sliced into 4 vertical wedges)
1/2 cup olive oil
1 tsp. lemon zest
3 cloves garlic peeled
1 Tbs. chopped parsley
coarse kosher salt and fresh ground pepper
chopped parsley for garnish

Steps:

  • Pre-heat oven to 450 degrees. Line a baking sheet with parchment or non-stick baking mat.
  • In a blender or food processor combine olive oil, lemon zest, garlic and parsley. Blend until smooth.
  • Gently brush both sides of cabbage with oil and garlic mixture and season with salt and pepper. Place cabbage cut side down on baking sheet.
  • Bake in middle rack of oven for 10 minutes then gently turn cabbage so other cut side is on baking sheet, roast for 5 minutes more.

Steps:

  • Preheat the oven to 350°F.
  • Trim the top ¼ inch off the top of the garlic bulb.
  • Place the garlic cut-side up on a piece of foil, drizzle with olive oil, and sprinkle with salt. Tip: I like to use a small baking dish or ramekin to help the garlic sit cut-side up.
  • Wrap the garlic in the foil and roast for 40 to 60 minutes or until the cloves are deeply golden brown and tender.

3 tablespoons butter
2 tablespoons olive oil
2 cloves garlic (very finely chopped)
2 teaspoons Dijon-style mustard
1 tablespoon fresh thyme (our favorite, parsley or dill, finely chopped)
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400°F and coat a shallow baking pan with nonstick spray.
  • Quarter the cabbage lengthwise, cut away the tough core from each quarter, then cut them in half to make a total of 8 wedges. Arrange the cabbage in a single layer on the prepared baking sheet and set aside.
  • Melt the butter and olive oil together in a small saucepan over medium heat. Add the garlic and cook until fragrant, 1 minute. Whisk in the mustard and herbs and remove from the heat.
