Provided by Good Food team

Categories     Dinner, Main course

Time 1h

Yield Serves 4-6

Number Of Ingredients 15

2 tbsp smoked paprika
1 tsp dried oregano
½ tsp cayenne pepper (or just a pinch if you want less heat)
1 tbsp soft light brown sugar
2 limes , zested, 1 juiced and 1 cut into wedges
1 garlic clove , crushed
3 tbsp olive or rapeseed oil
3 peppers , cut into chunks
2 red onions , peeled and cut into wedges
2 x 400g cans black beans , drained
850g side of salmon , pin-boned and scaled
3 small or 2 large ripe avocados
1 small, firm ripe mango
1 red chilli , finely chopped
small bunch coriander , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the paprika, oregano, cayenne, sugar, lime zest, garlic and oil in a bowl with a good pinch of salt. Toss the peppers, onions and beans with half of the spice paste in a large roasting tin, then cook in the oven for 25 mins.
  • Remove from the oven and give the veg and beans a good mix. Lay the salmon on top, skin-side down, then brush over the remaining spice paste. Bake for a further 25 mins, until the salmon is cooked through.
  • Meanwhile, for the salsa, halve, stone and finely chop the avocados and mango. Mix with the lime juice, chilli, coriander and some salt. Serve the salmon, veg and beans with the salsa and lime wedges for squeezing over.

ROASTED SALMON TACOS

Roasted Salmon Tacos image

Provided by Ina Garten

Categories     main-dish

Time 1h10m

Yield 6 servings

Number Of Ingredients 14

3/4 pound green cabbage, cored and finely shredded
1/2 seedless cucumber, unpeeled, halved lengthwise, seeds removed and very thinly sliced
1/4 cup good white wine vinegar
3 tablespoons minced fresh dill
Kosher salt and freshly ground black pepper
Olive oil, for greasing the pan
1 3/4 pounds center-cut fresh salmon fillet, skin removed
2 teaspoons chipotle chile powder
1 teaspoon grated lime zest
Kosher salt and freshly ground black pepper
3 tablespoons freshly squeezed lime juice, divided
12 (6-inch) corn tortillas
4 ripe Hass avocados, seeded and peeled
3/4 teaspoon Sriracha

Steps:

  • At least an hour before you plan to serve the tacos, toss the cabbage, cucumber, vinegar, dill, 1 teaspoon salt, and 1/2 teaspoon black pepper together in a large bowl. Cover and refrigerate, allowing the cabbage to marinate.
  • When ready to serve, preheat the oven to 425 degrees. Brush a baking dish with olive oil and place the salmon in it. Mix the chile powder, lime zest, and 1 1/2 teaspoons salt in a small bowl. Brush the salmon with 1 tablespoon of the lime juice and sprinkle with the chipotle seasoning mixture. Roast for 12 to 15 minutes, depending on the thickness of the fish, until the salmon is just cooked through.
  • Wrap the tortillas in 2 foil packets and place them in the oven with the salmon. Roughly mash the avocados with the remaining 2 tablespoons of lime juice, the Sriracha, 1 teaspoon salt, and 1/4 teaspoon black pepper.
  • To serve, lay 2 warm tortillas on each of 6 plates. Place a dollop of the avocado mixture on one side of each tortilla, then some large chunks of salmon, and finally, some of the slaw. Fold the tortillas in half over the filling (they will be messy!) and serve warm.

Blackened Fish Tacos with Avocado Slaw image

Provided by Tia Mowry

Categories     main-dish

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 19

1/2 cup fresh cilantro leaves, plus 1/4 cup chopped
1 tablespoon mayonnaise
1 clove garlic
1/2 avocado
Juice of 1/2 lime
Kosher salt and black pepper
3 cups thinly shredded green cabbage
3 green onions, white and green parts only, sliced
2 teaspoons smoked paprika
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
Kosher salt
1 pound mahi-mahi fillets, cut against the grain into 1 1/2-inch strips
2 teaspoons grapeseed oil
Eight 6-inch corn tortillas, warmed
Chopped cilantro, for garnish
8 lime wedges, for garnish

Steps:

  • For the cabbage slaw: Add the 1/2 cup cilantro leaves, mayonnaise, garlic, avocado, lime juice, 1/2 teaspoon salt and 1/4 teaspoon pepper to a food processor. Process until smooth. If the dressing is too thick, add water, 2 tablespoons at a time.
  • In a large bowl, toss the cabbage with the 1/4 cup chopped cilantro, the green onions and the dressing. Let sit for 15 minutes.
  • For the fish tacos: Mix together the smoked paprika, chili powder, cumin, garlic powder, onion powder and 1 teaspoon salt in a large bowl. Add the fish and toss gently to coat.
  • Heat a large nonstick skillet over medium-high heat. Add the grapeseed oil and the fish and cook until the seasoning on the fish is blackened, 1 to 2 minutes per side. Transfer the fish to a plate.
  • Top each tortilla with 2 slices of fish, about 1/4 cup of slaw and a sprinkle of cilantro. Serve with lime wedges.

Time 25m

Yield 6 serving(s)

Number Of Ingredients 23

1 1/2 lbs fish fillets (mahi, tilapia, salmon, etc.)
1 1/2 teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon onion powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon brown sugar
1/4 teaspoon cayenne pepper
2 tablespoons vegetable oil
6 -8 corn tortillas (depending on size) or 6 -8 flour tortillas (depending on size)
1/2 red cabbage, sliced thin
1/4 green cabbage, sliced thin
1/2 medium red onion, chopped
1/2 cup fresh cilantro leaves
1 lime, juice of
1/2 teaspoon honey (more or less to taste)
1/2 cup sour cream
1 ripe avocado, pitted and skinned
1/4 cup cilantro leaf
1 lime, juice of (small)
1 jalapeno, chopped and seeded
salt, to taste

Steps:

  • In a small bowl, combine the smoked paprika, garlic powder, dried oregano, onion powder, cumin, salt, brown sugar and cayenne pepper. Sprinkle the mixture as evenly as possible over both sides of the fish fillets.
  • Combine all of the Avocado-Cilantro Sauce ingredients in a food processor or blender. Pulse until well-combined; set aside.
  • Combine all of the Slaw ingredients in a large bowl and mix well.
  • Heat the oil in a heavy-bottomed pan over medium-high heat. Once heated, add in the fillets (a few at a time if you can't fit them all at once). Cook for 4-5 minutes on each side, or until the outside is blackened and the fish flakes apart easily. Note: try not to move them around so as to achieve a blackening affect. Too much movement, also, encourages the spice mixture to stick to the bottom of the pan.
  • Remove the fish from the heat, and if desired, warm the tortillas in the same skillet over medium heat, cooking for about 30 seconds on each side.
  • Break up the cooked fillets into 2-3" pieces. Distribute the fish evenly between the tortillas and top with Slaw and Avocado-Cilantro Sauce. You may garnish with additional fresh cilantro leaves and/or jalapeno, if desired.

BLACKENED SALMON TACOS WITH AVOCADO CORN SALSA

Provided by gailanng

Categories     Southwestern U.S.

Time 55m

Yield 4 serving(s)

Number Of Ingredients 31

1 lb salmon, pin bones and skin removed, patted dry
2 tablespoons canola oil
2 tablespoons flour
2 teaspoons chili powder
1 teaspoon smoked paprika
2 teaspoons brown sugar
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper (or to taste)
1/2 teaspoon salt (I increased to about 1 teaspoon)
1/2 teaspoon black pepper
1 ripe avocado, finely chopped
1 large ear of corn, kernels cut off
1 tomatoes, seeds removed and diced
1/4 cup red onion, diced
2 tablespoons cilantro, chopped
zest and juice of half a lime
salt and pepper
1/4 cup plain Greek yogurt
2 tablespoons mayonnaise
2 tablespoons buttermilk
juice of half a lime
1 small garlic clove
2 tablespoons green onions, thinly sliced
1/4 cup cilantro leaf
1/4 teaspoon salt
1/4 teaspoon pepper
corn tortilla, warmed
shredded cabbage
lime wedge

Steps:

  • For the Salmon: Heat the oil in a skillet (cast iron is good) over medium-high heat. In a bowl, stir together the flour, chili powder, paprika, brown sugar, onion powder, garlic powder, cumin, cayenne, salt and pepper. Coat the flesh of the salmon liberally with the blackening spice.
  • Place salmon in hot skillet. Cook 3-4 minutes per side or until coating is blackened and forms a nice crust and salmon is cooked through (medium-well, just slightly pink in the center). Allow salmon to rest for 5 minutes, then flake with a fork.
  • For the Salsa: In a bowl, gently stir together the avocado, corn, tomato, red onion, cilantro, lime, salt and pepper. Refrigerate until ready to serve. Note: Can be made up to an hour in advance.
  • For the Dressing: Add yogurt, mayo, buttermilk, lime, garlic, green onions, cilantro, salt and pepper to a food processor. Process until smooth. Add more buttermilk as needed until desired consistency is reached (you'll want it to be thin enough to drizzle, but not so thin that it slides off the tacos). Refrigerate until ready to serve. Note: Can be made up to several hours in advance.
  • To Assemble Tacos: On a warmed corn tortilla place flaked salmon followed by Avocado Corn Salsa and some shredded cabbage. Drizzle with Cilantro Ranch Dressing. Serve with lime wedges.

  • BLACKENED SALMON: Combine the smoked paprika, cumin, chipotle powder, garlic, sugar, thyme, onion powder, ½ teaspoon salt, and ¼ teaspoon black pepper in a small bowl. Place the salmon on a cutting board and pat dry with a paper towel. Cut the salmon into smaller pieces. I made filets that were about 1 ½ inches wide. Sprinkle the flesh of the salmon with the blackened seasoning liberally, you may not need all the seasoning. Heat a large cast iron skillet over medium high heat. Drizzle ½ the oil into the pan and place half the salmon filets flesh side down into the skillet. Cook about 2-5 minutes total, turning half way through. The salmon is done with the thickest part feels firm. Fry the second batch of salmon filets. Allow the salmon to rest for 5 minutes. Remove the skin and flake with fork or just dice it.
