CHICKEN & ZUCCHINI CASSEROLE
This baked chicken and zucchini casserole is creamy, hearty and low-carb! The whole family will love this easy casserole, plus it's a great way to get the kids to eat their veggies (concealed in a delicious cheese sauce!).

- Preheat oven to 400 degrees F. Melt 1 tablespoon butter in a large skillet over medium-high heat. Add chicken to the pan; cook, stirring occasionally, until well browned, about 8 minutes. Transfer the chicken to a medium bowl. Add zucchini and bell pepper to the pan; cook, stirring occasionally, until the vegetables start to soften, about 4 minutes. Transfer the zucchini mixture to the bowl with the chicken.
- Add the remaining 2 tablespoons butter to the pan. Stir in flour; cook, stirring constantly, until the flour starts to brown, about 1 minute. Add broth and milk; bring to a boil, whisking often. Remove from heat and add cream cheese and 3/4 cup mozzarella; stir until melted. Stir in pepper and salt. Drain liquid from the chicken and vegetable mixture; stir the chicken and vegetables into the cheese sauce. Transfer to a 2-quart baking dish. Place the dish on a foil-lined baking sheet; sprinkle the casserole with the remaining 1/2 cup cheese.
- Bake until the top is browned and the edges are bubbly, 20 to 25 minutes. Let stand for 10 minutes before serving.

- In a large bowl, combine stuffing mix and butter. Set aside 1/2 cup for topping. Add the zucchini, chicken, soup, carrot, onion and sour cream to the remaining stuffing mixture. , Transfer to a greased 11x7-in. baking dish. Sprinkle with reserved stuffing mixture. Bake, uncovered, at 350° until golden brown and bubbly, 40-45 minutes.

- Preheat oven to 350 Combine zucchini and onion in a medium saucepan, cover with water and boil for 5 minutes; drain and cool.
- Combine carrots, soup, sour cream, and garlic powder in a large bowl; stir until smooth.
- Add zucchini, onion, and chicken; mix.
- Spread chicken mixture in a greased 9 X 13 inch casserole. Melt the butter in a skillet, add Accent seasoning and toss well to coat with butter.

A casserole my mom always made. Still love it to this day. The original recipe is 1 T. cheese but I use more, about 1/4 c.

- Preheat oven to 350 deg.
- Cook zucchini in boiling water til tender. Drain and place in casserole.
- In a sauce pan, melt butter. Stir in sour cream, cheese, salt and paprika. Cook slowly until the cheese melts.
- Remove from heat and add egg and chives.
- Stir into 1 1/2 quart casserole with zucchini.
- Toss cracker or bread with 2 T. butter and put on top of the veggie mixture. Bake at 350 deg. for 20 minutes.
- Most of the time she used zucchini but other veggies also.

EASY CREAMY SOUR CREAM CHICKEN CASSEROLE
This is one of the first recipes I really "mastered" when I was learning how to cook. My husband got to enjoy this recipe at least twice a month because it was one of the few dishes I knew how to make. Now, that I'm a much better cook, we still have this delicious dinner on our menu at least monthly. It is so easy to put together and very good. - Preheat oven to 350°F.
- Boil chicken breast until tender; drain and cube.
- Spread evenly over the bottom of a square casserole dish.
- Salt and pepper to taste.

- Cook the zucchini in a small amount of boiling water in a large saucepan for 6 minutes or until tender; drain well. Place the zucchini in a 1 1/2 quart greased casserole; set aside.
- Combine the cheddar cheese, sour cream, butter, and salt in a small saucepan; cook over medium-low heat until the cheese melts, stirring constantly. Pour the cheese sauce over the reserved zucchini.
- Combine the breadcrumbs and Parmesan cheese. Sprinkle over the casserole.
- Bake, uncovered, at 375 degrees for 10 to 12 minutes or until lightly browned.

This is my mom's recipe, she loves garlic, so it's heavily flavored in garlic! This is great served with garlic bread. For veg meal, leave out chicken and add squash. Prep time is a guess.

- Cook chicken, rinse and cut into strips or chunks - your preference.
- Cook zucchini low - medium heat until tender with 1/2 stick of butter.
- Remove from stove.
- In large mixing bowl add zucchini, carrots, onions, sour cream, cream of chicken soup, chicken, garlic and cheddar cheese, mix well.
- Add 1/2 cup stuffing and mix well.
- Pour mixture into a greased 13 x 9 baking pan.
- In same frying pan used for zucchini, heat 1/2 stick and 2 cups of stuffing, mixing well.
- Spread stuffing over casserole.
- Bake for 1 hour at 350 degrees.
