SLOW COOKER BLACKBERRY PORK TENDERLOIN

I cooked this for a date, and he told me it was the best meal anyone besides his momma had ever cooked for him! That's a terrific compliment, being from south Louisiana!

1 (2 pound) pork tenderloin
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon dried rubbed sage
1 tablespoon crushed dried rosemary, or to taste
1 (16 ounce) jar seedless blackberry jam
¼ cup honey
2 tablespoons dry red wine (such as Cabernet Sauvignon, Merlot, or a blend)
½ cup dry red wine (such as Cabernet Sauvignon, Merlot, or a blend)
2 tablespoons honey
1 cup fresh blackberries

Steps:

  • Season the pork tenderloin on all sides with salt, pepper, sage, and rosemary. Place the tenderloin into a slow cooker, and spoon the blackberry jam, 1/4 cup honey, and 2 tablespoons of red wine over the pork. Set the cooker to Low, and cook until very tender, 4 to 5 hours.
  • About 15 minutes before serving time, pour 1/2 cup red wine, 2 tablespoons of honey, and the fresh blackberries into a saucepan. Bring to a boil over medium-low heat, and simmer until the sauce thickens slightly and some of the berries burst, about 15 minutes.
  • To serve, slice the tenderloin and spoon blackberry-wine sauce over slices.

2 tablespoons balsamic vinegar
1 tablespoon sugar or 1 tablespoon Splenda sugar substitute
1/4 teaspoon red pepper flakes
1/4 teaspoon cinnamon (optional)
1 teaspoon vegetable oil
1 lb pork tenderloin, cut in 1/4 inch slices
1 teaspoon dried thyme leaves, divided
1 teaspoon salt, divided

Steps:

  • Whisk blackberry spread, vinegar, sugar, cinnamon, and red pepper flakes in small bowl until blended, set aside.
  • Heat large nonstick skillet over medium-high heat until hot.
  • Coat skillet with nonstick cooking spray; add oil; tilt skillet to coat bottom.
  • Add half of pork slices; sprinkle with half of thyme and half of salt.
  • Cook 2 minutes; turn and cook 1 minute on other side.
  • Remove pork from skillet and set aside.
  • Repeat with remaining pork, thyme and salt.
  • Add blackberry mixture to skillet and bring to a boil over high heat.
  • Add reserved pork slices, discarding any accumulated juices.
  • Cook about 5 minutes, turning constantly, until pork is richly glazed.

2 fresh jalapeno peppers
12 ounces frozen blackberries
1 cup water
½ cup brown sugar
¼ cup honey
¼ cup orange juice
¼ cup orange-flavored liqueur
1 tablespoon minced fresh garlic
2 teaspoons orange zest
1 (12 pound) spiral-sliced, fully-cooked smoked ham

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler to high. Place jalapeno peppers on a baking sheet.
  • Broil in the preheated oven, turning every 2 to 3 minutes, until skin on the jalapenos is blackened and bubbling, 8 to 10 minutes.
  • Remove jalapeno peppers from oven and place in a resealable plastic bag; set aside for 5 to 10 minutes. Carefully open the bag and remove jalapeno peppers; let sit until easily handled. Peel blackened skin from jalapeno peppers, slice open, remove the seeds, and mince the pepper.
  • Combine jalapeno peppers, blackberries, water, brown sugar, honey, orange juice, orange-flavored liqueur, garlic, and orange zest in a saucepan over medium heat; simmer for 5 to 10 minutes. Reduce heat to low and continue simmering until glaze has reduced in size and is thickened, 5 to 10 minutes more. Mash the glaze with a potato masher until blackberries are broken down. Remove saucepan from heat.
  • Reduce oven temperature to 325 degrees F (165 degrees C). Place the ham in a roasting pan and brush some of the glaze over the ham; cover loosely with aluminum foil.
  • Bake in the preheated oven, basting with glaze every 20 minutes, until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), about 3 hours. Remove ham from oven and brush with more glaze. Let stand for 10 minutes before slicing.

1 tablespoon toasted sesame oil
2 fresh jalapeno peppers, seeded and finely chopped
1 tablespoon grated fresh ginger
1/4-1/2 teaspoon crushed red pepper flakes
hot cooked rice (optional)

Steps:

  • Place pork in a resealable plastic bag set in a shallow dish.
  • For marinade, in a small bowl, combine honey, soy sauce, sesame oil, the chopped jalapeno peppers, the ginger, and crushed red pepper.
  • Pour marinade over pork. Seal bag; turn to coat pork. Marinate in the refrigerator for at least 12 hours or up to 24 hours, turning bag occasionally.
  • Preheat oven to 425 degree F.
  • Drain pork, reserving marinade. Place pork on a rack in a roasting pan.
  • Roast in oven for 25 to 35 minutes or until juices run clear (160 degree F), brushing once with reserved marinade after 10 minutes of roasting.

  • In a gallon-sized resealable plastic bag, dissolve 1/4 cup of salt in the warm water. Add the vinegar, red pepper flakes, brown sugar, ice cubes and the pork. Brine for exactly 20 minutes. The pork becomes mealy if it's brined longer.
  • In a small saucepan, add blackberries and sugar if not using the preserves. Cook on high heat for 5 minutes, decrease the heat to low and simmer for another 15 minutes until the fresh preserves start to thicken.
  • In another skillet or saucepan over medium-high heat add the butter. Once melted, add the jalapenos and garlic and saute for 3 to 4 minutes.
  • Stir in the blackberry preserves and wine and combine well. Simmer until reduced by half. Add the cornstarch to the red wine vinegar in a small bowl and mix well. Pour the cornstarch mixture into the pan and cook for 5 to 6 minutes more. Keep the glaze warm until serving.
