This is a wonderful recipe. This was given to our family years ago by a good friend through the Boy Scouts. My brother would eat it all if he was allowed to and now my children who are both little love this dish. For people on a low budget this is an easy meal to make and it is easy to reheat. My mother, who does not eat chicken, loves the topping of this dish.

8 skinless, boneless chicken breasts
1 (10.75 ounce) can condensed cream of chicken soup
⅓ cup water
8 slices Swiss cheese
2 cups Italian seasoned bread crumbs
½ cup butter

Steps:

  • Preheat oven to 350 degrees F(175 degrees C).
  • In a 9x13 inch baking dish, layer the chicken breasts, soup and water. Top each breast with a slice of Swiss cheese, then top it all with the breadcrumbs. Cut the butter or margarine into pads and place them over the top of the casserole.
  • Bake in the preheated oven for 45 minutes. Let cool and serve.

1 (10 3/4 ounce) can cream of chicken soup, undiluted

Steps:

  • Arrange chicken in greased casserole dish. Top each chicken breast with cheese slice.
  • Combine soup with wine, mixing well. Spoon sauce over chicken; sprinkle with stuffing. Drizzle melted butter over stuffing.
  • Bake at 350 degrees for 45 to 55 minutes.

6 boneless skinless chicken breasts
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
6 -12 slices swiss cheese
1 (10 1/2 ounce) can cream of mushroom soup
1/4 cup milk
1 (3 cup) package Stove Top stuffing mix (for chicken)
1/4 cup butter, melted
italian seasoning (optional)

Steps:

  • Lightly grease a 13x9 baking dish and place chicken breasts in dish.
  • Season chicken with garlic powder, salt and pepper and italian seasoning (optional).
  • Top each chicken breast with 1 or 2 slices of cheese (however you'd like it).
  • In a seperate bowl, combine mushroom soup and milk, stir until lumps are gone. Pour over chicken.
  • Top with stuffing mix and drizzle melted butter all over.
  • Cover. Bake for 45-50 mins @ 350.
  • Remove cover, continue to bake for 5-10 minutes to crisp the stuffing.

1 can of cream of mushroom soup
1/3 cup of white wine
1 tablespoon of gravy master or soy sauce

Steps:

  • Season the chicken on both sides with the salt, pepper, poultry seasoning, paprika and dried parsley , add a couple of tablespoons to a skillet and sear the chicken on both sides for just a few minutes on each side. You just want the chicken to have a golden brown color but not cooked through.
  • Add the chicken to a baking dish, then in a bowl, whisk the soup with the wine, the gravy master or soy sauce, then season to taste with the same seasonings you used on the chicken. Pour over the chicken.
  • Dot the top of the chicken with little pats of butter, then cover all the chicken with the swiss cheese. Cover loosely with a piece of foil and bake at 350 degrees for 35 minutes, then uncovered for 15 minutes. Remove from oven and let rest for 10 to 15 minutes.

6 boneless chicken breast halves, without skin
8 ounces sliced mushrooms, sauteed in a little butter
2 cups shredded swiss cheese
10 3/4 ounces cream of mushroom soup (98% reduced fat)
1/4 cup sour cream
1/4 cup dry sherry (white wine or chicken broth can be used)
1/4 cup grated parmesan cheese

Steps:

  • Place chicken in an ungreased 2 quart baking dish; add mushrooms. Sprinkle with Swiss cheese.
  • In a small bowl, combine soup, sour cream, and sherry. Pour over the chicken. Bake at 350 degrees for 45 minutes.
  • Sprinkle with Parmesan cheese and bake an additional 5 to 10 minutes, or until chicken is cooked through and casserole is bubbly.
  • Place chicken on serving plate. Stir sauce to blend and serve with chicken.

A tasty "tried and true" fall casserole featuring savoury mushrooms, Swiss chard, brown rice and lean chicken. Bake in your favourite casserole dish or a deep dish pie plate.

4 cups brown rice, cooked
4 eggs, medium
1 cup 1% milk
2 cups cheddar cheese, shredded
1 tbsp olive oil
1 cup onions, diced
½ lb boneless, skinless chicken breasts
½ lb brown mushrooms, fresh, sliced
6 cups swiss chard, fresh, sliced
¼ tsp salt
¼ cup basil, fresh, chiffonade
1 tbsp thyme, fresh

Steps:

  • Preheat oven 375°F (190°C). Oil casserole or spray with vegetable oil cooking spray.
  • Cook rice in unsalted water according to package directions. Set aside to cool.
  • Beat eggs with milk in large bowl. Add to rice.
  • Grate the cheese and add one cup to rice & egg mixture and reserve other cup (250 mL) for the top of the casserole.
  • Slice mushrooms. Shred Swiss chard across into ½ inch (1.25 cm) ribbons. The centre veins in the chard are edible. Cut chicken breast into ½ inch (1.25 cm) pieces.
  • Heat the olive oil over medium-high heat. Add diced onion with the chicken and stir and sauté for 5 minutes. Stir in sliced mushrooms and chard and sauté a few minutes more until chard is wilted. Sprinkle with salt. Mix into the egg & rice mixture along with the shredded basil and thyme leaves.
  • Pour into the prepared casserole. Cover with remaining cheese. Bake for 35 minutes in preheated oven or until cooked through and lightly browned. A knife inserted into the centre of the casserole should come out clean.

1 pkg wild rice (prepare according to package directions)
2 - 3 boneless chicken filets (may cut into strips)
2 Tablespoons soy sauce (or to taste)
1 can cream of mushroom soup + 1/2 cup water
Kraft Swiss Cheese, thinly sliced (5 - 6)

Steps:

  • Cook rice, set aside. In saute pan, brown chicken, pour soy sauce over when done. Add cream of mushroom soup and water, simmer until heated through, keeping stirred.
  • Place rice in bottom of oblong casserole dish. Dip chicken pieces out of soup mixture and place over rice. Put cheese slices over chicken, pour soup mixture over all.
  • Microwave 6 minutes on "bake power" or bake, covered in conventional oven at 400 degrees F, 25 minutes.
