OVERNIGHT OAT PARFAITS

Steps:
- In a mixing bowl, combine the mixed berries, pineapple and lemon juice; set aside.
- In another mixing bowl, combine the oats, cashew milk, honey and cinnamon and let stand for about 10 minutes.
- To four 16-ounce or eight 8-ounce clear containers with lids (or mason jars), add an even layer of the pineapple-berry mixture to the bottom of each. Next, fill each container to halfway with the overnight oat mixture, then top with more fruit. Refrigerate overnight. In the morning, top with a dollop of yogurt and a sprinkle of granola, and out the door the kids go.
OATMEAL PARFAIT CUPS RECIPE BY TASTY
Here's what you need: ripe bananas, honey, almond extract, rolled oats, cinnamon, full-fat yogurt, raspberry, blueberry, strawberry, sliced almond

Steps:
- Preheat oven to 350°F (175°C.)
- In a medium bowl, mash the bananas into a paste.
- Pour in the honey and almond extract, and mix until well combined.
- Sprinkle on the rolled oats and cinnamon and mix until incorporated.
- Evenly divide the oats into a greased 12-cup muffin tin.
- Use your fingers to mold the oats into a cup shape in each of the muffin cups.
- Bake for 15 minutes, until the oatmeal cups have set.
- Remove the oatmeal cups from the muffin tin and place them on a serving plate.
- Place a spoonful of yogurt in each cup and top with your choice of toppings.
- Enjoy!

Steps:
- Whisk blackberry spread, 1 tablespoon amaretto and 1 teaspoon vanilla in small bowl until smooth.
- Whisk sugar, flour, cornstarch, and salt in heavy medium saucepan to blend. Gradually whisk in milk. Whisk in egg. Add butter. Whisk over medium heat until mixture comes to boil and thickens, about 6 minutes. Boil 1 minute longer, whisking constantly. Remove from heat. Whisk in almond extract, 1 tablespoon amaretto and 1/2 teaspoon vanilla.
- Spoon 1 teaspoon blackberry spread mixture into bottom of each four 1-cup stemmed glasses. Top each with 4 blackberries, then with about 3 tablespoons hot pudding. Repeat layering twice more. Divide any remaining blackberries among glasses. Refrigerate until cold, about 3 hours. (Blackberry parfaits can be prepared 1 day ahead. Keep refrigerated.)
CHILLED BLACKBERRY PARFAITS

- Puree 6 cups blackberries in processor. Pour puree into fine strainer set over 4-cup measuring cup. Press on solids to extract as much juice as possible. Discard solids in strainer. Measure 3 cups puree (reserve any remaining puree for another use). Stir 1 cup grape juice, 1 cup sugar and lemon peel into blackberry puree.
- Pour remaining 7 tablespoons grape juice into small saucepan. Sprinkle gelatin over; let stand until gelatin softens, about 10 minutes. Stir gelatin mixture over medium-low heat until gelatin dissolves, about 1 minute (do not boil). Gradually whisk warm gelatin mixture into puree mixture. Transfer to 8 x 8 x 2-inch glass baking dish. Cover and refrigerate overnight. (Can be made 2 days ahead. Keep chilled.)
- Mix remaining 3 cups blackberries and 4 tablespoons sugar in medium bowl. Let stand at room temperature at least 1 hour and up to 3 hours, tossing occasionally.
- Spoon generous 1/4 cup blackberry gelatin into each of 8 parfait glasses or wine glasses. Top with a few sweetened blackberries. Spoon about 1/3 cup Vanilla Whipped Cream over. Repeat layering. Top with a few more berries. Garnish with mint and serve.
BLACKBERRY BUNCHES OF OATS PARFAIT
My favorite yogurt was getting close to date and I really wanted something to nosh on that was healthy. I also buy a lot of cereal to snack on because my dietitian said it was so much better for me than potato chips and other fatty snacks. This was very yummy!

- Beginning with the cereal, make layers of the cereal and yogurt.
- If using the banana, slice and include in layers.
- NOTE: Use any flavor yogurt you like. If using the banana, some of the best yogurt flavors are blueberry, strawberry, banana cream pie, and raspberry. You can also make these bigger for dessert buy using 2 kinds of yogurt and different cereal or cookies.
