- In a bowl, dissolve gelatin in water. Stir in the raspberries, pineapple and salt. Pour half into an 8-cup ring mold coated with cooking spray; refrigerate for 30 minutes or until firm. Let remaining gelatin mixture stand at room temperature., In a bowl, beat cream cheese and sour cream until smooth. Carefully spread over gelatin in mold; top with remaining gelatin mixture. Refrigerate for 6 hours or until firm.

GRAMMY'S FAMOUS RASPBERRY JELLO MOLD
I make this a few times a year in December and November as a tribute to my Grandmother. This was her signature family recipe and we often make it on Christmas or Thanksgiving in remembrance of her.

- Add nearly the whole medium-sized jar of applesauce and the raspberries.

- Drain pineapple, reserving juice; set pineapple aside. Place reserved juice in a small saucepan. Sprinkle with gelatin; let stand for 1 minute or until softened. Heat over low heat, stirring until gelatin is completely dissolved. Remove from the heat., In a food processor, combine cranberries and oranges; cover and pulse until chunky. Add honey and pineapple; cover and pulse just until blended. Stir in juice mixture. Transfer to a 6-cup mold coated with cooking spray. Refrigerate until firm., Unmold onto a serving platter. Serve with whipped cream if desired.

This recipe is a Raspberry gelatin, combined with crushed pineapple and homemade whole cranberry sauce, is chilled in a ring mold and served with a cream cheese and sour cream dressing.

- 1. In a large bowl prepare the Jell-O according to package directions. Add the crushed pineapple, and cranberries,stirring with a fork to break up the sauce. Chill until partially set about 40 minutes; pour into a ring mold. --- In a medium bowl combine cream cheese, sugar and sour cream. When the Jell-O has set completely, unmold it onto a serving plate. Place dressing in a bowl in the center of the ring. Sprinkle dressing with walnuts for presentation.
PINEAPPLE LIME JELL-O MOLD
My mom made this at every holiday celebration. Very nostalgic. Very green. MMM MMM good! (Cook time is fridge time).

- Drain pineapple and reserve liquid.
- Spray Jello mold or bowl with PAM cooking spray.
- Dissolve Jell-o in 2 cups of boiling water, stirring for a few minutes.
- Add enough cold water to the reserved pineapple juice to equal 1.5 cups, and add to Jell-o mixture.
- Whisk in about 8 oz. sour cream (mom used a little less).
- Dump pineapple inches.
- Chill until set.
- If you want to unmold the dish, set bowl into warm water for 30 seconds, and place plate on top of bowl.
- Invert the bowl onto the plate and let the jell-o slide out.
- Enjoy!

GINGER PINEAPPLE JELLO MOLD
This is lovely with a nice ham dinner. Don't use fresh pineapple or fresh ginger - the enzymes will prevent the gelatin from setting. And for a summer variation: I added one heaping cup of blueberries to the mix when I added the pineapple (left out the ground ginger), yummy! **and ingredients/directions slightly changed to address the consistency issue mentioned by reviewer - it should set better in a mold now!

- Drain pineapple, reserving juice in a measuring cup.
- Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
- Add ginger ale to the reserved pineapple juice making about 1 to 1 1/4 cup of liquid. Stir the ground ginger into this liquid.
- Stir the reserved pineapple juice, ginger ale & ginger into the jello.
- Refrigerate about 1 1/4 hours or until slightly thickened (consistency of unbeaten egg whites).
- Stir in pineapple (& blueberries if doing summer variation!). Pour into a 5-cup mold.
- Refrigerate 4 hours or until firm. Unmold.
