A chili that is best when prepared with fresh vegetables, but still delicious with canned or frozen. Serve by itself or over rice.

1 tablespoon olive oil
1 onion, chopped
2 red bell pepper, seeded and chopped
1 jalapeno pepper, seeded and minced
10 fresh mushrooms, quartered
6 roma (plum) tomatoes, diced
1 cup fresh corn kernels
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 tablespoon chili powder
2 (15 ounce) cans black beans, drained and rinsed
1 ½ cups chicken broth or vegetable broth
1 teaspoon salt

Steps:

  • Heat oil in a large saucepan over medium-high heat. Saute the onion, red bell peppers, jalapeno, mushrooms, tomatoes and corn for 10 minutes or until the onions are translucent. Season with black pepper, cumin, and chili powder. Stir in the black beans, chicken or vegetable broth, and salt. Bring to a boil.
  • Reduce heat to medium low. Remove 1 1/2 cups of the soup to food processor or blender; puree and stir the bean mixture back into the soup. Serve hot by itself or over rice.

This is an excellent dish alone or as a side dish for both hot and cold entrees. Best if allowed to stand at least an hour in order to marinate the flavors. Can even be made a day or two ahead, as the flavors get even better.

1 cup finely chopped onion
2 teaspoons minced garlic
4 tablespoons olive oil
6 tablespoons coarsely chopped fresh cilantro
1/2 teaspoon lightly toasted,freshly ground cumin seed
2 jalapeno chiles, minced
4 tablespoons cider vinegar
2 tablespoons red chile honey (see ingredients below)
2 teaspoons salt
1 1/2 cups fresh corn kernels (or 1 15 oz. can whole kernel corn)
6 large coarsely chopped ripe roma tomatoes
1 (15 ounce) can black beans
1 cup honey
1 tablespoon red chili powder
1/4 teaspoon ground cumin
1/4 teaspoon garlic salt

Steps:

  • To make red chile honey: Mix honey, red chile powder, cumin and garlic salt.
  • Combine all ingredients in a small saucepan on low heat and cook for 1 minute, stirring constantly.
  • To make salsa: Lightly saute the onion and garlic in the olive oil until soft.
  • Mix the chopped cilantro, cumin seed, jalapeno, vinegar, honey, and salt together in a large mixing bowl.
  • Add the corn, tomatos, black beans and sauteed ingredients.
  • Stir to combine thoroughly.

1/2 lb small shell pasta
3 tablespoons oil
2 medium onions, chopped
1 red bell pepper, seeded and chopped (or use green bell pepper)
1 jalapeno pepper, seeded and finely chopped (optional)
1 -2 tablespoon fresh minced garlic (or to taste)
3/4 cup canned corn niblet
1 (14 ounce) can diced tomatoes
3/4 cup salsa (mild or medium)
1/2 cup black olives, sliced
2 tablespoons taco seasoning mix (can use more)
1 (15 ounce) can black beans
1/4 cup softened cream cheese (can use more to taste)
salt and black pepper (to taste)
1 1/2 cups grated cheddar cheese (optional)

Steps:

  • Cook the pasta in a large pot of boiling salted water until al dente; drain and set aside.
  • In a large skillet heat oil over medium heat; add in onions, red or green bell pepper and jalapeno pepper; saute for about 3-4 minutes.
  • Add in garlic and saute for 2 minutes.
  • Add in corn, diced tomatoes (with juice) salsa, olives and taco seasoning; simmer uncovered for about 30-35 minutes (you can simmer longer if desired) stirring occasionally.
  • Add in cream cheese, stir until heat through and combined.
  • Add in black beans and cooked pasta, stir until combined and heated through.
  • Season with salt and black pepper to taste.
  • Top with grated cheddar cheese if desired.

1 large onion, chopped

Olive oil for greasing
1 1/2 lb plum tomatoes (about 6 large)
1 medium onion, chopped
1 tablespoon chopped canned chipotle chiles in adobo plus 2 teaspoons sauce from can
1 (2 1/2-inch) fresh jalapeño, seeded and remainder chopped (1 tablespoon)
1 tablespoon fresh lime juice
3/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped fresh cilantro
Accompaniment: tortilla chips

Steps:

  • Preheat broiler.
  • Oil a 13- by 9-inch roasting pan (not glass). Halve tomatoes lengthwise, then arrange, cut sides up, in roasting pan. Sprinkle onion over and around tomatoes and broil 4 to 5 inches from heat until tomatoes and onion begin to brown, 25 to 30 minutes.
  • Cool to room temperature, about 30 minutes.
  • Transfer tomatoes, onion, and any juices in pan to a food processor and add chipotles with sauce, jalapeño, lime juice, salt, and pepper. Pulse until vegetables are finely chopped.
  • Transfer to a bowl and stir in cilantro. Season with salt.

1 3/4 cups dried black beans
3 large or 4 small dried guajillo chiles
2 tablespoons olive oil
2 medium onions, finely chopped
8 cloves garlic, minced
4 teaspoons ground cumin
1 3/4 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
2 pounds assorted ripe tomatoes, seeded and cut into 1-inch chunks
1/2 cup fresh basil leaves, roughly chopped
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
2 tablespoons balsamic vinegar

Steps:

  • Soak black beans in 3 cups water overnight. (Or place beans in a medium saucepan, and cover with 2 inches of water. Place lid on pan, and bring to a boil. Remove from heat, and let sit for 1 hour.) Drain beans in a colander, and set aside.
  • Set a small skillet over high heat. Place chiles in the pan; toast on both sides until browned and puffed, about 1 minute. Transfer chiles to a small bowl, and cover with 2/3 cup hot water. Let sit 10 minutes. Cut chiles in half, and remove the seeds and stems. Transfer the flesh, along with the poaching liquid, to the bowl of a food processor. Process until a puree forms.
  • Place a medium saucepan over medium heat. Add olive oil, and let warm. Add onions, 3/4 of the minced garlic, and cumin. Cover, and cook until softened and slightly browned, about 15 minutes. Add the chile puree and cook 2 minutes more. Add stock and the reserved black beans. Cover, and cook until beans are soft, about 1 1/2 hours. If beans seem dry, add another 1/2 cup hot water.
  • In a large bowl, toss together tomatoes, remaining minced garlic, basil, salt, pepper, and vinegar. Let sit 5 minutes. Stir half of the tomato mixture into the beans. Cover, and simmer 1 minute more.
  • Divide the chili among 6 bowls. Top with remaining tomato mixture, and serve.
