KIM'S BLACK-EYED PEA DIP

Number Of Ingredients 9

Three 15-ounce cans black-eyed peas, rinsed
10 ounces sharp Cheddar, grated
1/2 cup finely chopped canned pickled jalapenos, juices reserved
1/2 stick (4 tablespoons) unsalted butter, softened
1/4 teaspoon garlic powder
1 medium sweet onion, finely chopped
Salt and freshly ground pepper
Salt and freshly ground pepper
Corn chips, for serving

Steps:

  • In an electric mixer or large mixing bowl, mix together the peas, Cheddar, jalapenos, 3 tablespoons of the reserved jalapeno juice, butter, garlic powder and onion until blended. Season with salt and pepper. Heat the dip in a medium slow cooker and serve it warm with corn chips.

Black-Eyed Pea Bread image

From my Southern Living Cookbook 2003. Sounds unusual, but it's good. Prep time doesn't include bread dough thawing 8 hours.

1 (32 ounce) package frozen bread dough, loaves
1 (16 ounce) package pork sausage (I use Jimmy Dean Sage)
1 (3 1/2 ounce) package pepperoni slices, chopped (I forget to chop)
1 onion, small, chopped
1 (15 7/8 ounce) can black-eyed peas, rinsed and drained
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
3 egg yolks, lightly beaten
1 tablespoon milk

Steps:

  • Thaw bread dough loaves in refrigerator 8 hours or overnight.
  • Cook sausage, pepperoni, and onion in a large skillet, stirring until sausage is well done.
  • Drain well.
  • Cool slightly, and stir in black-eyed peas, cheddar cheese and mozzarella cheese.
  • Roll each loaf of thawed bread dough into a 12 x 5-inch rectangle on a lightly floured surface.
  • Brush on combined egg yolks and milk, spread each loaf evenly with sausage mixture.
  • Roll up, starting with long side, pinch ends to seal.
  • Place seam side down on lightly greased baking sheet.
  • Brush remaining egg yolk and milk mixture over top.
  • Bake at 350 degrees for 30 minutes, cover with foil and bake another 10 minutes.

12 cups water, divided
1 cup dried black-eyed peas
2 cups sliced carrots
2 cups sliced celery
1 1/2 cups chopped onions
1 medium parsnip
1/2 cup split peas
1/2 cup chopped fresh parsley
1/4 cup lightly packed chopped fresh dill
1/2 teaspoon celery salt
1/2 teaspoon salt, to taste
1/4 teaspoon pepper

Steps:

  • In a 2-quart saucepan, bring the black-eyed peas and 4 cups of water to a boil; let stand 1 hour; drain.
  • In an 8-quart stockpot, bring the remaining 8 cups water to a boil.
  • Stir in the black-eyed peas, carrots, celery, onion, parsnip, and split peas.
  • Return to a boil; decrease heat and simmer, uncovered, 40 minutes.
  • Add in the parsley and dill; simmer 35 minutes or until the beans have softened.
  • Stir in the celery salt, salt, and pepper; discard parsnip.
