HAM HOCK AND BEANS

Steps:
- In a medium Dutch oven with a lid, over medium heat, add the oil. When the oil is hot, sear the ham hocks in batches, until brown, about 4 to 6 minutes. Remove the ham hock and set aside. Add the onions. Season with pepper. Saute for 2 minutes. Stir in the beans and bay leaves. Season with pepper. Saute for 1 minute. Add the reserved ham hocks and water. Bring to a boil and reduce the heat to medium low and simmer for 2 hours, or until the meat falls of the bone and the beans are creamy. Remove the bay leaves and season with salt and pepper.
BLACK BEANS IN A PRESSURE COOKER

- In a 6-quart pressure cooker over medium-high heat, pour in 3 tablespoons oil. Add the ham hock and onions and cook until the onions are wilted and the ham hock is lightly browned, about 5 minutes. Throw in the garlic and bay leaf and cook for 1 minute more. Add the beans and give a good stir. Pour in the water; add the remaining tablespoon of oil, 1 tablespoon of salt, and a couple of grindings of pepper. Following the manufacturer's instructions, cover, lock the lid, and bring to high pressure. Lower heat to maintain pressure and start timing. Cook at high pressure for 25 minutes. Remove from heat and let rest for 5 minutes. Release the steam, again following the manufacturer's directions. If the beans are underdone, simmer them with the lid off until tender. Remove bay leaf and discard. Pick meat from ham hock and add to beans; discard the bone. Taste and adjust seasoning.
- Cook's note: The oil prevents the beans from foaming and clogging the steam vent of the pressure cooker.
HAM HOCKS AND BEANS
Notice that this recipe doesn't call for ANY spices...not even salt and pepper. Yet I have nothing but great memories for mom's ham hocks and beans. Other recipes include garlic, oregano, bay leaf and pepper. Give it a try with or without embellishments.

- Rinse the beans, soak in water overnight.
- Put the beans and the water into a large pan.
- Add the ham hocks and chopped onions.
- Bring to a boil, reduce to a simmer and cook all day, up to 8 hours.
- More water can be added if needed or desired, depending on how thick you like your soup.

CUBAN BLACK BEANS
This classic recipe is adapted from "Tastes Like Cuba," by Eduardo Machado and Michael Domitrovich. The secret is the homemade sofrito, but bottled will do in a pinch.

- Cut 1 green pepper into 1-inch squares. Smash and peel 4 of the garlic cloves. Put the green pepper and garlic into a large pot with the beans, ham hock, bay leaves and 1 tablespoon salt. Add 2 quarts water and bring to a boil. Cover the pot and simmer until the beans are tender, an hour or more.
- Meanwhile, make a sofrito. Cut the remaining ½ green pepper into ¼-inch dice. Peel and finely chop the remaining garlic. Heat the olive oil in a very large skillet over medium-high heat. Add the bacon and cook, stirring occasionally, until it starts to brown, about 5 minutes. Add the green pepper and onion and cook, stirring, until slightly softened, about 3 minutes. Add the garlic, jalapeño (leave out the seeds if you don't want it too spicy), oregano, cumin, black pepper and 2 teaspoons salt and stir for another minute. Pour in the vinegar and scrape any browned bits from bottom of pan with a wooden spoon. This is your sofrito.
- When the beans are cooked, discard the bay leaf. Remove and set aside the ham hock and let it cool. Transfer 1 cup of beans to small bowl, mash them into a paste with the back of a fork and return to the pot. Add the sofrito, then the sugar. Pull the meat from the ham hock, leaving behind any white sinew or gristle. Chop the ham into ½-inch pieces and return it to the bean pot.
- Stir the beans well and bring to a boil over medium heat, then lower to a simmer and cook, uncovered, for 20 minutes or so, skimming any foam from the top. Taste for salt and serve with white rice.

HAM HOCKS AND BEANS
Comfort food at its best. Many people will tell you to soak your beans first (however, I have been told that you should soak dry beans when using a pressure cooker. Please follow manufactorers instructions in this case). I never do. I just wash them and cook them as below. For a really hearty winter meal, serve these with a loaf of hot fresh bread or a pan of corn bread and a pan of old fashioned crisp fried potatoes. These may also be made in the pressure cooker and crockpot.

Steps:
- Wash beans and remove all gravel and such.
- Place beans, ham hocks, onions and garlic in a large dutch oven filled with water.
- Add spices.
- Bring to boil.
- Simmer on med-low heat for 4 to 5 hours, adding more water as needed.
- Remove hamhocks when they are tender and falling apart; allow to cool so they can be handled.
- Remove meat from ham hocks (discarding fat and bones) and return to the soup.
BLACK BEANS
Really good black beans with out all the soaking. Could be converted to vegetarian by leaving out the ham hock and adding more seasoning.

Steps:
- Over medium heat, In a heavy kettle or dutch oven, sauté onions in oil till soft and transparent.
- Add garlic and sauté till fragrant and lightly browned.
- Add more oil as necessary.
- Add water, beans, ham hock (or bone) bay leaves, parsley, salt and cumin.
- Bring to a boil over medium-high heat.
- Skim surface as required.
- Reduce heat to low and simmer, partially covered for about two hours, or until several beans test tender (add more water if cooking liquid reduces to level of beans).
- Remove ham hock from beans.
- If beans are still watery you can continue to simmer or use an immersion blender or the back of a large spoon to puree some of the beans.
- Dice optional meat and put into beans.
- (If using country ham leave salt out of beans) Adjust seasoning.
- Prepare rice as directed.
- When cool enough to handle, remove ham from hock, discard bone and skin, and cut meat into bite-size pieces; set aside.
- Serve beans over rice with a couple chunks of the hock meat on top.
- Garnish with more chopped parsley.
- Note, I have cilantro as an option as it does have a very strong, distinct, taste that some people do not like.

- Place peas in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse peas, discarding liquid; set aside., In the same pan, saute onion in oil until tender. Add the pork belly, garlic, bay leaves, thyme, pepper flakes and pepper; cook 1 minute longer., Add the broth, ham hocks and peas; bring to a boil. Reduce heat; simmer, uncovered, for 35-40 minutes or until peas are tender, stirring occasionally and adding more water if desired., Discard bay leaves. Remove ham hocks; cool slightly. Remove meat from bones if desired; finely chop and return to pan. Discard bones. If desired, top with additional fresh thyme.
