Amazing vegetarian enchiladas stuffed with black beans, broccoli, bell pepper and spinach, topped with homemade red sauce. My favorite enchilada recipe! Recipe yields 8 enchiladas, enough for about 4 servings.

2 cups homemade enchilada sauce
2 tablespoons olive oil
1 cup chopped red onion (about 1 small red onion)
1 red bell pepper, chopped
1 bunch of broccoli or 1 small head of cauliflower (about 1 pound), florets removed and sliced into small, bite-sized pieces
1 teaspoon Frontier Co-op Ground Cumin
1/4 teaspoon Frontier Co-op Ground Cinnamon
5 to 6 ounces baby spinach (about 5 cups, packed)
1 can (15 ounces) black beans, drained and rinsed, or 1 1/2 cups cooked black beans
1 cup shredded Monterey Jack cheese, divided
1/2 teaspoon salt, to taste
Freshly ground black pepper, to taste
8 whole wheat tortillas (about 8" in diameter)
Handful of chopped cilantro, for garnishing

Steps:

  • Preheat oven to 400 degrees Fahrenheit with one rack in the middle of the oven and one in the upper third. Lightly grease a 9 by 13-inch pan with olive oil or cooking spray.
  • In a large skillet over medium heat, warm the olive oil until simmering. Add the onions and a pinch of salt. Cook, stirring often, until the onions are tender and translucent, about 5 to 7 minutes. Add the broccoli and bell pepper, stir, and reduce heat to medium-low. Cover the skillet (I don't have a lid for mine, so I just placed a cookie sheet on top). Cook, stirring occasionally, for about 8 to 9 minutes, or until the broccoli is brighter green and just starting to turn golden on the edges.
  • Add the cumin and cinnamon to the skillet and cook until fragrant, about 30 seconds. Add the spinach, a few handfuls at a time, stirring until it has reduced in size. Repeat with remaining spinach and cook until all of the spinach has wilted.
  • Transfer the contents of the pan to a medium mixing bowl. Add the drained beans, 1/4 cup cheese and a drizzle of enchilada sauce (about 2 tablespoons). Season with 1/2 teaspoon salt and some freshly ground black pepper, to taste.
  • Assemble the enchiladas: Pour 1/4 cup enchilada sauce into your prepared pan and tilt it from side to side until the bottom of the pan is evenly coated. To assemble your first enchilada, spread ½ cup filling mixture down the middle of a tortilla, then snugly wrap the left side over and then the right, to make a wrap. Place it seam side down against the edge of your pan. Repeat with remaining tortillas and filling.
  • Drizzle the remaining enchilada sauce evenly over the enchiladas, leaving the tips of the enchiladas bare. Sprinkle the remaining shredded cheese evenly over the enchiladas.
  • Bake, uncovered, on the middle rack for 20 minutes. If the cheese on top isn't golden enough for your liking, carefully transfer the enchiladas to the upper rack of the oven and bake for an additional 3 to 6 minutes, until sufficiently golden and bubbly.
  • Remove from oven and let the enchiladas rest for 10 minutes (they're super hot!). Before serving, sprinkle chopped cilantro down the center of the enchiladas. Serve immediately.

2 tablespoons cumin powder, divided
1 teaspoon chili powder
3 (15 ounce) cans black beans, drained & rinsed
1 cup organic shredded white cheddar cheese
1 (4 1/2 ounce) chopped green chilies, drained
1 teaspoon fresh garlic, minced
2 tablespoons unfiltered extra virgin olive oil
12 wheat flour tortillas

Steps:

  • Preheat oven to 400 degrees.
  • In a small bowl combine the tomato sauce with 1 tbsp of cumin and 1 tsp chili, whisk and set aside.
  • In a medium bowl combine the black beans,green chilies, the remaining cumin and garlic. Mix well.
  • Put some olive oil on the bottom of a large casserole pan. Pour 1 cup of tomato sauce mixture onto the bottom.
  • Take a tortilla, put 2 heaping tbsp of the bean mixture down the center, then roll up the tortilla and place it in the casserole pan. Continue until all tortillas are filled and rolled.
  • Add sauce to the top of the tortillas in the the casserole pan. Make sure all are covered with the sauce.
  • Cover the whole thing with the grated cheese.
  • Bake the enchiladas for 20-25 minutes until the cheese melts.

This was based on a Cambells recipe that called for chicken instead of black beans. I like it better with beans than with chicken. To make this recipe totally vegetarian, you could use cream of mushroom soup.

8 ounces low-fat sour cream
1 cup picante sauce (I use Pace medium)
3 teaspoons chili powder
2 (15 ounce) cans black beans, drained
1 cup shredded cheddar cheese
8 flour tortillas
2 medium tomatoes, chopped
2 green onions, sliced thinly

Steps:

  • Combine soup, sour cream, picante sauce, and chili powder.
  • In a separate bowl, mix beans, cheese, and 1 cup of sauce mixture.
  • Divide bean mixture into tortillas.
  • Roll with seam down in a 9x13 pan.
  • Pour remaining sauce over top of enchiladas.
  • Cover and bake at 350 for 40 minutes.
  • (I like to remove cover for last 10 minutes of bake time so that it gets a little crispy.) After baking, top with green onion and tomato.

This recipe is very tasty and I like that it is gluten free. I have tweaked it and made it my own. I always try to buy Organic as I don't want the chemicals and GMO on my plate, which some corn has. Besides, the food just tastes better. I doubled the recipe and I made my own tortillas and cooked the dry beans in my pressure cooker. But you can buy the canned beans and ready made tortillas. It will save you a lot of time if you do. The sauce that goes with this is called Charred Tomato Sauce. You should make this as it really compliments the dish. I even added some Salas to my sauce to kick the flavour up a notch.

8 corn tortillas
1 tablespoon olive oil
2 garlic cloves (chopped)
1 cup red bell pepper (chopped)
2 (12 ounce) cans black beans (drained, rinsed and lightly mashed)
1 bunch scallion (minced)
5 ounces frozen corn (thawed)
1/4 teaspoon dried oregano (I used Mexican)
1/2 teaspoon cumin
1/4 teaspoon dried thyme
1 -2 tablespoon cider vinegar
salt and pepper
10 ounces monterey jack cheese (crumbled-I used Vegan cheese)
1 1/2 lbs plum tomatoes
2 serrano chilies (or 1 jalapeno chili)
1/3 cup white onion (chopped)
1/2 teaspoon salt (or to taste)
1 tablespoon vegetable oil
1/4 cup cilantro (chopped and fresh)

Steps:

  • Heat the oil in a skillet and saute the garlic and peppers for 3 to 4 minutes. Peppers should stay crunchy. Remove from the heat.
  • Stir in the mashed beans, corn, scallions, herbs, vinegar, salt and pepper. Set aside.
  • Heat a non-stick skillet. Soften each corn tortilla before filling it by placing in the hot skillet and swirling it around for 30 seconds on each side. Dip the tortilla into the warmed Charred Tomato Sauce.
  • NOTE: I didn't dip mine, I held the tortilla in my hand and put the sauce onto it with a ladle then swirled it around like you would sauce on a pizza. I found this easier. You use less sauce as well.
  • Lay the tortilla into the baking dish or a plate and put 2 tablespoons of the bean mixture and a little cheese on it then roll up and put seam side down into the dish you are going to bake this inches.
  • Continue filling and rolling the tortillas until you are done repeating the above steps.
  • I poured the remaining sauce I had over the enchiladas and sprinkled it with more cheese.
  • I baked my casserole at 350 for 40 minutes. Best to check after 30 minutes as my oven is slow, and you don't want to burn this.
  • If you make these the day ahead store in the fridge then bake when you are going to eat them.
  • You can serve these with Sour Cream if you wish.

This is a tasty enchilada recipe that I made up when I stopped eating meat. Not vegan, but a great crowd pleaser. You can substitute different types of beans depending on preference. It is also possible to use just cheese for the topping, but the cream does help with flavor and consistency a lot.

1 green bell pepper, diced
2 tablespoons olive oil
8 ounces cream cheese
1 lb vegetarian refried beans
15 ounces canned red kidney beans or 15 ounces canned black beans
1/2 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
1 cup salsa, divided
12 flour tortillas
1 cup shredded cheese
1/4 cup heavy cream

Steps:

  • To make enchilada filling: saute bell pepper in warm olive oil in a large skillet until tender. Add cream cheese and refried beans and heat until melted, stirring often.
  • Add kidney or black beans to the skillet, all spices, and 1/2 cup salsa. Heat through. Filling will be very soupy. You may want to let it cool to thicken before filling tortillas.
  • Grease 9x13 baking pan. Place 1/3-1/2 cup of filling in each tortilla. Tuck ends of tortilla in, and roll up. Place side by side in baking pan.
  • Heat cheese and cream in a saucepan until melted and creamy. Pour over enchiladas. Top each enchilada with a spoonful of remaining salsa.
  • Bake at 400°F for 30 minutes. Allow to cool at least 10 minutes or filling will be too hot and runny,.
