CHILI TUNA PIZZA
Pizza was very popular in our house a while back, and when i made this favorite recently for my brother, he loved it. It's so simple to make using pita bread to make a thin & crispy base.

Steps:
- Preheat the oven to 180degC.
- Chop the onion and other vegetables to pieces about 1cm cubes. Heat a frying pan, drain the olive oil from the tuna can into the pan adding the onion,garlic (and optional sun-dried tomato and extra chili).
- When the onion is soft, add the capsicum & zucchini and stir until zucchini is starting to cook and remove from heat.
- Put a little olive oil around the edge of the pita bread with a pastry brush to ensure the edges don't burn (as the bread is thin it burns easily).
- Spread your pizza sauce over the bread.
- spread over with a thin layer of cheese (to stop your topping from falling off while you're eating it).
- Empty the frying pan contents onto your prepared pita bread bases and add the mushrooms and the tuna.
- Scatter the remaining cheese over the pizza and place in the oven for about 20 minutes.

TWICE-COOKED CHILE PORK
This is a popular Sichuan dish, which goes perfectly with steamed rice. Pork belly is boiled, sliced and then stir-fried with sweet bean paste, chile bean paste, and green peppers.

Steps:
- Place pork belly into a pot and cover with water. Add ginger and Sichuan peppercorns. Bring to a simmer over medium-high heat; reduce heat to medium-low. Cover and cook until some of the fat has rendered out, about 20 minutes.
- Remove the pork from the pot and cool to room temperature, about 15 minutes. Drain. Cut the pork into thin slices, about 1/8 inch thick. Return pork slices to pot. Stir in chile bean paste, sweet bean paste, and sugar. Cover and cook over medium heat until the pork is tender, 15 to 20 minutes.
- Heat 1/2 teaspoon oil in a wok over medium heat. Cook and stir green bell pepper and salt until starting to soften, 3 to 5 minutes. Transfer to a dish.
- Heat remaining 2 1/2 tablespoons oil in a wok over medium-high heat. Cook and stir pork until pieces begin to shrink and brown, 3 to 5 minutes. Return green bell pepper to the wok. Cook and stir until fragrant, about 2 minutes.

CONTEST-WINNING PEPPERONI PIZZA CHILI
Steps:
- In a Dutch oven, cook the beef, sausage, onion, green pepper and garlic over medium heat until meat is no longer pink; drain., Stir in the salsa, beans, pizza sauce, pepperoni, water, chili powder, salt and pepper. Bring to a boil. Reduce heat; cover and simmer until heated through, about 20 minutes. Sprinkle servings with cheese. Freeze option: Before adding cheese, cool chili. Freeze chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary. Sprinkle each serving with cheese.

CHILI PIZZA
When I make my chili (Recipe #99698) it makes an awful lot, so I try to come up with different things to do with the leftovers. I got to thinking that this may actually be good--give it a try. Kids LOVE it!

Steps:
- Roll out pizza dough onto a pizza stone or an aluminum pan if you don't have a stone.
- Spread chili on top of dough as you would sauce in regular pizza.
- Top with Cheese.
- Place in 425 degree oven for 15-20 minutes or until crust browns and cheese it bubbly.
- Place all toppings in bowls on table, slice pizza and serve with toppings.
- Everyone adds what they like to the top and mmm. If you like you can also bake with the toppings already on the pizza but we like the fun of putting them on after.
