SLOW-COOKER BLACK-BEAN SOUP WITH TURKEY



Slow-Cooker Black-Bean Soup with Turkey image

2 red onions, halved
2 tablespoons extra-virgin olive oil
3 medium carrots, cut into large chunks
4 cloves garlic, smashed
1 tablespoon all-purpose flour
1 pound dried black turtle beans, picked over, rinsed and drained
1 smoked turkey drumstick (1 3/4 to 2 pounds)
2 tablespoons pickling spice, tied in cheesecloth
3/4 teaspoon red pepper flakes
Kosher salt and freshly ground pepper
1/2 cup chopped fresh cilantro
Sour cream and/or lime wedges, for garnish (optional)

Steps:

  • Set aside half an onion and chop the rest. Heat the olive oil in a large skillet over medium-high heat. Add the chopped onions, carrots and garlic; sprinkle with the flour and cook, stirring, until slightly browned, 5 minutes. Add 2 tablespoons water and scrape up any browned bits from the pan. Transfer the vegetables and cooking liquid to a slow cooker. Add the beans, turkey drumstick, pickling-spice packet, red pepper flakes and 8 cups water. Cover and cook on low 6 hours.
  • Remove the drumstick and shred the meat; keep warm. Remove about 2 cups beans from the cooker and blend until smooth (or partially blend with an immersion blender). Return the beans and turkey meat to the soup. Season with salt and pepper.
  • Mince the reserved 1/2 onion. Ladle the soup into bowls and top with the cilantro and minced onion. Garnish with sour cream and lime, if desired.

2 cans (14-1/2 ounces each) reduced-sodium chicken broth, divided
2 cups frozen corn
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 jalapeno pepper, seeded and chopped
2 tablespoons minced fresh cilantro
3 teaspoons chili powder
1/2 teaspoon ground cumin
1 tablespoon cornstarch
18 tortilla chips
Shredded reduced-fat Mexican cheese blend, optional

Steps:

  • Place a large nonstick saucepan coated with cooking spray over medium heat. Add chicken; cook and stir 4-6 minutes or until no longer pink. Reserve 2 tablespoons broth; add remaining broth to pan. Stir in corn, beans, tomatoes, jalapeno, cilantro, chili powder and cumin. Bring to a boil. Reduce heat; simmer, uncovered, 15 minutes. , Mix cornstarch and reserved broth until smooth; gradually stir into soup. Bring to a boil; cook and stir 2 minutes or until thickened. 5 ½ cups water
1 ½ cups dry black beans
3 cloves garlic, minced
1 bay leaf
¼ teaspoon ground allspice
2 cups chicken broth
1 tablespoon tomato paste
1 tablespoon water
¼ pound Italian sausage, cut into 1/2 inch pieces
½ teaspoon Worcestershire sauce
1 pound sweet potatoes
3 green onions
salt to taste
ground black pepper to taste

Steps:

  • In a 4 quart saucepan, combine beans, garlic, bay leaf, allspice, broth and 5 1/2 cups water. Cook, partially covered, until beans are tender, about 50 minutes. Discard bay leaf.
  • In a blender puree 1 cup cooked beans with 1 cup cooking liquid, and return to pan.
  • In a small bowl, stir together tomato paste and 1 tablespoon water; stir into beans with sausage and Worcestershire sauce. Simmer soup, covered, for 15 minutes. Soup may be prepared up to this point 3 days ahead.
  • While soup is simmering, peel sweet potatoes and cut into 1/2 inch pieces. Steam until tender, about 10 minutes. Stir potatoes, 3 chopped scallions, and salt and pepper to taste into soup. Serve soup garnished with scallion greens.

This is excellent comfort food on a brisk cold snowy day. This is a thick soup I put together with what i had in the kitchen one day. Too cold and snowy to run to the store. My husband liked it. 2 large chicken breasts with bone, skinless
6 cups water
2 large carrots, trimmed and peeled
4 large plum tomatoes, washed and trimmed
1/2 large white onion, cut in half
4 or 5 cloves garlic
1 ounce smoked bacon, diced
2 16-ounce cans black beans, rinsed and drained
1 tablespoon fresh oregano leaves
Pinch freshly ground black pepper
Red chili flakes for garnish
4 tablespoons grated dry aged cheese like Cheddar or a dry goat

Steps:

  • Put chicken breasts in water in covered pot, bring to boil and simmer about 20 minutes, until done. Remove from broth and set aside. Reserve broth.
  • Slice carrots, tomatoes and onion in a food processor with steel blade.
  • Mince garlic in processor to make 1 tablespoon.
  • Add the carrots, tomatoes, onion, garlic, bacon and beans to 4 cups of the reserved broth; bring to boil. Reserve remaining broth for another occasion. Reduce heat and simmer, covered for 20 minutes, to blend flavors.
  • Meanwhile remove chicken from bones.
  • When soup is ready, add oregano leaves, pepper and chicken and cook just long enough to heat chicken.
  • Spoon stew into bowls; garnish with hot chili flakes and cheese.

1/2 cup unsalted butter
1/2 cup diced carrot
1/2 cup diced onion
1/2 cup diced celery
1 cup broccoli stem, peeled and diced
2 teaspoons dried thyme

1/4 cup dry white wine
4 cups chicken stock, hot
1 tablespoon Worcestershire sauce

1 cup broccoli floret
2 cups heavy cream
salt & fresh ground pepper, to taste
2 tablespoons cornstarch, mixed with a small amount of warm water (optional)

Steps:

  • In 1/4 cup butter, saute carrots, onion, celery and broccoli stems for 5 minutes.
  • Add thyme, oregano and basil; saute 5 minutes more.
  • Add wine and deglaze pan.
  • Add hot chicken stock and reduce by one-third.
  • Add Worcestershire sauce, Tabasco, smoked chicken, beans and broccoli florets; simmer 5 minutes.
  • Add cream, simmer 5 minutes more and season to taste (thicken with cornstarch if desired).
  • Drop in remaining butter, piece by piece, stirring until melted and serve immediately.
  • Smoked Chicken: On a covered grill, slightly smoke boneless chicken, cooking to medium rare (about 30 minutes).

I can easily make this after work, even if I have to prep everything from scratch. The original recipe was adapted from a Better Homes and Gardens Cookbook. It called for 1 lb of dried black beans but for us, canned works best on a weeknight. I've used either 2 or 3 cans of beans, it depends on how thick you like your bean soup. I think the coriander and sherry are the key to it's taste.

1 cup chopped onion
1 cup chopped celery
1 red bell pepper, chopped

1 quart chicken stock
1 teaspoon ground coriander

1 lb kielbasa or 1 lb smoked sausage (halved lengthwise and sliced orq uartered and sliced)
3 tablespoons dry sherry

Steps:

  • In a Dutch oven or 6qt stockpot saute onion, celery, bell pepper, and garlic in olive oil until tender; add beans, tomatoes, chicken stock, coriander, red pepper flakes and salt (if needed); Bring to boiling, reduce heat, cover and simmer for at least 30 minutes.
  • In the meantime (optional) cook sausage in a nonstick pan and drain; set aside (we like the flavor a little better that way).
  • Add sausage& dry sherry; stir 2-3 minutes or until heated through.
  • Serve soup with sour cream, and shredded cheddar if desired; and a nice crusty bread.

SMOKEY BLACK BEAN SOUP

I made this when I was coming down with cold symptoms and wanted a comforting soup that I could taste despite my stuffy nose. I thought it was geat so I thought I'd share. Please note: There is NO substitution for smoked paprika. Servings are totally guessed.

Steps:

  • Heat the oil in a pot over med heat.
  • Add the onions, celery and garlic and saute for about 5 minutes.
  • Add the broth, tomatoes, cilantro, cumin, and smoked paprika. Bring to a soft boil. Reduce heat, and cover and simmer for 20 minutes.
  • Add the black beans and simmer for an additional 10 minutes.
  • Stir.
  • At this time, if desired, puree 1/3 to 1/2 of the soup for a thicker texture. Totally optional.
  • Add salt, if needed.

A hearty bean and chicken stew flavored with chorizo and chipotle chilies. It takes a little time for the flavors to come together, but the process is easy and the results are worth the wait.

1 pound dried black beans
Kosher salt
2 pounds chicken drumsticks or thighs
Freshly ground black pepper
1 tablespoons canola or vegetable oil
6 ounces smoked Mexican or Spanish chorizo, cut into 1/4-inch slices
8 scallions, finely sliced, greens and whites reserved separately
2 Serrano peppers, 1 finely chopped (about 2 tablespoons), the other thinly sliced for garnish
4 medium cloves garlic, minced (about 4 teaspoons)
2 teaspoons ground cumin
2 whole chipotle peppers in adobo sauce, finely minced, plus 1 tablespoon sauce from can
1 1/2 quarts low sodium store-bough or homemade chicken broth
2 bay leaves
Sliced avocado, for serving
Fresh cilantro leaves, for serving
Sour cream or Mexican-style crema, for serving
1 lime, cut into 8 wedges

Steps:

  • Place black beans in a large bowl and cover with 1 gallon of water. Add 3 tablespoons salt and stir until dissolved. Cover and set aside at room temperature overnight. (See note).
  • The next day, season chicken on all sides with salt and pepper. Heat oil in a large Dutch oven or saucepot over medium-high heat until shimmering. Add chicken and cook without moving until well browned on first side, about 5 minutes. Flip chicken and cook until second side is browned, about 3 minutes longer. Remove chicken from pot with tongs and set aside on a large plate.
  • Add chorizo to pot and cook, stirring occasionally, until chorizo is crisp and starting to char, about 4 minutes. Add scallion whites, chopped Serrano, and garlic. Cook, stirring and scraping up browned bits from bottom of pan until fragrant, about 2 minutes. Add cumin and cook, stirring, until fragrant, about 30 seconds. Add chopped chipotles and their sauce and cook, stirring until fragrant, about 1 minute. Add broth and bay leaves. (If using canned beans, see note).
  • Drain and rinse beans and add to pot. Nestle chicken pieces into beans. Bring to a boil, reduce to a bare simmer and cook, uncovered, stirring occasionally, until beans and chicken are tender, 45 minutes to 1 hour.
  • Remove and discard bay leaves and skins from chicken. Using a ladle, carefully transfer 2 cup of beans and chorizo with liquid to a blender. Blend on high speed until completely smooth, about 1 minute. Stir mixture back into pot. (If a thicker soup is desired, repeat this process until it as thick as desired)

Steps:

  • Pick over and rinse beans. Place in large bowl and cover completely with cold water. Let the beans soak overnight (or at least 8 hours). THE NEXT DAY: Drain the beans and transfer them to a medium saucepan. Add the 2 cups water and bay leaf. Bring to boil over medium heat and cook for 15 minutes. Reduce the heat to low and simmer, uncovered, for about 20 minutes, until the beans are tender. Drain beans and discard bay leaf. Preheat oven to 400 degrees F. Place a heavy stockpot over medium heat for about 1 minute, then spray it twice with the vegetable oil. Add the broccoli stems, carrot, celery and onion. Cover, reduce the heat to low, and cook for 5 minutes, stirring once or twice. Stir in the thyme, basil, and wine. Simmer, uncovered, for about 15 minutes, until the wine has been reduced by half. In the meantime, coat the chicken thoroughly with the barbecue sauce and bake on the top shelf of the oven at 400 degrees F for 10 minutes. Remove the chicken from the oven and allow it to cool just long enough to handle. Cut the chicken into small cubes. Add the chicken, chicken stock, and beans to the stockpot. Steps:

  • Pick over and rinse the beans. Put them into a large bowl and cover completely with cold water. Let the beans soak overnight (or at least 8 hours).
  • Drain the beans and transfer them to a medium saucepan. Add the 2 cups water and the bay leaf. Bring to a boil over medium heat and cook for 15 minutes. Reduce the heat to low and simmer, uncovered, for about 20 minutes, until the beans are tender. Drain the beans and discard the bay leaf.
  • Preheat oven to 400ºF.
  • Place a heavy stockpot over medium heat for about 1 minute, then spray it twice with the vegetable oil. Add the broccoli stems, carrot, celery, and onion. Cover, reduce the heat to low, and cook for 5 minutes, stirring once or twice. Stir in the thyme, basil, and wine. Simmer, uncovered, for about 15 minutes, until the wine has been reduced by 1/2.
  • In the meantime, coat the chicken thoroughly with the barbecue sauce and bake for 10 minutes on the top shelf of the oven. Remove the chicken from the oven and allow it to cool just long enough to handle. Cut the chicken into small cubes.
