salt and pepper
1 1/2 cups sour cream
1/4 cup apple cider vinegar
1/4 cup finely chopped fresh dill
1 1/2 teaspoons sugar
1 small red onion, thinly sliced

Steps:

  • In a colander over a bowl, toss the prepared cucumbers with 2 tsps salt and let drain 1 hour.
  • In a large bowl, mix together sour cream, cider vinegar, dill and sugar.
  • Add in the drained cucumbers and sliced onion. Toss to mix.
  • Season with pepper, as desired.

4 cucumbers (about 2 1/2 pounds), peeled and sliced into 1/4-inch rounds
1 small sweet onion, thinly sliced into rings
Kosher salt
1/2 cup sour cream
1/4 cup chopped fresh dill
2 tablespoons white vinegar
Freshly cracked black pepper

Steps:

  • Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
  • Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
  • Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.

1/3 cup chopped fresh dill
2 tablespoons cider vinegar
1 teaspoon salt
4 dashes hot red pepper sauce (or to taste)
2 cups thinly sliced white onions (3 medium)
1 lb seedless cucumber, thinly sliced with peel (4 cups)

Steps:

  • Mix sour cream, all but 1 T. of the dill, the vinegar, salt, and red pepper sauce in small mixing bowl.
  • Make 3 or 4 layers of onion, cucumber, and sour cream mixture (in that order) in a 2-quart serving bowl. Refrigerate covered 1-2 hours, spooning juice from bottom of bowl over top several times.

4 large cucumbers
cold water
1 small onion, grated
1/2 c sour cream
1/4 c real mayo
2 tsp vinegar
1 Tbsp lemon juice
1 tsp sugar
1 - 3 Tbsp dill
1 tsp salt
1/4 tsp freshly ground black pepper
cayenne pepper

Steps:

  • 1. In a bowl, sprinkle cucumbers with salt and pour in cold water until cucumbers are just covered. Refrigerate for 30 minutes.
  • 2. While cucumbers are chilling, combine the remaining ingredients in bowl - mix well.
  • 3. After 30 minutes, drain cucumbers very well. Carefully cucumbers and sour cream mixture. Chill for at least one hour before serving.
