EASY CHERRY SAUCE
This quick and easy homemade Cherry Sauce is loaded with sweet juicy cherries. We love this cherry topping on cheesecake, waffles, ice cream, and cakes!

Steps:
- In a medium saucepan (off the heat), add water (use 1/3 cup for fresh cherries and 1/4 cup water for frozen cherries). Whisk in 1 Tbsp cornstarch, 1 Tbsp lemon juice, and 2 Tbsp sugar.
- Place over medium heat and whisk constantly until the mixture starts to thicken.
- Add cherries and cook stirring occasionally until sauce is at a light boil (about 6-10 minutes for fresh cherries and 12-15 minutes for frozen). The sauce should be thickened and uniformly bubbling, not just at the edges, then remove from heat.
- Cool to room temperature then cover and store in the refrigerator in a glass mason jar or Tupperware container until ready to use. It will thicken more as it stands.

- Place cherries in a large saucepan. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until soft. Strain juice through a cheesecloth-lined colander; divide cherries among six 1-pint jars., Return juice to saucepan; add sugar and allspice. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Transfer to a large bowl; cool completely., Stir in rum and brandy; pour syrup into bottles over cherries. Cover and let stand for at least 1 month, stirring every week. Store in a cool, dry place up to 3 months.

BING CHERRY CLAFOUTI WITH SWEET ALMOND CREAM
Bing Cherry Clafouti with Sweet Almond Cream is a French dessert recipe made with fresh cherries. And, with almond-flavored homemade whipped cream on top, you don't want to skip treating yourself to this rustic dessert!

- Preheat the oven to 375°. Butter a 10″ pie pan with 1 tablespoon of the butter and sprinkle it with 1 tablespoon of the sugar. Put the cherries in the pan, arranging them in a single layer.
- Sift the 1/4 cup of sugar, flour, and salt into a medium bowl. In a separate bowl, whisk together the eggs, yogurt, vanilla, and orange zest until very smooth. Then whisk in the milk. Pour this egg mixture into the dry flour mixture, whisk to combine, and then pour over the cherries. Dot the surface with the remaining tablespoon of butter, and then sprinkle with the remaining tablespoon of sugar. Bake until puffy and golden brown, about 40 to 45 minutes. Let rest for 20 to 30 minutes before serving.
- Prepare your sweet almond cream by whipping it to a softly firm consistency. Add the powdered sugar and almond extract and whip for a few more seconds to combine.
- This clafouti really is best served warm and fresh, on the day it's made. After the clafouti has had a chance to cool a bit, cut into pie-shaped wedges and add a dollop of soft and sweet almond cream to each slice.

- Bring 2 1/2 cups of water to a boil in a large saucepan over high heat; remove from heat. Add gelatin, stirring 2 minutes, or until gelatin dissolves.
- Stir cola, cranberry sauce, cherries, and chopped pecans into gelatin mixture.; pour into a lightly greased 12-cup ring mold. Cover and chill 8 hours or until firm.

CANNING CHERRY BBQ SAUCE
This cherry chipotle BBQ recipe is one that will be enjoyed throughout the year, even into long winter months. The recipe is delicious and can be used fresh or preserved using a hot water bath or steam canner.

- Pit fresh Bing cherries and roughly cut into smaller pieces.
- Dice white onions and fresh garlic cloves
- Using a non-reactive pot combine all ingredients. Allow to cook on medium-high heat for 20 minutes with the lid on, stir often to prevent scorching. Once done the cherries will be soft in texture.
- Using an immersion blender, puree the ingredients until a smooth texture is achieved.
- Continue to boil on low with the lid off until the mixture has reduced to half, or desired consistency has been met.
- Funnel completed BBQ sauce into pint size jars.
- Wipe rims, apply warmed lids and rings
- Process in a boiling water bath or steam canner for 15 minutes
- Remove jars from the canner and allow to cool for 12 hours. Once cooled check jars to ensure they have seal, any jars which have not sealed should be placed in the refrigerator and used quickly.

- Cut half the pitted cherries in half. Leave the other half whole.
- Add the pitted cherries, ¼ cup of the water, sugar, and salt to a small pot and bring it to a boil over high heat. Lower the heat to medium and simmer for 5 minutes, or until the cherries are soft.

- Put whole, unpitted cherries into a deep, wide, heavy pan. (No need to remove stems.) Add vanilla bean, candied orange, and wine or wine and water. Bring to a boil, lower heat and simmer 30 to 40 minutes, until thickened and reduced by half.
- Let cool for a few minutes, then transfer to a food processor in batches and pulse briefly, just until fruit is in very small pieces. Transfer fruit, pits, stems and liquid to a fine-meshed sieve placed over a large bowl. Press hard with a wooden spoon to extract all the liquid. Cover, and chill 4 hours or overnight.
- To serve, ladle into shallow bowls. Put a scoop of sorbet or ice cream or a spoonful of sliced fruit in the center. Garnish with candied orange peel or a biscotti, if desired.

- While preparing the jam, also make sure you prepare water canner and hot canning jars/lids, per manufacturer instructions and USDA canning guidelines.
- Wash, drain, pit and de-stem cherries. Chop cherries into small pieces (make sure chopped cherries measure out to one quart, which is the equivalent of 4 cups).
- Ladle hot jam into hot jars. Leave ¼ inch headspace in each jar. Remove any air bubbles from filled jar, by inserting plastic utensil into jar between jam and jar to release air that is trapped. Wipe the jar rim very good to ensure no sticky residue is present. Place lid and screw band onto jar. Tighten to fingertip tight only. Using canning tongs, carefully place each jar onto an elevated rack in simmering water (180 degrees) in water bath canner. Repeat the process until all your jars are filled and in canner.
- Lower the filled rack into the simmering water. Make sure that the jars are completely covered with water (water must be an inch over the top of jar). Turn the heat to medium-high. Put a lid on the canner, and bring the water inside to a full, rolling boil. Once the water reaches a rolling boil, process the half-pint jars for 10 minutes. When 10 minutes is up, turn the heat off and take the lid off the pan. Let the jars sit in the hot water for 5 minutes, then carefully remove jars to a dish towel on the counter (Do not place hot jars directly on counter-they might crack, due to temperature variations). Let jars cool, upright, for 12 hours, without moving. Once cool, check to ensure a proper seal has been achieved, then label jars and store in pantry.
