DELICIOUS AND EASY PORK STEW
This is a very simple pork stew recipe that has lots of flavor, add in potatoes, small button mushrooms, carrots.. or whatever you want, it's a great starter recipe! You can really use any cut of pork that you want, I prefer the shoulder because it has the most flavor and is not dry. This tastes even better the following day! Serve this with hot cooked noodles and a crusty French baguette bread.

DELICIOUS ADOBO PORK STEW
This is a sweet and sour stew that everyone will enjoy! To save time the pork can be browned up to a day ahead and refrigerated. This is even better served the following day! You can also add in a small amount of fresh ginger if desired and 2 medium onions can be used in place of the frozen pearl onions. Serve this over hot cooked rice, This stew freezes well, adjust all ingredients to taste.

Steps:
- 1. Heat a large Dutch oven over medium-high heat until very hot, about two minutes. Add the oil. Add the pork and cook, in batches if necessary, until browned on all sides. Transfer the pork to a bowl and set aside.
- 2. Reduce the heat to low. Add the onions, stirring to scrape up the browned bits from the bottom of the pot. Cover with a tight-fitting lid and cook, stirring occasionally, until the onions are golden and slightly browned around the edges, about 10 minutes. Add the reserved pork, beer, chipotles, adobo sauce, cumin, salt, and pepper; stir until combined. Simmer, covered, stirring occasionally, until the pork is fork-tender, about 1 1/2 hours.

Steps:
- Brown pork in oil/butter. Add seasonings. When pork is done remove it and deglaze the pan with the cider and broth. Bring to boil, scraping down the sides/bottom of the pan. Put meat back in and add cabbage. Simmer, covered, 40-60 minutes until pork is soft. By then your juices should be reduced by about half. If not, either add more apple cider or leave the lid off and raise heat to 'boil' off more liquid. Add carrots and onions and cook over low heat until soft.
- Finally add the whipping cream and heat through BUT do not boil. Adjust seasonings to taste.

- Put all the ingredients except for the water in a Dutch oven or any heavy duty pot and leave for about 30 minutes to marinate.
- Place the pot over medium heat, add 1/2 cup water, and bring to a boil. Lower the heat to a simmer and simmer without stirring until most of the vinegar’s acid has been cooked off – you will know when this is done because it won’t smell as sharp and “sting-y”.
- Keep simmering over low heat until the chicken is very tender - about 40 minutes to an hour. Taste the sauce. If it’s too salty or too sharp for your taste, add some of the remaining water. I usually end up using 3/4 cup total.
- When chicken is tender, remove the pieces from the pot and set aside. At this point the garlic will be very tender as well – you can mash some (not all!) of the cloves against the sides of the pot to incorporate it into the sauce.
