We've come up with a delicious mashup of two nostalgic favorites that will be sure to garner plenty of oohs and ahhs once it's tipped out of the pan. In addition to lining the bottom of the pan with pineapple, we mix piece of the fruit into the buttery batter for double the flavor. Baking ahead works beautifully for this dessert, which gets even better after resting a bit so the caramelized sugar and pineapple juice absorb into the cake.

1 1/4 cups (2 1/2 sticks) unsalted butter, 2 sticks at room temperature and 4 tablespoons melted, plus more for the pan
1/2 cup packed dark brown sugar
One 20-ounce can sliced pineapple (about 10 slices), 3 slices finely chopped (about 1/2 cup) and the rest left whole
12 to 20 maraschino cherries (without stems)
1 1/4 cups granulated sugar
1/2 teaspoon lemon zest
1 3/4 cups all-purpose flour (see Cook's Note)
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
4 large eggs plus 1 large egg yolk, at room temperature
2 teaspoons vanilla extract
1/2 cup sour cream, at room temperature

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter all sides of a 9-by-5-inch nonstick loaf pan, then pour the melted butter into the bottom of the pan. Scatter the dark brown sugar evenly over the melted butter. Arrange 7 slices of pineapple and the maraschino cherries in your preferred design along the bottom and up the sides of the pan, halving the slices as necessary. Place the pan in the refrigerator to chill while the batter is prepared. (This will allow the fruit to set in the butter and minimize shifting when the batter is poured into the pan.)
  • Cream the granulated sugar, lemon zest and 2 sticks room-temperature butter in the bowl of a stand mixer fitted with a paddle attachment on medium-high speed, scraping the bowl down halfway through, until pale and fluffy, about 6 minutes.
  • Meanwhile, whisk together the flour, baking powder and salt in a medium bowl and set aside.
  • With the mixer on medium high, add the eggs and egg yolk in 1 at a time, making sure they are fully incorporated between each addition. Reduce the speed to medium-low and add the vanilla and 1/4 cup sour cream; mix until incorporated. Add half of the dry ingredients and mix until just incorporated, then repeat the steps with the remaining sour cream and dry ingredients, making sure to scrape the bowl down between each addition. Add the chopped pineapple and mix until just incorporated, about 15 seconds.
  • Remove the prepared loaf pan from the refrigerator and carefully pour in the batter, being careful not to shift the assembled fruit. Using a small offset spatula, carefully spread the batter into the corners and smooth out the top. Give the pan 5 to 10 taps on the counter to release any large air pockets.
  • Place a sheet pan on the bottom oven rack and bake the cake on the middle rack until the top is deep golden brown and a cake tester or knife inserted in the center comes out clean, 1 hour 20 minutes to 1 hour 25 minutes. Allow the cake to rest for 30 minutes before inverting onto a serving plate.

3/4 cup packed brown sugar
1 (20 ounce) can crushed pineapple
1 (6 ounce) jar maraschino cherries, drained
6 ounces white chocolate, chopped
1 (18 1/4 ounce) package plain white cake mix
3 eggs
2 teaspoons vanilla

Steps:

  • Preheat oven to 350°F Lighly grease a 13 x 9 inch pan.
  • Melt 6 Tbs butter and stir in brown sugar. Spread mixture on bottom of prepared pan.
  • Drain pineapple as much as you can, reserving the liquid. Pour drained pineapple over sugar mixture.
  • Pat cherries dry and arrange over pineapple.
  • Cut the remaining 6 Tbs butter into pieces. Place butter and chopped white chocolate in a microwave safe bowl and microwave on high for 1 minute. Stir until mixture is smooth.
  • Place the cake mix, 1 cup of the pineapple juice, eggs, vanilla, and melted butter mix into a large mixing bowl.
  • Mix at low speed for 1 minute, scraping sides frequently.
  • Increase speed to medium and beat for 2 minutes longer until batter is well combined and thick.
  • Pour batter over the pineapples and chrries, smoothing wiht rubber spatula.
  • Bake cake until it springs back when lighly pressed, 43-48 minutes/.
  • Remove pan from oven andplace o wire rack to cool for 10 minutes.
  • Run knife around edge of cake and invert onto serving platter so that the cherries and pineapples are on top.
  • Slice and serve warm.
  • Store at room temp up to 3 days.

1 tablespoon baking powder
1 teaspoon salt
2 cups granulated sugar
1 stick unsalted butter, at room temperature
1/4 cup vegetable shortening
1 1/2 cups whole milk
2 large eggs
2 teaspoons vanilla extract
1 20-ounce can sliced pineapple,
2 tablespoons juice reserved (drink the rest!)
1 1/3 cups packed light brown sugar
Maraschino cherries, stemmed (optional)

Steps:

  • Preheat the oven to 350 degrees F. Make the cake batter: Combine the flour, baking powder, salt, granulated sugar, 1/2 stick butter, the shortening, milk, eggs, vanilla and 2 tablespoons pineapple juice in a large bowl. Beat with a mixer on medium speed until well combined. (There will still be a few small lumps in the batter.) Set aside.
  • Melt the remaining 1/2 stick butter in a 12-inch cast-iron skillet over medium heat; swirl to thoroughly coat the skillet. Sprinkle the brown sugar over the butter, making sure it's evenly distributed-you want the entire surface of the butter to be covered in brown sugar. Do not stir. As soon as the sugar dissolves, remove from the heat and layer the pineapple slices over the top. If desired, place maraschino cherries in the centers of the pineapple slices.
  • Pour the batter evenly over the pineapple slices and gently spread to even out the top. Bake the cake 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Immediately run a knife around the edge of the cake, then put a plate upside down on top of the skillet. Carefully invert the skillet so the cake is turned onto the plate. It should come out pretty easily; if bits of cake stick to the skillet, use a small knife to patch it together. Let cool slightly before cutting into wedges. It's best served warm.

1 (18 ounce) package yellow cake mix, prepared according to package directions (I like butter mix)
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
1/2 cup margarine
1 cup packed brown sugar
1 (20 ounce) can pineapple slices, drained
10 maraschino cherries, cut in halves

Steps:

  • Preheat oven to 375°F.
  • Place margarine in 13x9 pan and place in oven while preheating.
  • Watch so that it melts but does not burn.
  • Remove pan from oven.
  • Sprinkle brown sugar evenly in pan.
  • Arrange pineapple slices in the sugar.
  • Easiest method is 4 down the middle and 3 on each side of that.
  • Place cherry half, rounded side down in the middle of each ring.
  • Pour cake mix carefully over the fruit.
  • Bake at 375°F for 45-55 minutes until toothpick in center comes out clean.
  • Let stand 5 minutes to let topping slightly set.
  • Place large platter or cookie sheet over cake and carefully turn upside down.
  • Let stand a few minutes for the topping to run out.
  • Remove pan and cool completely.
  • Great served slightly warm with whipping cream.

This recipe has been in my family for many years and is always a favorite. It is more time consumming than other recipes, but it is worth it. if your looking for a cake that is not overly sweet... this is the cake to try!

3 eggs, that have been at room temperature for 15 minutes
1 1/2 cups white sugar
2 tablespoons butter
1 cup brown sugar
8 pineapple slices (reserve juice to be added later to batter)
8 cherries
1 1/2 cups Soft Silk flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup pineapple juice, from the pineapple slices

Steps:

  • with an electric mixer beat eggs on high until light and fluffy -- GRADUALLY add sugar (very important do not dump sugar in, cake will be tough if you do) continue to beat on high for 3 minutes.
  • sift together flour, baking powder, and salt and add to egg/sugar mixture beat on medium for 2 minutes.
  • then add vanilla and pineapple juice and beat again 2 minutes.
  • in a cast iron skillet melt butter (if you do not have a skillet you can use a 9X13 pan) add heaping cup of brown sugar and press into bottom of pan.
  • place pineapple with cherry in center of each on top of brown sugar.
  • add the cake batter, being careful not to disrupt the pineapples.
  • bake at 350 degrees for 35-40 minutes or until toothpick comes out clean. invert pan immediately onto a plate and cool.

This recipe is by far the best Pineapple Upside Down cake that I've ever made. It is also quick and easy. The cake is very moist and rises much higher than the average recipe. The combination of pineapple cake mix and pineapple juice isn't overwhelming either. I've been meaning to edit this for ages, however it looks so much better if you use dark brown sugar. Also if you'd like more topping, use 3/4 cup butter with 1 1/2 cups dark brown sugar.

1 cup pineapple juice, from canned pineapple with a bit of water added
1/2 cup canola oil

  • Drain canned pineapple into a measuring cup.
  • Place pineapple slices evenly in pan, cutting the last two in half to cover pan.
  • Place the maraschino cherry halves in the center of the pineapple slices, cut side up.
  • Combine the rest of ingredients in a large mixing bowl on slow speed for 30 seconds.
  • Beat on medium speed for 2 minutes.
  • Pour batter into pan.
  • Bake for 45 to 55 minutes, or until a toothpick comes out clean.
  • Cool 5 minutes and turn cake out onto a serving platter, pineapple side up.

8 canned pineapple slices, drained well
5 maraschino cherries, halves

Steps:

  • Topping: Melt butter in a small skillet on direct heat.

  • Pour into a 9" square baking dish, spreading to cover the bottom.
  • (Alternately, microwave butter and brown sugar in a 9" square glass baking dish till well blended and bubbly).
  • Arrange pineapple spears and maraschino cherry halves on top of the brown sugar in a sun-burst pattern.
  • Chill in refrigerator while preparing batter.

15 maraschino cherries
15 peaches, halves drained
1 (8 ounce) can crushed pineapple, drained, juice reserved

Steps:

  • Heat oven to 325 degrees.
  • In a 13X9 inch pan, melt butter in oven.
  • Sprinkle brown sugar evenly over butter.
  • Place maraschino cherry in center of each peach half; place cut side down on the brown sugar (cherries will be on the bottom).
  • Spoon pineapple around peaches.
  • Add enough water to reserved pineapple juice to measure 1 1/4 cups (I used pineapple juice and fruit juice out of the peach cans!).
  • In a large bowl, beat cake mix, juice mixture, oil and eggs with electric mixer on low speed 30 seconds. Beat on med speed 2 minutes, scraping bowl occasionally. Pour batter over peaches and pineapple.
  • Bake 1 hour or until toothpick inserted in center of cake comes out clean and top is VERY DARK GOLDEN BROWN.
  • Immediately run knife around side of pan to loosen cake. Place heatproof serving plate upside down on pan; turn pan and plate over. Leave pan over cake 1 minute so topping can drizzle over cake.
  • Cool 30 minutes. Serve warm or cool.
