Better Than Average Canned Green Beans image

We don't like frozen green beans and never have fresh on hand, so I wanted to make them taste like they were not out of a can.

2 (15 ounce) cans green beans
1 tablespoon instant minced onion
1 teaspoon bacon bits
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Drain one can of the green beans. Empty both cans in to a medium sauce pan and add onions, bacon bits, salt and pepper. Cover and cook on medium heat for about 10 minutes. The trick is to let it bubble and DO NOT take the lid off. The bacon bits and onions soften and enhance the flavor of the beans.

Steps:

  • Drain liquid from green beans.
  • Add salt and pepper to taste.
  • Saute in olive oil (1 T. per can of beans) for 15 minutes.
  • Sprinkle with Basil.
  • Serve.

Use as a side or a garnish for martinis. These canned beans are flavored with lemon, gin, juniper berries, and garlic.

Number Of Ingredients 16

2 cups water
1/4 cup kosher salt
3 cups vinegar
1/4 cup sugar
16 cups green beans, washed, trimmed and sliced and boiled for 5 minutes
2 onions, 4-6 cups sliced
4 -8 garlic cloves
4 chili peppers
4 bay leaves
1 teaspoon mustard seeds
1 teaspoon peppercorn
8 juniper berries
1 tablespoon dill seed
1 tablespoon dill weed
8 lemon peel strips
1 cup gin

Steps:

  • Sterilize 4 quart canning jars and lids in boiling water.
  • In a large pot combine the water, salt with the vinegar, sugar, bring to boil the lower to a simmer. Add Onions and beans, cover the pan and simmer for 15 minutes.
  • Mean while to each jar add 2 garlic cloves,1 chili pepper, 1 bay leaves, 1/4 of the mustard seeds, 1/4 of the peppercorns, 12 juniper berries, 1/4 of dill weed, dill seed and 2 strips of zest. Pour 1/4 cup gin into each jar.
  • Pack the beans and onions into the jars. Topping with the liquid to 1/4 inch head space.
  • Using a chop stick remove any air bubbles from the beans. Wipe tops and place immediately sterilized lids and rings. Process for 10 minutes in a hot water bath.
  • Seal, and boil in a hot water bath for 10 minutes Store in a dark, cool place.
  • Label and place in a dark place for 2-3 weeks.
  • Serve chilled.

2 (15 ounce) cans green beans, drained
1 onion, medium sized, thinly sliced
garlic, 2 teaspoons minced
1/2 teaspoon crushed red pepper flakes
5 tablespoons olive oil
3 tablespoons soy sauce
3 tablespoons red wine vinegar or 3 tablespoons balsamic vinegar
1/2 cup water
salt and pepper

Steps:

  • Saute the onion, garlic and crushed red pepper flakes in 2 tablespoons of the olive oil over medium heat until the onions begin to start getting tender.
  • Pour the green beans on top of the onion mixture and cover with a lid. Cook for about 5 minutes on low heat so that the beans can begin to take on the onion flavor.
  • Add in the soy sauce, vinegar and two more tablespoons of the olive oil and half of a cup of water.
  • Stir mixture together and cover with a lid and cook on low heat for 20-30 minutes.
  • Before serving, drizzle the last tablespoon of the olive oil over the beans and season to taste with salt and pepper.
