- Preheat oven to 450 F.
- In an oven safe 10″ skillet over medium heat, cook the pancetta or bacon until almost done (about 7 minutes). If using bacon you might need to remove so it doesn't get to crisp, but the pancetta will cook up fine with the onions and broccoli.
- Leave the bacon/pancetta grease in the pan and add onion and broccoli and cook for another 5-7 minutes until almost fully cooked.
- In a medium bowl add the eggs, salt and pepper and whisk together until well blended. Pour egg mixture into skillet. If you removed the bacon, add it back into the pan at this time.
- Top mixture with cheese and place your oven safe skillet into the oven.
- Bake for 20 minutes.

I have used every combination from the 6 eggs and 2 egg whites, to 4 eggs and a cup of egg substitute, to 2 cups of egg substitute, all with success (though it's a bit tastier with a real egg or two included).

- Heat oil and butter in a wide non-stick frying pan over medium heat. Add onion and cook, stirring often, until onion begins to soften (about 3 minutes).
- Stir in garlic, parsley, broccoli, and basil. Continue cooking, stirring often, until broccoli is bright green (about 3 minutes).
- Remove from heat and stir in salt, pepper, and 2 tablespoons of the cheese.
- In a large bowl, beat eggs and egg whites until well blended. Stir in broccoli mixture.

- In a 12-inch nonstick ovenproof skillet, melt the butter with the olive oil over medium heat.
