2 pkg. (1.5 oz. each) JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding
3 cups cold soy milk
1 tsp. vanilla
1 pkg. (14 oz.) prepared angel food cake, cut into 1-inch cubes
1 tub (8 oz.) COOL WHIP Sugar Free Whipped Topping (about 3 cups), thawed
4 cups strawberries, cut in half
2 cups each blueberries and raspberries, divided

Steps:

  • Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in vanilla.
  • Spoon 1/2 the pudding evenly into 12 (16-oz.) glasses, adding about 2 Tbsp. pudding to each glass; top evenly with 1/2 the cake cubes. Add 2 Tbsp. COOL WHIP, 4 strawberry halves and 2 Tbsp. blueberries to each glass. Cover with layers of remaining pudding, cake cubes and COOL WHIP.
  • Top with remaining berries.
  • Refrigerate 1 hr.

1 lb fresh strawberries (sliced)
1/2 pint fresh blueberries
1/2 pint fresh raspberry
1 tablespoon Splenda sugar substitute
10 ounces angel food cake (from bakery)
16 ounces Cool Whip Lite

Steps:

  • Wash and slice strawberries. Combine with washed blueberrie and Splenda in a bowl for 1/2 hour.
  • Tear angel food cake into approximately 1 inch pieces and combine in bowl with Cool Whip.
  • Mix sweetened strawberries and blueberries into the angel food cake/cool whip mixture to combine.
  • Add raspberries and very gently fold into mixture.

1 pint fresh berries (strawberries, blueberries, raspberries, blackberries)
1 cup sugar
2 tablespoons cornstarch, dissolved in
1/4 cup cold water
3 egg whites
3/4 cup sugar

Steps:

  • Place mixing bowl and beaters in freezer.
  • Put washed berries in a medium saucepan with 1 cup sugar.
  • Cook over medium hear, mashing and stirring occasionally.
  • When hot add dissolved cornstarch.
  • Cook until liquid is transparent and thickens.
  • Remove from heat and let cool.
  • Remove bowl and beaters from freezer.
  • Combine egg whites and 3/4 cup sugar in chilled bowl and beat on high with electric mixer.
  • When soft peaks form add berries.
  • Mix on low until blended.
  • Pour mixture over individual cake slices of choice to serve.

  • Remove bowl and attachment from freezer. Add heavy cream and sugar to mixing bowl and mix on medium high speed for several minutes until stiff peaks form. Spoon half into bowl over angel food cubes. Arrange half of strawberries and half of blueberries over whipped cream.
