Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place the chicken pieces in a lightly greased 9x13 inch baking dish.
- In a medium bowl combine the onion soup mix, cream of chicken soup mix, soy sauce, garlic, apple and orange juice, salt and pepper. Mix together and pour mixture over chicken. Cover and bake in the preheated oven for 1 hour, then remove cover/lid and bake for another 1/2 hour to brown the chicken.

APPLE-ORANGE GLAZED CHICKEN FOR TWO
Adapted from Betty Crocker's Cooking for Two (2002). Quick, easy recipe. The original recipe only called for sauteing the chicken in butter, so I added a few ingredients to customize it and make the chicken more flavorful. Goes great with steamed green beans and rice. Note: Can substitute orange marmalade or other jams for the apple-butter.

Steps:
- Salt and pepper chicken breasts.
- Melt butter in an 8-inch skillet or 3-qt. saucepan over medium heat. Cook chicken in butter about 5 minutes, then add red wine vinegar (vinegar will smell awful when reducing, but taste great in the end). Cook another 10 minutes, turning once, or until juice of chicken is no longer pink when center of thickest piece is cut.
- While chicken is cooking, mix cornstarch and mustard in a small bowl. Stir in remaining ingredients.
- Place chicken on serving plate; cover to keep warm.
- To make the glaze, pour orange mixture into skillet. Heat to boiling over medium heat, stirring constantly. Boil about 1 minute, stirring constantly, until glaze is thickened. Pour over chicken.

Steps:
- Place the salt, pepper and mustard powder in a plastic bag with the flour.
- Shake the chicken in the bag until it is well coated with the seasoned flour.
- Heat the oil in a heavy saucepan and saute the chicken on all sides.
- Remove and drain.
- Saute the onion.
- Add the apple juice and garlic.
- Add the rest of the seasonings, orange peel and chicken.
- Pour into an ovenproof dish and cook in a medium oven (180 degrees Celsius) for about 45 minutes.

Steps:
- Finely grate peel from one orange; place peel in a small bowl. Cut a thin slice from the top and bottom of each orange; stand oranges upright on a cutting board. With a knife, cut off peel and outer membrane from oranges. Working over the small bowl with orange peel to catch juices, cut along the membrane of each segment to remove fruit; set sectioned oranges aside. Stir cornstarch, broth, vinegar, honey, soy sauce, lemon juice, jalapeno and pepper flakes into orange juice and peel., Sprinkle chicken with salt and pepper. In a large skillet, heat 1 teaspoon oil over medium-high heat. Add half of the chicken; stir-fry 5-7 minutes or until no longer pink. Remove from pan. Repeat with remaining oil and chicken., Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until sauce is thickened. Stir in reserved orange sections. Serve with rice. Sprinkle servings with sesame seeds and green onions.

- Peel, core and slice the apples in pieces a quarter inch thick. Fry until golden in the butter in a large heavy frying pan. Remove and set aside.
- Add the oil to the frying pan. Fry the chicken pieces until golden, turn down heat, cover and cook over low heat until done (about 20 minutes). Remove to a heated serving dish.
- Return the apple slices to the frying pan and heat through. Remove and arrange around the chicken. Season with salt and pepper to taste.
- Pour the cream into the frying pan and scrape up the cooking juices. Add the cognac, bring to boil and pour the sauce over the chicken. Serve immediately.

- Slice chicken breast into cubes.
- In a bowl, combine marinade ingredients. Add chicken and stir to coat.
- Let marinate at least 1 hour.
- In a pan, heat oil on medium-high heat. Remove chicken from marinade with a slotted spoon, and cook all sides until golden brown, about 5 minutes.
